SLOW COOKER TURKEY BROTH
Don't let a bit of your hard work on that turkey go to waste! Toss the leftovers in a slow cooker and make Slow Cooker Turkey Broth while you're sleeping.

Steps:
- Combine all ingredients (except water) in a 6 quart slow cooker. Cover with water.
- Cover and cook on low for 10-12 hours (overnight).
- Turn off slow cooker, remove lid, and allow broth to cool.
- Strain broth through a colander. Discard bones and vegetables. If desired, save meat.
- If desired, strain broth again through cheesecloth.
- If desired, let broth sit and remove fat from cooled broth (see this post for instructions).
- Refrigerate broth. Freeze in smaller portions, or use in place of chicken broth in any recipe.
EASY CROCK POT TURKEY LEGS
Turkey legs taste great prepared with the oil alone or with the oil and seasonings both. A flavorful option is to use the oil with parsley, sage, rosemary, and thyme as seasonings. You may make gravy with the drippings or use it as turkey broth in soup and other recipes. The broth is especially good in Progresso BestLife lentil soup to which you also add some leftover turkey and some turkey ham cubes. An oval slow cooker is easiest fit for turkey legs. Put an oval rack under legs and watch cooking time if you want firmer legs, often separate from broth.

- Place an oval meat rack in a slow cooker lightly coated with 1 tablespoons extra virgin coconut oil for 200 degrees maximum heat.
- Brush legs lightly with 1 tbsp.liquified extra virgin oil.
- Mix seasonings together and sprinkle over turkey legs.
- Cover and cook on low 10-12 hours or until tender. Alternatively, cook on high about 5 1/2-6 hours. This recipe assumes low temperature is at least 185 degrees.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil; spread beef bones out on prepared baking sheet.
- Roast bones in the preheated oven until browned, 25 to 30 minutes.
- Place carrots, celery, onion, garlic, peppercorns, and bay leaves in a slow cooker. Place roasted bones over vegetables; pour in enough cold water to cover bones. Add apple cider vinegar and kosher salt.
- Cook on Low for 8 hours. Pour broth through a fine-mesh strainer into a bowl and discard any strained solids.

TURKEY SOUP FOR THE SLOW COOKER
This is how I take care of the turkey carcass. But you can make this soup by following the directions and using 12 cups of chicken broth with 1/2 teaspoon of poulty seasoning. You can freeze the carcass and make the broth when convenient for you.

- Turkey Broth:.
- Put the turkey carcass in your slow cooker on Low with an onion, celery stalk,a carrot, salt and pepper,bay leaf, 1/2 poultry seasoning, 2 teaspoons chicken powder and water. Cook on Low overnight.
- Next morning, strain the both and pour it back in the slow cooker.
- Remove turkey meat from bones, set meat aside.
- Soup:.
- In the slow cooker with the broth, add onions, garlic, carrots, celery, thyme, salt and pepper.
- Cook at High for 4 hours; add turkey, noodles, and parsley.
- Cook another 1/2 hour.
- Enjoy!
- NOTE: Cooking time doesn't include the overnight that your broth is cooking.

- Add all remaining ingredients to the slow cooker, and fill with enough water to cover all the ingredients, but take care to leave at least a one-inch headspace in the slow cooker. Do not fill the slow cooker to the rim. If some of the ingredients are popping over the top of the water, that is okay. They will shrink and sink during the simmering time.
- Set the slow cooker to high for one hour, then turn down to "keep warm". Allow the bone broth to simmer on keep warm for six hours. If your slow cooker does not have a keep warm setting, turn it down to low. If, during the simmering process, the bone broth boils, tilt the lid of the slow cooker to release the heat. You want to see only periodic bubbles as the bone broth simmers. If you have a food thermometer, you can check the temperature of the bone broth. It should simmer at 180°F. But if you do not have a food thermometer, just watch the bone broth and make sure that it stays at a low simmer with only periodic bubbles.
