Slow Cooker White Bean Soup image

This Slow Cooker White Bean Soup practically makes itself! Just throw everything into the pot and press go for a thick, flavorful, and filling vegan soup.

Provided by Beth - Budget Bytes

Time 8h15m

Number Of Ingredients 13

2 Tbsp olive oil ($0.32)
4 cloves garlic ($0.32)
1 yellow onion ($0.11)
4 carrots (about 1/2 lb.) ($0.30)
4 ribs celery ($0.46)
1 lb. dry navy beans* ($1.25)
1 bay leaf ($0.30)
1 tsp dried rosemary ($0.10)
1/2 tsp dried thyme ($0.05)
1/2 tsp smoked paprika ($0.05)
Freshly cracked black pepper (15-20 cranks of a pepper mill) ($0.05)
6 cups water ($0.00)
2 tsp salt, or to taste ($0.05)

Steps:

  • Mince the garlic, dice the onion, slice the celery, and peel and slice the carrots. Add the olive oil, garlic, onion, celery, and carrots to a large (5qt or larger) slow cooker.
  • Give the beans a quick rinse in a colander and then add them to the slow cooker, along with the bay leaf, rosemary, thyme, paprika, and some freshly cracked pepper.
  • Add six cups of water to the slow cooker and stir to combine the ingredients. Place the lid on the slow cooker and cook on low for 8-9 hours or on high for 4-5 hours.
  • After 8 hours on low or 4 hours on high, stir the soup and begin to mash the beans against the side of the slow cooker to thicken the soup. Once the soup is thickened to your liking, start adding salt to taste. Begin with 1/2 tsp and add more until the soup tastes flavorful to you. I used about 2 tsp total.
  • Serve the soup hot with crackers or crusty bread for dipping.

SLOW-COOKER WHITE-BEAN SOUP

Slow-Cooker White-Bean Soup image

There's butternut squash, leeks, and spinach as well as white beans in this hearty, rich, and flavorful vegetarian soup. It's a recipe that proves the slow cooker is as well suited to vegetable recipes as to big pieces of meat.

Categories     main-dish

Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 21

4 tablespoons olive oil
3 medium leeks, dark green parts trimmed and discarded, light green and white parts thoroughly washed and cut into 1/2-inch dice
6 garlic cloves, minced
2 medium carrots, peeled and cut into 1/2-inch dice
2 stalks celery, cut into 1/2-inch dice
8 cups chicken stock
Salt
1 teaspoon whole black and white peppercorns
4 small sprigs fresh thyme
4 small sprigs fresh parsley
12 green beans, trimmed and cut into 1/2-inch pieces
2 medium zucchini, cut into 1/2-inch dice
2 medium yellow summer squash, cut into 1/2-inch dice
1 ripe tomato, peeled, seeded, and cut into 1/2-inch dice
6 medium garlic cloves, peeled
6 ripe tomatoes, peeled, seeded, and chopped
4 to 6 tablespoons extra-virgin olive oil
30 fresh basil leaves, washed and dried
6 to 8 slices French bread, about 1/4-inch thick
Olive oil
6 to 8 ounces fresh creamy goat cheese

Steps:

  • In a large saucepan, heat the olive oil over medium-high heat. Add the leeks and saute just until they start to turn translucent, about 3 minutes. Add the garlic and saute about 1 minute more. Add the carrots and celery and continue sauteing until the vegetables deepen in color but have not yet begun to brown, 3 to 4 minutes more. Pour the stock into the pan, bring it to a boil, and reduce the heat to maintain a simmer. Sprinkle in a generous pinch of salt.
  • Tie the peppercorns, thyme, and parsley in a square of cheesecloth, securing it with kitchen string. Add this bouquet garni to the pan. Stir in the beans, zucchini, summer squash, and tomato. Continue simmering until the vegetables are tender, about 30 minutes.
  • Meanwhile, make the Pistou: Put the garlic and tomatoes in a blender or food processor with about 3 tablespoons of the olive oil. Begin processing. With the machine running, add the basil leaves, and then pour in enough extra-virgin olive oil to make a smooth, thick, but fluid paste. Transfer about 2/3 of the paste into a serving bowl to pass alongside the soup.
  • Make the Goat Cheese Croutons: Preheat the oven to 375 degrees F.
  • Brush the bread slices with olive oil and arrange them on a baking sheet. Bake until golden, 12 to 15 minutes. Remove them from the oven and turn on the broiler. Spread 1 side of each crouton with goat cheese and put it back on the baking sheet. Broil until the cheese is warm and slightly bubbly, about 3 minutes. Set aside.
  • When the soup is ready, stir the remaining pistou into the saucepan, ladling some of the hot broth into the blender or processor bowl to swirl and rinse any pesto clinging inside into the pan. Remove and discard the bouquet garni. Taste the soup and adjust the seasoning with a little more salt.
  • Ladle the soup into individual heated serving bowls. Float a crouton in the center of each bowl. With a spoon, drizzle a little more pistou over the crouton and soup in each bowl. Serve immediately, passing more pistou alongside for each person to add, to taste.

CROCK POT OR SLOW COOKER MEXICAN CHICKEN WHITE BEAN SOUP

Crock Pot or Slow Cooker Mexican Chicken White Bean Soup image

Once again, more of a method than a strict recipe. Comfort food with a little kick to it. I was going to make chile and this is what evolved - we liked it even better. And don't let the dried beans throw you - put them on the stove first, bring to a boil, let sit, and assemble the other ingredients while they stand. The pre-cooking and draining removes the volatile sugars that cause gas. You may also soak the beans overnight, drain the water then add the beans to the slow cooker.

Provided by One Happy Woman

Categories     One Dish Meal

Time 5h29m

Yield 10 serving(s)

Number Of Ingredients 13

2 cups dried white beans (I use Mayocaba or Peruvian white beans)
1 onion, large, chopped
1 cup anaheim chili, roughly chopped (canned or fresh roasted, peeled and seeded)
4 chicken breast halves (frozen is fine, just throw them in the pot) or 4 chicken thighs (frozen is fine, just throw them in the pot)
1 pint chicken stock (low sodium)
1 pint vegetable stock (low sodium)
1 1/2 cups bell peppers, chopped (frozen, mixed red, yellow and green peppers)
1 tablespoon dried oregano
1 tablespoon garlic powder
1/2 teaspoon dried red pepper flakes
1 tablespoon ground cumin
1 cup chopped tomato
salt

Steps:

  • Cover the beans with water, bring to a boil, cover, turn off the heat and let stand one hour.
  • Drain the beans and add to crock pot.
  • Add the rest of the ingredients, add enough water to just cover everything. Cover the pot, turn to high and walk away.
  • Cook about 5 hours on high, or longer on low, depending on your beans and how firm you like them.
  • Cut the chicken into bite-sized chunks.
  • Serve topped with sour cream, grated cheese and/or chopped avocado.
  • Note: I also add 1-2 teaspoons of a seasoning I buy in the local Mexican market called "Sal/Chile/Limon" - you could just add lemon juice, salt and more chile powder, lemon pepper, if you like - it's not essential.

SLOW-COOKER CHICKEN PROVENCAL

Slow-Cooker Chicken Provencal image

As a full-time working mom, I am always looking for really good recipes for my crock pot. I am always skeptical about slow-cooker recipes but this one is a winner. Again, I am always willing to go the extra mile with ingredients and preparation if I think it will be worth the effort. This one works well on a weekend or if you put it on during your lunch break since you cook it low for 4 hours only. I served this with a parmesan couscous tossed with diced artichoke hearts and lemony green beans topped with tomato and basil feta cheese. This one is company worthy, I was impressed and that doesn't come easily for me!
