Recipe for fresh green beans sauteed in garlic and olive oil.

1 pound green beans
5 cloves garlic
1/4 cup olive oil
1/4 cup extra virgin olive oil
1 tsp kosher salt

Steps:

  • Trim or snap the ends off of the green beans. Slice or chop 5 cloves of garlic into small pieces.
  • Bring a 1/2 cup of water to boil in a shallow pan and add the green beans. Cover and cook for 2-3 minutes until bright green. Drain beans and wipe the pan clean.
  • In the same pan on medium-low heat saute the garlic in a 1/4 cup of olive oil until lightly golden (about 1-2 minutes).
  • Add the green beans to the pan and mix well. Cook for 2-3 minutes longer and add 1 tsp of kosher salt. Taste test and adjust salt, or add pepper if desired. Turn off heat and drizzle some extra virgin olive oil on top before serving. Enjoy!

2-3 tablespoons olive oil
1/2 teaspoon salt or to taste
1 clove large garlic chopped or sliced
balsamic vinegar if desired

Steps:

  • Clean the green beans by removing the ends and rinsing in cold water.
  • In boiling water (unsalted) cook the green beans until tender (al dent / 10 to 15 minutes), drain and immediately toss gently with salt, garlic and olive oil. Serve immediately. Enjoy!

1 small onion, chopped
2 tablespoons olive oil
2 to 3 garlic cloves, minced
1 can (14-1/2 ounces) stewed tomatoes, coarsely mashed
1/2 cup water
3 tablespoons minced fresh oregano or 1 tablespoon dried oregano
4-1/2 teaspoons minced fresh basil or 1-1/2 teaspoons dried basil
1 teaspoon sugar
1 teaspoon salt
1/4 to 1/2 teaspoon coarsely ground pepper
2 pounds fresh green beans, cut into 1-inch pieces
2 tablespoons grated Romano cheese

Steps:

  • In a small saucepan, saute onion in oil until tender. Add garlic; saute 1 minute longer. Add the tomatoes, water, oregano, basil, sugar, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 40 minutes., Meanwhile, place beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. Add tomato mixture and cheese; cook for 5 minutes or until heated through.

1 (12-ounce) bag green beans (recommended: Birds Eye Steamfresh)
2 tablespoons olive oil
2 teaspoons chopped garlic
2 teaspoons Italian seasoning
1/4 teaspoon crushed red pepper flakes
Salt and freshly ground black pepper

Steps:

  • Cook the green beans in the microwave according to package instructions
  • Heat the olive oil in a large skillet over medium heat. Add the garlic, Italian seasoning, red pepper flakes, a generous pinch of salt and pepper and saute for 2 minutes. Add the green beans, toss to coat them in the oil and saute another 2 minutes. Serve hot.

An easy way to prepare green beans that will usually even get those who don't like green beans to eat them :) These come a little better if you thaw the green beans first -in fridge for a few hours, or if time constricted - I have popped them in the microwave for a few minutes. The measurements for dry ingredients are approximate - you can play with them an adjust to your own taste - I usually don't measure mine. This recipe doubles well.

1 (16 ounce) bag frozen Italian cut green beans (Hanover is what I use)
1 tablespoon fresh minced garlic (or to taste)
2 tablespoons olive oil (or canola oil)
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 cup parmesan cheese

Steps:

  • Saute fresh garlic in the oil for a few minutes, but don't let garlic start to brown.
  • Add green beans in and stir them to coat with the oil.
  • Sprinkle all dry ingredients on the green beans except the parm cheese.
  • Cover and let saute for about an hour, stirring occasionaly.
  • When green beans lose the bright green color and become tender, turn off the heat an sprinkle with parmesan cheese.
  • Serve and enjoy! Delicious!

1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

1 lb green beans, cut on the diagonal into 3-inch pieces (Italian flat, Romano)
2 tablespoons extra virgin olive oil
3 medium garlic cloves, cut into very thin slices (a 1/4 cup)
1 tomatoes, cut into 1/2-inch dice (8ounces)
1/2 teaspoon salt
1/4 teaspoon pepper, freshly ground
6 -8 basil leaves, cut into chiffonade (stacked, then rolled tightly and cut into very thin strips, optional garnish)

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the green beans and cook for 5 to 7 minutes, until tender. Drain immediately.
  • While the beans are cooking, heat the oil in a medium sauté pan or skillet over medium-high heat until the oil shimmers. Add the garlic slices, distributing them evenly. Cook for 4 to 5 minutes, until the slices become almost translucent and start to brown on the edges; be careful not to let the garlic burn.
  • Add the diced tomato and salt and pepper to taste, then reduce the heat to medium. Cook for 2 to 3 minutes, so that the tomato is heated through.
  • Add the cooked green beans and heat through for 1 to 2 minutes; mix well. Taste and adjust seasoning as needed.
  • Transfer to a serving dish and top with the basil, if desired. Serve warm or at room temperature.
