OLD FASHIONED SLOW COOKED LIVER, BACON AND ONIONS
Old Fashioned Slow Cooked Liver, Bacon and Onions. Meltingly soft, tender pieces of liver cooked in a delicious onion gravy with the bonus of bacon thrown in too! Options to use stove top, slow cooker or oven, pressure cooker, multi cooker, Instantpot too!.

Steps:
- Wash and slice the liver in to bite size pieces.
- In a large mixing bowl, add the flour and season with salt and pepper. Then add the liver and toss, making sure each piece is coated with flour. When done, take 3 tablespoons of flour and place in a cup and add a little cold water to form a paste. We will use this to thicken the gravy later. Set aside.
- Chop the bacon and slice the onions, mince garlic etc. and over a medium heat, fry off bacon until cooked. Use a slotted spoon and put the cooked bacon on a plate, leaving the bacon fat in the pan.
- Turn the heat up on the pan and add the liver slices. Carefully turn them until they are browned on all sides then remove on to a plate.
- Add the sliced onions, garlic and mushrooms to the pan. You may need to add a drop of olive oil if there is not much fat left from cooking the liver. Gently cook until the onions are soft. If using herbs, add them now.
- Add the bacon and liver back to the pan with the onions and mushrooms and combine. Then add the tomato puree and beef stock. Add the cup of flour water you prepared earlier and gently stir until everything is combined.
- For cooking on the stove top, place the lid on the pan and gently cook on the lowest heat setting you have for about 2 hours or until the liver is tender.
- For cooking in the oven, transfer everything to an ovenproof casserole dish and place in the oven at 300 F or 150 C for approximately 2 hrs 30 minutes.
- For cooking in the slow cooker, transfer everything into your slow cooker and cook on low for 5-6 hours.
- For those of you who would like to make this recipe in your Multi cooker or Instantpot, using the browning setting, saute as the instructions above and then add the broth mixture to the pot. Select MEDIUM Pressure and cook for 35 Minutes. Release the steam and serve!
- When ready, serve hot with some lovely mashed potatoes and steamed vegetables!

SLOW COOKER SPANISH STYLE LIVER

- Place the liver slices in the bottom of the crock pot. Place the bacon slices over the top. In a bowl, mix together the carrot, celery, tomatoes, salt, and pepper. Pour over the liver and bacon. Nestle the bay leaf into the mixture. Cover the crock pot and cook on low for 4 hours or until the liver is cooked through. Serve the liver hot with the vegetable mixture. Remove the bay leaf before serving.
SLOW COOKER SPANISH BEEF STEW
I have never heard a complaint of my beef stew, it's a great new take on an old favorite! I prefer to serve stew over white rice, it all depends on your taste. You can season the beef with a packet of Sazon instead of salt and pepper, for even more Spanish style.

- Heat a large skillet over medium heat. Cook beef in hot skillet until completely browned, about 5 minutes; season with salt and pepper. Transfer beef to a slow cooker, retaining some of the beef drippings in the skillet.
- Return skillet to heat and heat the retained drippings. Saute onion and garlic in hot drippings until softened, about 5 minutes; add to beef in slow cooker.
- Stir potatoes, diced tomatoes, sofrito, and olives into the beef mixture.
- Cook on Low until beef and potatoes are fork-tender, 4 to 5 hours.

JOLEAN'S CROCK POT SPANISH CHICKEN
This is a recipe that my Mom always made for us in the 70's, which I found in her original 1970 Crock Pot Recipe Booklet (with the page "dog-eared" and check-marked), and over the years has been tweaked just a bit for our own tastes...Super easy, and since I've been married (and divorced) twice now, I can honestly tell you that it is a "Man-Pleaser" as well as a kid-friendly recipe. I make this at least a couple of times every month, and they always ask me when I'm going to make it again! Really tasty, and easy too, since you dump everything in the crock pot in the morning and when you all come home from work or school, the house smells amazing!!!

- Wash chicken breasts, drain, and season on both sides with salt, pepper, paprika and garlic powder.
- Place seasoned chicken breasts in crock pot.
- Mix tomato paste and beer together and pour evenly over chicken breasts.
- Add olives with liquid.

- Heat 2 tbsp olive oil in a large frying pan. Fry 1 sliced Spanish onion for about 5 mins until golden.
- Tip into the slow cooker pot (we used a 6.5-litre model), then fry 12 large bone-in skinless chicken thighs and 225g thickly sliced chorizo picante in the same pan until starting to colour - you will need to do this in two batches.
- Add to the slow cooker with 3 mixed colour peppers, cut into chunks and 150g pitted Spanish pimento stuffed green olives.
- Tip 300ml dry white wine, 300ml chicken stock and 1 tbsp tomato purée into the pan.
- Scrape up any bits stuck to the bottom, then tip into the slow cooker, cover and cook on Low for 6 hrs.

- To make the spice mix, combine all of the ingredients together with a large pinch of salt. Slash the lamb shoulder all over with a sharp knife and rub in. If you have the time, marinate for up to 24 hrs, but this is not essential.
- Heat the oven to 150C/130C fan/gas 2. Heat the oil in a large flameproof casserole dish or roasting tin over a medium-high heat, add the onions, carrots and garlic and sizzle for 5 mins until the onions and carrots are softened. Pour over the stock, then bring to the boil. Nestle the lamb in the pan and cover, then transfer to the oven and roast for 2 hrs.
- Uncover and transfer the lamb to a plate using tongs. Stir the beans, peppers and olives through the stock in the pan, sit the lamb back on top and return to the oven, uncovered, for 1 hr 30 mins until the lamb is cooked through. Transfer the lamb to a board and shred using two forks. Stir the parsley through the braised beans before serving.
