1 pound processed cheese (such as Velveeta), cut into large cubes
1 pound pepper jack cheese, shredded (about 4 cups)
2 cups whole milk
1 teaspoon ground cumin
Tortilla chips, for serving

Steps:

  • Combine the processed cheese, pepper jack, milk and cumin in a small slow cooker. Cook on low, 1 1/2 hours.
  • Uncover and stir well until completely smooth. If the queso is still lumpy, cover and continue cooking on low, stirring every 15 minutes, until all the cheese is melted and smooth. Keep the slow cooker on warm. Serve the queso with chips.

1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 lb chicken breast, sliced in half
2 tablespoons taco seasoning
salt, to taste
pepper, to taste
4 garlics, minced
1 lime, juiced
1 can diced tomato, drained
4 cups brown rice, cooked
sour cream
guacamole
fresh cilantro
shredded cheese

Steps:

  • In a slow cooker, place half of the bell peppers and onion.
  • Lay on the chicken, and coat both sides with taco seasoning, salt, and pepper.
  • Sprinkle on garlic, half of the lime juice, and diced tomatoes. Cover with remaining peppers, onion, and lime juice.
  • Cover and cook on high for 3 hours.
  • Remove chicken from the slow cooker, shred, and return to slow cooker.
  • Cover until heated through.
  • Serve over brown rice with sour cream, guacamole, shredded cheese and cilantro.
  • Enjoy!

3 lb easy melt processed cheese, cut into 1-inch (2.54 cm) cubes
2 ¾ cups green chile, canned, drained
2 tablespoons ground cumin
2 tablespoons chili powder
1 tablespoon ground coriander
4 cloves garlic, minced
1 can fire-roasted diced tomatoes, drained
1 bottle mexican beer
1 cup pico de gallo, drained
1 cup scallions, thinly sliced
1 cup fresh cilantro, finely chopped
1 cup shredded monterey jack cheese
tortilla chip, for serving

Steps:

  • Combine the easy melt processed cheese, green chiles, cumin, chili powder, coriander, garlic, tomatoes, and beer in a 6-quart slow cooker and stir evenly to incorporate. Cover and cook on high for 2 hours.
  • Uncover and stir in the pico de gallo, scallions, and cilantro. Sprinkle the Monterey Jack cheese over the top. Cover and cook on high for 30 minutes more.
  • Switch the slow cooker setting to Warm and serve the queso with tortilla chips.
  • Enjoy!

8 ounces pepper Jack cheese, shredded (2 cups)
4 ounces American cheese, shredded (1 cup)
2 teaspoons cornstarch
1 (10-ounce) can diced tomatoes with chiles, such as Ro-Tel
1 (12-ounce) can evaporated milk
Kosher salt
Finely chopped red onion, sliced jalapeños, chopped cilantro leaves, and tortilla chips, for serving

Steps:

  • In the bowl of a 1 1/2-quart slow cooker, toss both cheeses with cornstarch to evenly coat. Stir in tomatoes and evaporated milk; season with salt.
  • Cover and cook on low until mixture is bubbling and thickened slightly, 2 to 2 1/2 hours. Uncover and stir until smooth. Season with more salt and garnish with onion, jalapeños, and cilantro. Serve with tortilla chips on the side.
