Potato Chips with Malt Vinegar image

Oven-roasted golden potato chips make a fine substitute for the deep-fried kind. These are paired with malt vinegar for a tasty snack.

Ingredients

4 medium Yukon gold or red potatoes, scrubbed (about 2 1/2 pounds)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon freshly ground pepper
Malt vinegar, for drizzling

Steps:

Heat oven to 425 degrees. Place two baking sheets in the oven, and let heat for about 10 minutes.
Slice the potatoes into 1/4-inch-thick rounds. Toss the potatoes with the olive oil, salt, and pepper.
Remove baking sheets from oven, and arrange potato slices on sheets in a single layer. Bake until the potatoes are golden on the bottom side, about 30 minutes. Turn potatoes over, and bake until golden brown all over, about another 15 minutes. Remove from oven, drizzle with vinegar, and serve immediately.

This was given to me by my mom to help curb my insatiable craving for Tim's Sea Salt & Vinegar Potato Chips ;) They're quite good, and I like to serve them with burgers and such.

Ingredients

4 medium yukon gold potatoes, scrubbed
canola oil
salt
black pepper
malt vinegar
fine sea salt

Steps:

Heat grill to medium.
Place potatoes in a pot of water; add 1 T salt. Cook until just tender, 15 minutes. Drain, cool, and slice 1/4-inch-thick slices.
Brush potatoes with oil; season with salt and pepper. Grill until golden brown on both sides and cook through, about 8 minutes.
Remove to a platter in an even layer; drizzle with vinegar. Season to taste with sea salt.
