This Slow Cooker Jambalaya is a great way to make this New Orleans favorite with less effort! It's loaded with shrimp, chicken, sausage, and Creole seasonings.

1 white onion, diced
3 stalks celery, diced
1 green bell pepper, diced
3 cloves garlic, diced
1 pound smoked sausage, sliced about 1/4 inch
1 pound boneless chicken breasts and/or thighs, cut into bite-sized pieces
1 (28-ounce) can diced tomatoes
1 tablespoon dried oregano
2 bay leaves
1 to 2 tablespoons Creole seasoning (I like Tony Chachere's Creole Seasoning)
1 pound large shrimp, shell on, thawed
1 cup long grain white rice
1/2 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
Fresh parsley, chopped, for garnish

Steps:

  • Add the shrimp and cook on high: Leave the shells on the shrimp, but use kitchen shears to cut up the backs; this will make them easier to peel later. Add the shrimp to the slow cooker. Stir it in, cover, and cook on high for another 30 to 45 minutes until the shrimp are cooked through.
  • Cook the rice: While the shrimp cooks, cook the rice either according to the package directions or following this boiled rice method . When done, set the rice aside, covered, until ready to serve. (This makes about 4 cups of cooked rice.)

250 g (9oz) pack cooking chorizo sausages, sliced into bitesize chunks
1 green and 1 red pepper, deseeded and chopped
1 onion, finely chopped
2 celery sticks, finely chopped
2 garlic cloves, crushed
1 tsp. dried thyme
1 tbsp. cajun seasoning
400 g (14oz) tin chopped tomatoes
500 ml (17 fl 0z) chicken stock
Few drops Tabasco, to taste
300 g (11oz) easy-cook long-grain rice
200 g (7oz) cooked king prawns
Large handful fresh parsley leaves, roughly chopped

Steps:

  • Add all the ingredients, except the rice and prawns, to the slow cooker pot. Season well. Cover with the lid and cook on low for 3-4 hours.
  • Increase the heat to high, stir in the rice, cover and cook for a further 30mins or until cooked through. Add the prawns, cover and cook for a further 5min or until they are heated through. Stir in the parsley and adjust seasoning before serving.

1 tbsp rapeseed oil
1 onion, chopped
3 celery sticks, sliced
100g wholegrain basmati rice
1 tsp mild chilli powder
1 tbsp ground coriander
½ tsp fennel seeds
400g can chopped tomatoes
1 tsp vegetable bouillon powder
1 yellow pepper, roughly chopped
2 garlic cloves, chopped
1 tbsp fresh thyme leaves
150g pack small prawns, thawed if frozen
3 tbsp chopped parsley

Steps:

  • Heat the oil in a large, deep frying pan. Add the onion and celery, and fry for 5 mins to soften. Add the rice and spices, and pour in the tomatoes with just under 1 can of water. Stir in the bouillon powder, pepper, garlic and thyme.
  • Cover the pan with a lid and simmer for 30 mins until the rice is tender and almost all the liquid has been absorbed. Stir in the prawns and parsley, cook briefly to heat through, then serve.

This is very easy and wonderful to come home to after a long day at work. Even after cooking for 8 hours the vegetables are crisp and tasty. I use 1 tablespoon bayou blast (emeril) instead of red pepper sauce and turkey kielbasa for the sausage. I cook my rice in a rice-cooker. My teenagers say it is the best meal that I make. What an easy & tasty dinner this is!

This spicy, zingy Creole dish with juicy shrimp can be frozen for up to 1 month. To freeze: transfer to a container, label and freeze for up to 1 month. To eat: defrost at room temperature for 8 hours, or in the fridge for 24 hours. Microwave in portions, 2 at a time, on full power for 3 minutes (for a 900W microwave), gently stirring halfway, until piping hot throughout. Serve with Tabasco and lime wedges.

1 yellow pepper, deseeded and sliced

3 fresh thyme sprigs, leaves picked
7 ounces long-grain rice

7 ounces raw jumbo shrimp, peeled and deveined
4 scallions, trimmed and finely sliced

Steps:

  • Cook the chorizo in a wide, deep frying pan over a medium-high heat, stirring occasionally, for 3-4 minutes. Remove with a slotted spoon and drain on kitchen paper.
  • Add the peppers, onion, celery, garlic and chili to the pan and cook, stirring occasionally, for 5 minutes, until softened slightly. Stir in the thyme and rice, cook for 1 minute, then add the tomatoes, broth and Tabasco and bring to the boil. Cover, reduce the heat to low and simmer very gently, stirring occasionally, for 12 minutes, until most of the liquid has evaporated. Season to taste.
  • Stir in the chorizo, shrimp and scallions and cook for 1 minute. Serve or cool completely to freeze.
