This is a dish my brother prepared for me in Seattle. It is by far the best salmon I've ever eaten. I like to serve it with an Asian-inspired rice and roasted asparagus.

3 (12 inch) untreated cedar planks
⅓ cup vegetable oil
1 ½ tablespoons rice vinegar
1 teaspoon sesame oil
⅓ cup soy sauce
¼ cup chopped green onions
1 tablespoon grated fresh ginger root
1 teaspoon minced garlic
2 (2 pound) salmon fillets, skin removed

Steps:

  • Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
  • In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
  • Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
  • Place the salmon fillets onto the planks and discard the marinade. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dry mustard
4 6-ounce salmon fillets, skinned and boned
1 tablespoon unsalted butter, at room temperature
2 untreated pieces cedar shingles or shims, each 4 to 5 inches wide and about 12 inches long (easily available at lumber yards)
2 cups soft corn pudding (see recipe)
3/4 cup pumpkin seed vinaigrette paste (see recipe)

Steps:

  • Mix together salt, pepper and mustard. Brush tops of fillets with a little butter and sprinkle both sides with dry mustard mixture.
  • Preheat the broiler. Soak the shingles in cold water for 5 to 10 minutes, then put them under the hot broiler 4 to 5 inches from the heat source for 2 to 3 minutes until browned on one side. Carefully take the shingles from the broiler.
  • Immediately, so that the shingles do not cool, lay two fillets on the browned side of each shingle. Return the shingles to the broiler and cook the fish for about five minutes. Take the shingles from the broiler and lift the salmon from them.
  • Place three to four tablespoons of soft corn pudding on a plate. Top with salmon fillet and spoon vinaigrette over the top.

CANADIAN CEDAR PLANKED SALMON

Planked salmon is a method of cooking and smoking salmon that has been used for many years. Make sure to use natural (no preservatives) red cedar. The salmon is slow cooked, which produces a rich, smoky flavor. Guests enjoy the wonderful taste of this specially prepared salmon.

6 (4 ounce) fillets salmon
½ cup extra virgin olive oil
1 large red onion, chopped
1 lemon, sliced
½ tablespoon black peppercorns, crushed

Steps:

  • Submerge untreated cedar plank in water. Soak approximately 12 hours, or overnight.
  • Preheat an outdoor grill for high heat. Place prepared plank on the grill, and sprinkle with coarse salt. Cover grill and heat plank 2 to 3 minutes, until dry. Adjust grill temperature for medium heat.
  • Rub salmon filets with olive oil. Arrange on the plank. Top salmon with red onion, lemon slices and black peppercorns.
  • Cook salmon, covered, 10 to 12 minutes, or until opaque and easily flaked with a fork.

1 2-to-3-pound skin-on center-cut salmon fillet (about 1 1/2 inches thick)
2 teaspoons ground coriander
Kosher salt and freshly ground pepper
1/4 cup pure maple syrup
1 2-inch piece ginger, peeled and grated
Grated zest and juice of 1 lemon
2 tablespoons unsalted butter

Steps:

  • Soak 1 large cedar grilling plank (15 by 6 inches) in a baking dish of water, about 2 hours; put a plate or mug on top to keep the plank submerged.
  • Preheat the oven to 425 degrees F. Sprinkle the salmon with the coriander, 1 teaspoon salt and 1/2 teaspoon pepper. Let stand at room temperature about 15 minutes.
  • Meanwhile, heat the maple syrup, ginger, lemon zest and butter in a small saucepan over medium heat until slightly thickened, about 7 minutes. Stir in the lemon juice and set aside.
  • Remove the cedar plank from the water and pat dry. Place the plank directly on the oven rack and preheat about 15 minutes. Using tongs or oven mitts, remove the hot plank from the oven and place the fish, skin-side down, on the wood. Brush the fish with half of the ginger glaze. Transfer the fish on the plank to the oven; put a baking sheet on the rack below to catch any drips. Cook until the salmon is just firm and slightly golden on top, about 12 minutes.
  • Remove the fish from the oven and change the oven setting to broil. Brush the remaining ginger glaze over the salmon and broil until golden, 2 to 3 more minutes. Remove from the oven and let rest 5 minutes on the plank before serving. Serve warm or at room temperature.

3/4 cup packed light brown sugar
1/2 cup kosher salt
Freshly ground pepper
1 pound skin-on center-cut wild salmon fillet
2 slices lemon
3 to 4 sprigs thyme

Steps:

  • Brine the fish: Combine the brown sugar, salt, 1 teaspoon pepper and 4 cups water in a large bowl. Stir until the sugar and salt dissolve. Add the salmon and weigh down with a can or skillet to keep it submerged. Cover and refrigerate at least 2 hours or overnight.
  • Soak the wood chips and cedar plank in water 1 hour, then prepare your grill for smoking.
  • About 30 minutes before smoking, remove the salmon from the refrigerator; drain and pat dry. Place the salmon, skin-side down, on the cedar plank and season with salt and pepper. Top with the lemon slices and thyme sprigs. Let stand at room temperature to dry out, 30 minutes.
  • Once the grill reaches 250 degrees F, place the plank with the salmon on the cooler side of the grill. Close the grill and let smoke until golden and just cooked through, about 20 minutes. If using a gas grill, turn off the flame and let the fish sit 10 more minutes (this is not necessary if using charcoal; it imparts more smoky flavor). Remove from the grill and serve hot or at room temperature.

1 cedar plank (6 by 14 inches)
2 salmon fillets (1 1/2 pounds total)
Salt and freshly ground black pepper
6 tablespoons Dijon mustard
6 tablespoons brown sugar

Steps:

  • Soak cedar plank in salted water for 2 hours, then drain. Remove skin from salmon fillet. Remove any remaining bones. Rinse the salmon under cold running water and pat dry with paper towels. Generously season the salmon with salt and pepper on both sides. Lay the salmon (on what was skin-side down) on the cedar plank and carefully spread the mustard over the top and sides. Place the brown sugar in a bowl and crumble between your fingers, then sprinkle over the mustard.
  • Set grill for indirect grilling and heat to medium-high. Place the cedar plank in the center of the hot grate, away from the heat. Cover the grill and cook until cooked through, around 20 to 30 minutes. The internal temperature should read 135 degrees F. Transfer the salmon and plank to a platter and serve right off the plank.
  • Cook's Note: A direct method to grill the salmon may be used. Soak the cedar plank well. Spread the mustard and brown sugar on the salmon, but do not place the fish on the plank. Set up the grill for direct grilling on medium-high. When ready to cook, place the plank on the hot grate and leave it until there is a smell of smoke, about 3 to 4 minutes. Turn the plank over and place the fish on top. Cover the grill and cook until the fish is cooked through, reaching an internal temperature of 135 degrees F. Check the plank occasionally. If the edges start to catch fire, mist with water, or move the plank to a cooler part of the grill.

2 lbs salmon fillets, with skin
1 tablespoon olive oil
3 tablespoons brown sugar
1 tablespoon paprika

Steps:

  • Soak plank in a tub of cold water for at least 1 hour and up to 12 hours.
  • Score top side of salmon in about 2"/5cm diagonal strips but do not cut through the skin.
  • Rub olive oil into salmon.
  • In a small bowl combine sugar, paprika, salt, black pepper and cumin.
  • Rub into slits.
  • Allow salmon to marinate 10 to 20 minutes.
  • Place salmon on soaked plank.
  • Place the whole thing, plank and salmon, on the rack of a barbecue.
  • Close the lid or cover fish with an inverted metal baking dish and barbecue 20 to 25 minutes or until salmon is cooked through.
  • Remove cover for the last 5 minutes of cooking.
  • Do not turn fish during cooking. This can be brought to the table on the plank decorated with fresh herbs or the salmon can be transferred with a wide lifter to a serving platter or a clean plank.

3 tablespoons pumpkin puree, fresh or canned, without sugar
1/2 teaspoon minced garlic
1/2 cup fresh or frozen corn kernels
Pinch allspice
3/8 cup stone ground cornmeal
Salt and freshly ground black pepper to taste
Pinch cayenne
1 tablespoon sweet butter
2 tablespoons finely sliced chives

Steps:

  • Put the milk, pumpkin puree, garlic, corn and allspice in a small saucepan and bring to a boil over high heat. Lower the heat to a simmer and cook for 2 to 3 minutes.
  • Slowly add the cornmeal while stirring continually. Season with salt, pepper and cayenne. Stir in the butter. Set aside in a warm place.
  • Stir in chives before serving.

PLANKED SALMON WITH HONEY BALSAMIC GLAZE

This is my favorite grilled salmon. It is grilled on a cedar plank (make sure you soak the plank for at least 8 hours). The ingredients are the perfect blend. The original recipe has it baked in an oven at 400 degrees for 15 to 20 minutes. We cook it at the same temp and time on the grill. You could use 4 - 6 ounce portion fillets (skin on) on 2 cedar planks. We prefer half a side of salmon with the skin on. The recipe is by Michael Chiarello. I like to serve this with wild rice and a tossed green salad.

1 lb salmon fillet
1 tablespoon sea salt
1/2 teaspoon ground pepper
1/4 teaspoon dry mustard
1/2 cup honey
1/4 cup balsamic vinegar
1 tablespoon butter, melted
1 cedar plank (soaked in water for at least 8 hours)
1 tablespoon olive oil

Steps:

  • Presoak cedar plank for 8 hours.
  • Preheat grill to 400 degrees.
  • Cut a few slits in the side of the salmon, but don't go all the way through, halfway. Do the same if using portions. The slits allow the glaze to absorb into the fillet.
  • In a bowl mix salt, pepper and dry mustard.
  • In a glass bowl, microwave the honey for about 30 seconds to liquefy. Remove bowl and blend in balsamic vinegar.
  • With a basting brush, baste the salmon with butter. Apply dry seasoning mix (salt, pepper and dry mustard) on flesh side of salmon and lightly rub it into the salmon(don't tear flesh). I just pat the dry seasoning on.
  • With the basting brush baste the salmon with the honey balsamic mixture. Reserve liquid for later.
  • Heat the planks on the grill over medium heat for 3-5 minutes to brown them. Watch so they don't catch on fire. Remove from grill and rub olive oil on the browned side of plank. Lay salmon on the oiled side of the plank with skin side down and baste with remaining reserved liquid.
  • Cook for 15 to 20 minutes or until done. A thicker cut may take a little longer. If cooking in an oven use a cookie sheet to prevent a mess.
  • Note: prep time doesn't include cedar plank soak time of 8 hours.

4 6-ounce cod fillets
4 sheets parchment paper or foil
1 medium-size yellow onion, sliced thin
1 tablespoon plus 4 teaspoons butter
2 tablespoons olive oil
Salt and freshly ground pepper to taste
4 teaspoons honey
4 tablespoons Madeira
4 cups, lightly packed, salad greens (like red leaf and bibb lettuce, arugula, radicchio, endive, mache)
Juice of 1 lemon
4 littleneck clams
4 sprigs thyme

Steps:

  • Preheat oven to 425 degrees or prepare a grill.
  • Check cod and remove any remaining bones.
  • Fold parchment sheets in half. Cut out half-heart shape so that when the sheet is opened there will be a full heart shape, at least 16 inches wide at its widest point.
  • Over medium heat, cook onion in 1 tablespoon of butter and the olive oil, until golden brown, 12 to 15 minutes. Stir regularly. Add salt and pepper.
  • When onion is cooked, stir in honey and Madeira. Cook for 1 to 2 minutes. Remove from heat.
  • Starting with a fully opened heart shape, place 1 cup of salad greens on one side of the parchment, near the center fold line. On top of the greens add 1 cod fillet, 1 teaspoon butter, one quarter of the cooked onion mixture, one quarter of the lemon juice and 1/4 teaspoon salt and a pinch of pepper. Then place one clam alongside the fillet. (During cooking the clam will open. Its juices become part of the sauce, helping to steam the fish.) Garnish with a sprig of fresh thyme. Repeat to assemble the remaining three papillotes.
  • Fold the other side of the parchment paper over the ingredients. And, starting at the fold at the top of the heart, fold the two edges over several times to seal the papillote. (This seam should be on top of the papillote.) Continue this around the entire papillote until you reach the fold at the bottom of the heart. Tuck the very end underneath the papillote to form a tight seal. If grilling, assemble ingredients in center of a double layer of foil. Fold widthwise, crimping edges lightly, then roll and crimp lengthwise.
  • Bake for 12 to 15 minutes, or grill 10 minutes.

2 tablespoons lemon zest, grated
3 tablespoons fresh lemon juice
2 green onions, chopped
1 teaspoon olive oil
3 -4 lbs salmon fillets
salt and pepper
1/4 English cucumber
1/4 teaspoon salt
1 cup plain yogurt
1/2 cup sour cream
1 teaspoon lemon juice
3 green onions, chopped
2 teaspoons fresh dill or 2 teaspoons dried dill
pepper

Steps:

  • Soak cedar plank in water for several hours.
  • In small bowl, combine shallots, garlic, dill, thyme, cilantro, lemon zest, lemon juice, green onion and olive oil. Cover and place in fridge for at least 1 hours.
  • Place salmon on cedar plank and sprinkle with salt and pepper Cover with herb mixture. Set plank on barbecue. Bake for 30 minutes on medium heat, until fish flakes easily with a fork.
  • Cucumber Dill Sauce: Finely chop cucumber, toss with salt and let stand for 15 minutes.
  • Combine yogurt, sour cream, lemon juice, pepper, onion and dill.
  • Drain water from cucumber and add to yogurt mixture. (Sauce can be made ahead of time).
  • Note: The recipe can be cut in half.

My passion is to master the art of cooking sea food. I read about sea life and try to develop recipes worthy of the richness of inhabitants of the seas. This particular recipe is a supermarket "freebie" from the seafood department, generously provided by Heritage Salmon. Serve with new, baby red potatoes, asparagus spears and a salad of mixed greens.

8 (6 ounce) salmon fillets, skinless
2 cedar planks, soaked in water for 4 to 6 hours
1 tablespoon dry barbecue spice
sea salt
1 large lemon
1 cup fresh dill, chopped
1/2 cup shallot, chopped
2 garlic cloves, chopped
2 green onions, chopped
3 tablespoons cracked black pepper
2 tablespoons olive oil
1 lemon, juice of

Steps:

  • Preheat grill to high.
  • Sprinkle BBQ seasoning on salmon fillets.
  • Combine ingredients for crust mixture and spread generously over the flesh side (not skin side) of each fillet.
  • Season soaked cedar planks with sea salt, and place on grill.
  • Close lid and heat for 3 to 5 minutes, until they start to crackle and smoke.
  • Lift lid carefully and place salmon fillets on hot planks, skinned side down.
  • Close lid and bake planked salmon for 12 to 15 minutes for medium doneness.
  • Squeeze lemon over fillets.
  • Check periodically to ensure the planks are not on fire.
  • Use spray bottle to extinguish any flames.
  • Carefully remove planks from grill and transfer salmon to serving platter.
