ROASTED WILD SALMON WITH TOMATOES, BASIL, AND CAPERS, PARMESAN-CRUSTED CAULIFLOWER, AND RICE

- Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
- Season salmon with salt and pepper. Brush lemon and herb seasoning all over both sides of salmon.
- Place salmon on prepared baking sheet. Arrange cauliflower on another baking sheet, spray with cooking spray and sprinkle with Parmesan. Roast 15 minutes, until fish is fork tender and cauliflower is golden brown and tender.
- In a medium bowl, combine tomatoes, basil and capers. Season, to taste, with salt and pepper.
- Serve 4 of the salmon fillets with tomato mixture spooned over top. Serve half of the rice and all of the cauliflower with this meal. Reserve extra salmon fillets and extra rice for other meals.
SALMON AND TOMATOES IN FOIL
Here is a simple recipe for salmon prepared en papillote (a fancy name for "in paper," though like most everyone else these days, you will use aluminum foil). Layer salmon, tomato and basil on lightly oiled foil and wrap it all up - you can even do it a night before cooking. When the time for dinner comes, you can steam, grill, roast or pan-grill the packages - though our testing shows roasting is easiest. You can substitute almost anything comparable for each of the ingredients: salmon can be replaced by any fish steak or fillet, or by boneless, skinless chicken breast. The herb and vegetable can also be varied at will, as long as the vegetable will finish cooking at the same time as the protein: if you were cooking broccoli, for example, you would have to cut it into small pieces; if carrots, you'd have to parboil them.

- For each of 4 packages, place one 12-inch-long sheet of aluminum foil on top of another. Smear top sheet with 1/2 tablespoon olive oil, and layer a fillet of salmon, 6 tomato halves, salt and pepper, 4 basil leaves and another half tablespoon oil. Seal package by folding foil onto itself and crimping edges tightly. Repeat to make other packages, and refrigerate until ready to cook, no more than 24 hours later.
- When you are ready to cook, heat oven to 500 degrees. Place packages in a roasting pan. (Or they can be cooked on top of the stove in 2 skillets over medium-high heat.) Cook 5 minutes (for medium-rare) to 8 minutes from the time the mixture starts to sizzle, or roughly 10 to 12 minutes total.
- Let packages rest a minute, and cut a slit along the top with a knife. Use a knife and fork to open the package. Spoon the salmon, garnish and juices onto a plate, and serve.

Inspired by my favorite local Italian restaurant's secret recipe. After some trial and error, I think I have it. Creamy Alfredo sauce and salmon complement each other well. Spinach adds great color.

Steps:
- Bring a large pot of lightly salted water to a boil. Add fettuccine, and cook for 11 to 13 minutes or until al dente; drain.
- In a medium saucepan over medium heat, melt the butter, and blend with milk. Mix in the flour to thicken. Gradually stir in the Parmesan cheese until melted.
- Crumble salmon into the butter mixture. Stir in the spinach, capers, sun-dried tomatoes, and oregano. Cook and stir about 3 minutes, until heated through. Serve over the cooked pasta.

GRILLED SALMON WITH TOMATO, CUCUMBER AND CAPER SALSA

- Whisk first 5 ingredients in small bowl. Season marinade with salt and pepper.
- Combine 1/2 cup marinade, cucumber and next 4 ingredients in medium bowl; season salsa with salt and pepper. Let stand 30 minutes; toss occasionally.
- Spray barbecue rack with nonstick spray and prepare barbecue (medium-high heat). Place salmon, skin side down, in large glass baking dish. Top with remaining marinade. Let stand 10 minutes. Sprinkle with salt and pepper.
- To grill salmon using fish basket:
- Spray basket with nonstick spray. Place salmon in fish basket, folding tail under if fish is too long. Place basket on barbecue and grill salmon, skin side up, 5 minutes. Turn basket over; grill salmon until just opaque in center, about 5 minutes longer. Turn salmon out onto platter.
- To grill salmon without using a basket:
- Spray rimless baking sheet with nonstick spray. Place salmon, skin side up, on sheet. Spray skin with nonstick spray. Slide salmon, skin side up, onto barbecue. Grill 5 minutes. Stand blade of large spatula at 1 long side of salmon to hold in place. From opposite side, slide rimless baking sheet completely under salmon. Hold salmon with spatula; turn sheet and salmon over, releasing salmon, skin side down, onto barbecue. Grill salmon until just opaque in center, about 5 minutes longer. Slide baking sheet under salmon; transfer fish to platter. Serve with salsa.
SUN-DRIED TOMATO CAPER BUTTER FOR GRILLED SALMON
Having grown up in the Pacific Northwest I have a special fondness for salmon, particularly wild Copper River King Salmon from Alaska. My mother used to make all kinds of toppings and rubs for grilled salmon and this one is my favorite!

- 1. Combine butter, tomatoes, capers, and garlic. Season to taste with sea salt and freshly ground pepper. Transfer to a plastic sandwich bag and refrigerate.
- 2. When it's time to grill, let some of the butter come to room temperature. Spread a layer (as much as you want) of butter mixture on salmon before putting the fish on the grill. After removing salmon from the grill and just before serving, spread on a bit more butter mixture.
SALMON WITH TOMATOES AND CAPERS IN FOIL
Steps:
- In a medium bowl, combine the tomatoes, parsley, capers, oil, garlic, lemon zest and juice, 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Season the salmon on both sides with salt and pepper. Place each salmon fillet on a sheet of aluminum foil and top with a few tablespoons of the tomato mixture. Fold the foil sheets into packets. (If making this recipe in advance, store the packets on a baking sheet in the refrigerator until time to grill.)
- Place the packets on the grill and cover. Cook 10 to 12 minutes for medium.

- Heat the olive oil in a heavy saucepan. Add the chopped onion and crushed garlic and sweat for 5 minutes, stirring frequently, until translucent.
- All the tomato passata or canned tomatoes, plus the anchovies, olives capers and plenty of black pepper, bring to the boil, then lower the heat right down and simmer for 15 minutes.
- Preheat the grill. Brush the salmon steaks with a little oil and grill for 6 minutes or until cooked through, turning once halfway through cooking.
- Meanwhile, steam the broccoli for 5 minutes or until cooked but firm.
- Serve the salmon with the sauce and steamed vegetables.
- Place the basil and lemon rind over the salmon. Serve.

SALMON AND SPINACH WITH CAPER SAUCE
Another great fish recipe based on one from the Low Fat Living Cookbook. The original recipe called for wrapping the salmon fillets in phyllo dough, for everyday meals I just use foil. (I always have a package of frozen mixed mushrooms from Trader Joe's on hand, so if I want to make this and don't have fresh mushrooms, the frozen ones work just as well). Sprinkling the spinach with some rice vinegar after baking makes this taste like the sautéed spinach and garlic served at P.F. Chang's.

- Sauce:.
- Melt the butter in a small saucepan over medium heat.
- Add the flour and whisk.
- Slowly stir in the broth.
- Add the mushrooms and reduce heat to low.
- Simmer for 30 minutes.
- Strain the sauce and discard the mushrooms.
- Return the sauce to the pan and add the capers.
- Season with salt and pepper.
- Keep warm on very low heat until ready to use.
- Fish:.
- While the sauce is simmering preheat the oven to 350°F.
- Melt the butter in a large non-stick skillet over medium heat.
- Add the garlic and cook for 1 minute.
- Add the spinach and cook for 5 minutes, or until just softened, stirring often.
- Season with the salt and pepper.
- Drizzle the lemon juice over the salmon.
- Spread 1/8 of the spinach mixture onto a sheet of foil that has been coated with non-stick spray (or use non-stick foil).
- Place one piece of salmon on the spinach.
- Top the salmon with another 1/8 of the spinach.
- For each packet bring the opposite edges of the foil together on top of the salmon and fold over several times.
- Twist the short ends to make a tight seal.
- Place the packages on a baking sheet and bake for 20 minutes.
- Serve with the sauce.
SB GRILLED SALMON WITH TOMATOES, SPINACH, AND CAPERS

- Heat the oven to broil. Lightly coat a large heat-resistant baking dish with cooking spray. Place salmon, flesh side up, in the baking dish, lightly season with salt and pepper, and broil without turning until salmon is cooked through, 8 to 10 minutes. Meanwhile, in a large saucepan, heat oil over medium heat. Add onion and garlic; cook, stirring occasionally, until softened, about 7 minutes. Stir intomatoes, spinach, and capers; cook for 2 minutes longer. Remove the pan from the heat. Remove salmon from broiler and transfer to 4 serving plates. Spoon tomato mixture over salmon, squeeze lemon wedges over the top, and serve warm.

- Wash the spinach and remove tough stems.
- Place in pot with garlic and tarragon and cover. Cook over medium heat until spinach is wilted. Drain, arrange and keep warm in a serving dish large enough to hold salmon.
