Delicious moist gluten free cake. It's great with cream cheese icing, powdered sugar, or just plain.Plus it stays moist and tasty for days!!I found the cake to be a little bit crumbly, but it was so delicious it didn't matter.I got this recipe from one of Bette Hagman's recipe books.

3/4 cup rice flour
1/2 cup potato starch (NOT potato flour)
1/4 cup tapioca flour
3/4 teaspoon xanthan gum
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup butter
3/4 cup white sugar
3 tablespoons brown sugar
2 eggs
3 tablespoons milk
1 1/2 cups apples, peeled, cored, and shredded (about 2 apples)
icing sugar, for dusting (optional)

Steps:

  • Preheat oven to 350°F; grease either 9 inch round springform pan, or 8 inch square cake pan, and dust with rice flour.
  • In a medium bowl, whisk together the flour mix, xanthan gum, baking soda, baking powder, and cinnamon; set aside.
  • In the bowl of your mixer, cream the butter for about 1 minute or until softened.
  • Add both sugars,and beat for about 2 minutes.
  • Add the eggs, one at a time, and beat until well incorporated.
  • Blend in the milk.
  • Then turn mixer to low and add the dry ingredients half at a time, beating after each addition, until they are well absorbed.
  • Remove the bowl from the stand and gently fold in the shredded apples.
  • Spoon the batter into the prepared pan and bake for 40-45 minutes, or until toothpick inserted tests clean and the cake pulls away from the edge of the pan.
  • If serving from the pan, cool at least 10 minutes before removing.
  • Dust lightly with icing sugar, if desired.

2 cups granulated sugar
1 1/4 cups oil
1 1/4 cups rice flour
1/4 cup potato flour
1/2 teaspoon xanthan gum

3 cups carrots, grated
1/2 cup pecans, chopped
2 cups apples, peeled, cored, and chopped

Steps:

  • Heat oven to 350°F.
  • Beat eggs well gradually adding sugar until mixture is light and fluffy (about 5 minutes).
  • Add oil and beat until well incorporated.
  • Sift the dry ingredients together and fold into the egg mixture.
  • Grate carrots.
  • Peel, core, and chop apples.
  • Chop pecans.
  • Fold in carrots, apples and nuts.
  • Pour batter into a greased and floured 9x13-inch pan.
  • Bake for 45 minutes in the middle of the oven.
  • Remove to wire rack and wait 15 minutes before removing from pan.
  • Cool completely and frost as desired.

2 cups gluten-free self-raising flour
170 g butter, softened
2/3 cup caster sugar
1 teaspoon vanilla essence
1 teaspoon ground cinnamon
3 eggs
1/2 cup plain yogurt
8 teaspoons water (2 tablespoons)
1/2 cup freshly grated apple

Steps:

  • Preheat your oven to 160°C
  • Grease well and line a 22cm round cake pan.
  • Sift the gf self-raising flour into a large bowl and set aside.
  • Beat the butter with the caster sugar, until light and creamy.
  • Add the vanilla essence and the cinnamon. Mix well.
  • Add the eggs and beat well.
  • Lightly fold in the flour, yogurt and water.
  • Grate the apple and then fold it lightly into the cake mixture.
  • Bake in the cake pan for 50 -55 minutes or until a skewer inserted in the centre comes out clean.
  • NOTE: Check how the cake is baking at about 40 minutes baking time and if it is browning too much before cooking through- lightly cover with foil and continue baking.
  • Allow the cake to cool in the tin for 10 minutes and then cool on a wire rack.
  • Dust with icing sugar to serve.

4 ounces cream cheese, softened
2 tablespoons butter, softened
4 -5 teaspoons pure maple syrup
1 lb powdered sugar

Steps:

  • Preheat to 350°F.
  • Grease a 9-inch springform pan.
  • In a large bowl, beat the eggs.
  • Add oil, applesauce, brown sugar, maple syrup, vanilla, and cinnamon; beat well.
  • Stir in baking mix.
  • Add apples, raisins, and pecans and stir just until combined.
  • Pour into greased cake pan.
  • Bake 40-45 minutes until a toothpick inserted in the center comes out clean.
  • Cool slightly and remove from pan.
  • Meanwhile prepare the frosting.
  • Cream together cream cheese and butter until fluffy.
  • Add maple syrup and then powdered sugar, one cup at a time. Add more maple syrup, if necessary.

I have been lucky enough to have found and since converse with **Jubes** through here Recipe Zaar, and I sent her this Gluten free recipe, which **Jubes** made for herself and her family. Both **Jubes and I think it would work well with regular flour, but as yet I have not tried (but am going to). This recipe is called a cake, but **Jubes** suggests its more of a pudding type cake, but also says its super easy to make!!! So I have **Jubes** to thank for this recipe being posted!!!!! 1 teaspoon finely grated lemon zest
2 cups caster sugar
2 cups gluten-free self-raising flour
1 teaspoon vegetable oil
200 g morello pitted cherries, drained

  • Preheat oven to 180c. Line 22cm cake tin with baking paper. Peel apples and slice into thin pieces.

This gluten-free apple cake swaps flour, refined sugar and butter for ground almonds, agave syrup and olive oil - and it's gorgeous

125ml (½ cup) olive oil
140g (½ cup) maple syrup or agave syrup
2 eggs
130g (1/2 cup) apple sauce (shop-bought or homemade)
185g (2 cups) ground almonds
1 tsp baking powder
1 tsp cinnamon
1 apple , skin-on, cored and diced
tiny splash olive oil
1 tbsp maple syrup
½ tsp cinnamon

Steps:

  • Heat oven to 190C/170C fan/gas 5, and lightly oil a 20cm springform tin and line the base with a circle of baking parchment.
  • In a stand mixer, or using a hand blender, whizz together the oil and maple syrup for 30 secs. Add the eggs and whizz for another 1 min before adding the apple sauce and blending for a further 30 secs. Tip in the ground almonds, baking powder, 1 tsp salt and cinnamon, blend for 30 secs and your batter is done. Pour it into the tin, and bake for around 30-40 mins or until the top is a deep golden brown, the cake is coming away from the sides a little, and a skewer inserted into the centre comes out clean.
  • While it's cooking, make the topping. In a small frying pan, cook the apple gently with the rest of the topping ingredients and ½ tsp salt until the apple is soft and gently caramelised. When the cake is ready, scatter the bronzed apple chunks on top of the cake. You could also make it with chunks of caramelised peach or plum on top, or some cherry compote, or any berries which you have softened in a pan with a little water and maple syrup. Eat warm, as a pudding, with a spoonful of Greek yogurt, or cold with a cup of tea or coffee.

I'm so pleased that I could almost replicate the taste and texture without wheat! Coconut flour can be substituted for almond flour. Makes a 9x13-inch pan. When cool, you can dust with confectioners' sugar if desired.
