1 red bell pepper, sliced
1 sweet onion, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
2 cloves garlic, minced
1 (24 ounce) jar Ragu® Old World Style® Traditional Pasta Sauce
1 loaf hearty bread
1 bunch fresh basil, leaves removed and torn

Steps:

  • Heat oil in a large skillet over medium-high heat. Cook sausages, turning to brown all sides, 4 to 5 minutes.
  • Place browned sausage in slow cooker. Add the peppers, onions, garlic, and Ragu® Old World Style® Traditional Pasta Sauce to the slow cooker; stir. Turn to low and cook for 6 to 8 hours.
  • Serve over slices of hearty fresh bread; garnish with fresh basil.

2 lbs sweet Italian sausage
1 yellow bell pepper
1 red bell pepper
1 green bell pepper
1 small onion
2 tablespoons italian seasoning
salt and pepper
1 (10 ounce) can tomato sauce

Steps:

  • Boil water and add in the sausage. Cook for about 20 minutes.
  • Meanwhile, julienne, or slice the peppers and onions.
  • In a crock pot, add 1/2 of the tomato sauce and the half of the veggies.
  • When sausage is cooked somewhat, slice it and then add it to the crock pot along with the rest of the peppers and onions.
  • Then add in the seasonings, salt and pepper and then the rest of the tomato sauce.
  • Give it all a stir, mix so that it is all melded together.
  • Slow cook for 3-6 hours or overnight.
  • Serve on rolls and enjoy!

2 red onions , finely chopped
1 celery stick , finely chopped
1-2 tbsp rapeseed oil
4 carrots , cut into fat pieces
12 chipolatas , each halved
1 sweet potato , peeled and cut into chunks
400g tin tomatoes
1 tbsp tomato purée or tomato and veg purée
1 thyme sprig
1 rosemary sprig
1 beef stock cube or stock pot

Steps:

  • Fry the onion and celery in the oil over a low heat until it starts to soften and cook, about 5 mins, then spoon it into the slow cooker. Fry the carrots briefly and add them too.
  • Brown the sausages all over in the same frying pan - make sure they get a really good colour because they won't get any browner in the slow cooker. Transfer to the slow cooker and add the sweet potato and tomatoes.
  • Put the purée in the frying pan and add 250ml boiling water, swirl everything around to pick up every last bit of flavour, and tip the lot into the slow cooker. Add the herbs, stock cube and some pepper. Don't add salt until the casserole is cooked as the stock can be quite salty. Cook on high for 4 hrs or on low for 8 hrs, then serve or leave to cool and freeze.

12 fresh Italian sausages, hot or sweet (about 1- 3/4 to 2 pounds)
1 large Spanish onion, cut in halved, and cut into 1/4 inch slices
1 tablespoon tomato paste
2 large red peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 large yellow peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 poblano peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
4 large cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
6 crusty sandwich rolls, toasted

Steps:

  • Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes.
