Steps:
- Unfold puff pastry. Whisk egg and water; brush over pastry. Combine the remaining ingredients; spread over pastry to within 1/2 in. of edges. Roll up jelly-roll style. Cut into twenty 1/2-in. slices., Place 2 in. apart on greased baking sheets. Bake at 425° until puffed and golden brown, 9-11 minutes. Serve warm.

- Mix all ingredients except tortillas until thoroughly blended Spread onto tortillas and roll each one up (you can wrap individually with plastic wrap and refrigerate for later, or cook now) cut into even slices; discarding the ends. Place on a parchment lined baking sheet Bake for 10 min, turn half way through Heat oven 375F

- In a small skillet, saute onion in oil until tender. Add oregano and garlic; cook 1 minute longer. Add spinach; cook 3 minutes longer or until liquid is evaporated. Transfer to a large bowl; cool., Add feta cheese and eggs to spinach mixture; mix well. Unfold puff pastry. Spread each sheet with half the spinach mixture to within 1/2 in. of edges. Roll up jelly-roll style. Cut each into twelve 3/4-in. slices. Place cut side down on greased baking sheets., Bake at 400° for 18-22 minutes or until golden brown. Serve warm.

GREEK SALAD PINWHEEL PARTY APPETIZER
This delicious recipe comes from the Betty Crocker Party Food cookbook. It is a really yummy appetizer that is addictive and makes a super presentation with the dark colored olives and colorful red tomatoes. The spinach gives it great crunch. - 1. In small bowl, beat cream cheese and feta cheese with electric mixer on medium speed until smooth. Stir in cucumber.
- 2. Place tortillas on microwavable plate or microwavable paper towel; microwave uncovered on High 10 to 15 seconds to soften. Spread about 1/4 cup cheese mixture over each tortilla. Top evenly with olives and tomatoes. Arrange 1/2 cup spinach on each tortilla to within 1/2 inch of edge. Roll up tightly; wrap in plastic wrap. Refrigerate 2 to 3 hours to blend flavors.
- 3. Trim ends of rolled tortillas if desired. Cut each roll into eight 1-inch slices. Arrange with cut sides down on serving dish.
RED AND GREEN HOLIDAY PINWHEELS

- Cut cookie dough in half. Sprinkle 1/4 cup of the flour onto work surface. Roll out half of dough to 12x7-inch rectangle. Repeat with remaining half of dough and 1/4 cup flour. Sprinkle 1 rectangle evenly with red sugar; sprinkle green sugar evenly over second rectangle.
- Starting with shortest side, roll up each rectangle jelly-roll fashion. Wrap rolls in waxed paper; refrigerate at least 1 hour for easier handling.
- Heat oven to 350 degrees F. Cut each roll into 16 slices. On ungreased cookie sheets, place slices 1 inch apart. Bake 7 to 9 minutes or until edges are light golden brown. Cool 1 minute. Remove from cookie sheets to cooling racks.

terribly addictive party food but it's reasonably healthy so that's ok. cooking time is chill time. edited due to reviews: they can get a bit overly wet, try making the salad a few hours to a day beforehand and then scooping out with a slotted spoon to leave the liquid behind. this also infuses the veggies like a marinade. they wont be terrible colourful unless you use a light-coloured vinegar and mix the dressing in right before serving. i like balsamic but i generally choose taste over appearances if i have to choose.

- whisk dressing together, mix veggies in a large bowl and toss with dressing. you can cheat and chop the veggies in a food processor since they should be finely chopped anyways.
- spread filling on tortillas, leave a 3/4 inch border. roll up tightly.
- chill for at least an hour to let everything set.
- slice into 1/2-1 inch disks, if falling apart you can hold them together with toothpicks. arrange nicely on a platter.
