Categories     side dish

Time 1h30m

Yield 8 servings

Number Of Ingredients 4

3 pounds assorted root vegetables: carrots, parsnips, celeriac, potatoes, turnips, etc.
1/4 cup olive oil
Salt and black pepper
Chopped rosemary, thyme or parsley, plus more for garnish

Steps:

  • Heat oven to 425 degrees. Peel vegetables (optional) and cut them into 1- to 2-inch chunks, put them in a baking pan and toss with the oil and a sprinkling of salt and pepper.
  • Put the vegetables in the oven and roast without stirring for 20 minutes, then check. If they look dry and are sticking to the pan, drizzle with more oil. Continue roasting, stirring or turning the vegetables once, for another 20 minutes or so. Stir in the herbs, then return the pan to the oven for another 20 to 40 minutes, until crisp. Remove from the oven. Garnish with rosemary or thyme.

ROASTED ROOT VEGETABLES WITH WALNUTS

Roasted Root Vegetables with Walnuts image

Provided by Food Network

Categories     side-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 13

4 medium carrots (about 1/2 pound)
2 medium turnips (about 1/2 pound) or 1/2 a medium head of root celery (about 1/2 pound)
1/2 pound baby beets
3 medium potatoes (about 1 pound)
8 shallots
8 garlic cloves
1/2 cup walnut oil or vegetable oil
2 teaspoons sugar
1 teaspoon grated nutmeg
1/2 teaspoon allspice
1/2 cup walnut pieces
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Heat the oven to 400 degrees. Allow 5 to10 minutes for this before you begin the recipe. Trim all the vegetables except the shallots and garlic, leaving a little of any green tops. Scrub them clean with a pot scrubber in cold water, then dry them on a dish towel. In a 9 by 13-inch roasting pan heat the oil over medium heat, add the vegetables as you cut them. Quarter the carrots and the turnips; if using, cut the celery in 4 wedges, halving each wedge. Halve the beets and cut the potatoes in 2 to 3 pieces. Add the shallots and garlic in their skins. Mix sugar, nutmeg, allspice, walnuts, salt and pepper in a small bowl, sprinkle them over the vegetables and mix well. Cover with foil and roast the vegetables in the heated oven until they are tender and browned, 45 to 55 minutes. If you have time, stir them occasionally so they brown evenly. Alternatively, if using the microwave, transfer the vegetables and flavorings to a microwave dish and cover with wrap. Cook 8 minutes at high, stir and cook another 8 minutes. Stir again and cook uncovered 4 to 6 minutes until tender.

Categories     side-dish

Time 1h5m

Yield 4 servings (8 cups)

Number Of Ingredients 9

1 large butternut squash, (1 1/2 to 2 pounds) halved, seeded and peeled
3 large Yukon gold potatoes (1 1/2 pounds), scrubbed
1 bunch medium beets, (about 1 1/2 pounds), scrubbed and tops trimmed
1 medium red onion
2 large parsnips (about 8 ounces)
1 head garlic, cloves separated, and peeled (about 16)
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 1/2 teaspoons kosher salt
Freshly ground black pepper

Steps:

  • Place 2 baking sheets in the oven and preheat to 425 degrees F.
  • Cut all the vegetables into 1 1/2-inch pieces. Cut the onions through the base core to keep some of the layers in chunky pieces. Toss all the vegetables with garlic, olive oil and salt in large bowl. Season generously with pepper.
  • Carefully remove the heated baking sheets from the oven, brush or drizzle with olive oil. Divide the vegetables evenly between the 2 pans, spreading them out to assure they don't steam while roasting. Roast the vegetables until tender and golden brown, stirring occasionally, about 45 minutes to 1 hour.

PASTA WITH CREAMY WALNUT PESTO

Pasta with creamy walnut pesto image

This unusual pesto is also wonderful with potato gnocchi, on crostini, in panini, or stirred into risotto at the end

Provided by Ursula Ferrigno

Categories     Dinner, Pasta

Time 30m

Number Of Ingredients 8

400g pasta (I used orecchiette)
175g walnut halves or pieces
1 garlic clove
handful fresh basil , leaves roughly torn, plus extra to serve (optional)
100g parmesan (or vegetarian alternative), freshly grated, plus extra to serve (optional)
50g butter
4 tbsp extra-virgin olive oil
50ml double cream

Steps:

  • Boil the pasta. Meanwhile, put the walnuts and garlic in a food processor and whizz until finely chopped. Add the basil, cheese, butter and oil and pulse a few more times. Season.
  • Pour the cream into a pan and warm through. Add two-thirds of the pesto, then gently heat to loosen it. When the pasta is ready, drain, reserving 2 tbsp of the cooking water, then mix both with the sauce. Serve immediately, sprinkled with the extra Parmesan and basil, if using. The leftover pesto will keep in the fridge for up to a week, or frozen for up to a month.

A cheaper alternative to pesto made with pine nuts. You can use raw or toasted walnuts. Some people like to add Parmesan cheese to this as well!

  • Preheat oven to 400 degrees. Toss veggies in a drizzle of olive oil and sprinkle with salt and pepper. Arrange in a single layer on a baking sheet and roast for 20-25 minutes, depending on the veggies used.
  • Bring a large pot of thoroughly salted water to a boil over high heat. Add the bucatini pasta and cook according to package instructions, about 6 minutes for al dente, 8 for normale. Reserve up to 1 cup of the pasta before draining and returning pasta to the pot.
  • While the veggies and pasta cook, add the basil, walnuts, garlic, and parmesan to a food processor and pulse until a fine crumble forms. Turn the food processor on steady and slowly add in the olive oil, starting with 1/2 cup and adding more as needed from there until the pesto becomes like a thin paste, but isn't runny. Season thoroughly with salt and pepper.
  • Add the walnut pesto to the pot with the pasta and toss gently to combine. Add reserved pasta water, 1 tablespoon at a time, until pesto has thinned and coated every noodle completely. Portion pasta noodles between six plates, then top with even amounts of roasted vegetables. Divide burrata between dishes, drizzle with a little olive oil, and sprinkle with salt and pepper and fresh basil leaves to finish. Serve immediately.
