QUICK OVEN ROASTED TOMATOES RECIPE
Tomatoes, tossed with garlic, fresh thyme, and spices, then roasted in a high-heated oven until super tender and bursting with intense, concentrated flavor. There are so many ways to use up roasted tomatoes--as a delicious side; tossed in pasta or soup; or served bruschetta-style on top of your favorite toasted bread. Heck, you can serve them with homemade pita chips.

Steps:
- Preheat the oven to 450 degrees F.
- Place the tomato halves in a large mixing bowl. Add minced garlic, salt, pepper, fresh thyme, and spices. Drizzle a generous amount, about 1/4 cup or more, quality extra virgin olive. Toss to coat.
- Transfer the tomatoes to a baking sheet with a rim. Spread the tomatoes in one single layer, flesh side up.
- Roast in your heated oven for 30 to 35 minutes or until the tomatoes have collapsed to your desired doneness.
- Remove from heat. If you are planning to serve it soon, feel free to garnish with more fresh thyme and a few sprinkles of feta cheese. Enjoy warm or at room temperature.

- Preheat oven to 325 degrees. Place tomatoes on a rimmed baking sheet, cut side up. Drizzle with oil, and sprinkle with thyme leaves; season with salt and pepper.
- Roast until tomatoes begin to collapse, brushing occasionally with pan juices, about 90 minutes. This can be made ahead and reheated in the oven at 325 degrees for 10 to 15 minutes.

- Heat water and cook pasta according to package directions.
- Heat olive oil in a medium skillet, over medium heat.
- Add garlic and saute, but do not let brown.
- Add toasted pine nuts.
- Add spices and stir.
- Add tomatoes and olives and saute for about 3 minutes, until heated through and softened.
- Pour sauce over pasta and top with Feta cheese.
- Cover for a minute so cheese and flavors meld.

- Preheat oven to 300 degrees and place the rack in the center of the oven.
- Place tomatoes on a rimmed baking sheet in a single layer. Place shallots and thyme sprigs over tomatoes, drizzle with olive oil and sprinkle with salt. If doubling this recipe to use in Focaccia with Slow Roasted Tomatoes, distribute tomatoes, shallots, and thyme evenly between two baking sheets and place the sheets in upper and lower thirds of oven.
- Roast until tomatoes are wilted and browning in places, 2 to 2 1/2 hours, turning tomatoes a few times.

ROASTED TOMATOES WITH FETA, OLIVES AND PINE NUTS

- Cut the plum or Roma tomatoes in half lengthwise and seed them. (If you use another variety of tomato, especially round ones, cut them in half through the equator. Once the tomato is cut in half, take a small spoon and gently scrape or scoop out the tomato seeds and the center leaving the red fleshy part intact.)
- Sprinkle the cut tomatoes with salt and pepper and place them cut side down on a wire rack set over a baking sheet to catch the juice. Let them drain for about 30 minutes or so.
- To toast the pine nuts, saute them in a skillet over low heat for 3-4 minutes, stirring frequently or until they are golden brown.
