1 boneless beef chuck roast (3 to 4 pounds)
1-1/2 cups ketchup
1 small onion, finely chopped
1/4 cup packed brown sugar
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon celery seed
1/4 teaspoon paprika
1/4 teaspoon pepper
2 tablespoons cornstarch
2 tablespoons cold water
12 kaiser rolls, split
Dill pickle slices, optional

Steps:

  • Cut roast in half. Place in a 5-qt. slow cooker. In a small bowl, combine the ketchup, onion, brown sugar, vinegar, mustard, Worcestershire sauce, garlic, salt, celery seed, paprika and pepper; pour over roast. Cover and cook on low for 8-10 hours or until meat is tender., Remove meat. Skim fat from cooking juices; transfer to a large saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into juices. Return to a boil; cook and stir for 2 minutes or until thickened., When meat is cool enough to handle, shred with two forks. Return to slow cooker and stir in sauce mixture; heat through. Serve on rolls with pickle slices if desired.

Here is a recipe for stove top cooked barbecue beef that just uses a few simple ingredients you probably have on hand. You can easily pop it all into a crock pot to cook too.

3 pounds beef chuck roast (boneless, fat trimmed, cut into 4 pieces)
1 cup barbecue sauce ( of your choice)
1/2 cup orange marmalade (or orange preserves)
1 tablespoon Dijon mustard
2 teaspoons brown sugar (packed )
1 onion (small, sliced)
12 hamburger buns

Steps:

  • Place the beef roast into a pot, either a stove top pot or slow cooker.
  • In a medium bowl, mix the barbecue sauce, orange preserves, mustard, brown sugar and onion. Pour this mixture over the beef
  • Cover the pot and cook on the stove, over low heat, for 7 to 8 hours. If you are using a slow cooker, set it to low and cook for the same amount of time, 7 or 8 hours.
  • To bake the bbq beef in the oven, set the oven temperature to about 300ºF. Place everything in the pot as directed above, then pop the pot into the heated oven and bake for several hours.
  • When it is well cooked and very tender, remove the beef from the pot. You can either cut the meat into thin slices or shred it with two large forks. Put the shredded or sliced beef back into the pot and stir it into the sauce. Cover and cook again on low for 20 to 30 minutes until it is all nice and hot.
  • Fill your favorite buns with the barbecue beef.

1 large Spanish onion, sliced into thin rings (or 2 smaller onions)
2 tablespoons butter
1 cup tomato ketchup
1 cup Pepsi
2 teaspoons maple syrup
1 tablespoon Worcestershire sauce
1 tablespoon vegetable oil (add more if needed)
1 medium green bell pepper, chopped small
1 lb round steak, very thinly sliced (across the grain, not with it)
1/2 teaspoon garlic powder

Steps:

  • Slice the onion and slowly brown in 2 Tbsp of butter until onions are soft and carmelization begins, should be ready a little before the beef is done, sprinkle lightly with salt when done.
  • In a medium bowl, combine ketchup, cola, and worcestershire and syrup.
  • In a sauce pan, bring to a boil and then simmer, uncovered, 20 minutes,.
  • stirring occasionally.
  • While the sauce is cooking, slice the round steak and chop the pepper.
  • In a 12 inch skillet on med-high setting heat the oil and add the chopped green pepper and cook for 2 mins (or until soft).and then add the sliced beef and garlic powder.
  • Quickly cook the meat just until no longer red and no blood is showing, you may need to do this in batches. If the sauce is ready add the meat and peppers to it right away. If not just set the skillet aside for the few mins until the sauce has cooked for the 20 minutes.
  • After the 20 mins add beef mix and gently simmer an additional 5 minutes.
  • Serve on toasted buns with onions topping the beef mix.

1 (28 ounce) can diced tomatoes with juice
½ cup distilled white vinegar

The best cut of roast beef for sandwiches isn't necessarily the same as what you'd want hot from the oven. A hot roast demands plenty of marbling so that the rich fat can melt and baste the meat with its goodness. Roast beef sandwiches work better made from a leaner cut, preferably one with a mineral, earthy taste and a nice chew. A top loin roast is ideal. It's got plenty of brawny flavor, and all of the fat is on the surface, which you can easily trim off after the meat is cooked. Here, the beef is roasted low and slow to ensure rare, juicy meat. This said, if you want a more economical cut, use bottom, top or eye round here instead. Just adjust the roasting time if the cut is larger or smaller.
