Number Of Ingredients 6

1 pound Ground Beef (93% lean or leaner)
2 teaspoons chopped fresh sage or 1/2 teaspoon rubbed sage
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 to 1/2 teaspoon crushed red pepper

Steps:

  • Combine Ground Beef and seasonings in large bowl, mixing lightly but thoroughly.
  • To make patties, lightly shape sausage mixture into four 1/2-inch thick patties. Heat large nonstick skillet over medium heat until hot. Add patties; cook 10 to 12 minutes or until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally.
  • To prepare crumbles, heat large nonstick skillet over medium heat until hot. Add sausage mixture; cook 8 to 10 minutes, breaking into 1/2-inch crumbles and stirring occasionally.

1 1/2 tablespoons salt (kosher or coarse)
2 teaspoons dried sage (crumbled or ground)
1 1/2 teaspoons fresh ground black pepper
1 teaspoon cayenne pepper (optional)
1 teaspoon dried thyme

Steps:

  • For fullest flavor, let these sausages sit overnight after mixed.
  • Mix all spices into the meat and stir well with a wooden spoon, or hands.
  • Form patties and cook like a hamburger in a skillet over medium high heat.
  • To make sure the sausage is juicy "sear" both sides (on high heat) then reduce the the heat (medium or medium high) and finish the cooking. The well cooked outside will hold in the juices.

1 tbsp Fennel Seed
1/2 tsp Red Chili Flake (for spicy sausage)
1 tsp Poultry Seasoning
1 tsp Salt
1/4 tsp Ground Black Pepper

Steps:

  • Prepare Ground Beef: Add your ground beef to a large bowl. It's best if the ground beef rests at room temperature for 10-15 minutes to make sure it stays tender when cooking. Cooking cold meat in a hot pan will cause the beef to become too tough.
  • Add In Spice Blend: Add in breakfast sausage spice blend to the bowl with the ground beef.
  • Blend Sausage and Seasoning: With your hands, mix the ground beef and spices all together. Make sure you're not overmixing the meat.
  • Heat Your Skillet: Add a thin layer of cooking oil to your skillet and turn the heat on medium high. Let heat up for a few minutes.
  • Form Your Breakfast Sausage Patties: Take seasoned ground beef and make a large log. Portion into 8 even pieces. Take each piece and flatten into patties that are ¼ inch thick.

2 pounds ground beef (75% to 80% lean)

Steps:

  • Stir the brown sugar, sage, salt, basil, black pepper, onion powder, marjoram, and red pepper flakes together in a small bowl. Place the ground beef in a large bowl; mix the spice blend into the ground beef with your hands until evenly integrated. Refrigerate for 24 hours to let the flavors blend.
  • Divide the ground beef mixture into 8 patties.

3 tablespoons cilantro leaves
2 1/2 teaspoons salt or 2 1/2 teaspoons salt substitute
1/2 teaspoon ground oregano
1/2 teaspoon ground sage
1/2 teaspoon black pepper, if desired
1/4 cup warm water
1 teaspoon brown sugar or 1 teaspoon Splenda sugar substitute
1 teaspoon maple syrup (optional)

Steps:

  • In large bowl, mix ground meat and spices and herbs.
  • In warm water, add brown sugar or splenda and maple syrup if desired. Stir.

2 lbs pork (a good mix of fat and lean using a fine grind works best)
1 cup fine dry breadcrumb
2 -3 teaspoons salt
1/2 teaspoon white pepper
1/4 teaspoon ground ginger
3/4 teaspoon ground sage
1/4 teaspoon thyme leaves
1/8 teaspoon ground allspice
1/2 cup ice water

Steps:

  • Place all ingredients in a large bowl,mixing well to assure spices are evenly distributed.
  • Form into patties, refrigerate several hours to allow spices to blend.
  • Fry over medium heat until well browned and cooked through, with no pink showing.
  • NOTE this mixture may be stuffed into small casings, making 3-4 inch links, your guests will be so impressed!
