This tasty slow cooker pepper steak cooks out to be packed with a ton of flavor and has simply amazing tender pieces of beef.

1 kg (2.2 lb) beef, cut into strips
1 red bell pepper, thick slices
1 green bell pepper, thick slices
1 onion, chopped, thick slices
1 beef bouillon cube
¼ cup light soy sauce
1 tsp ginger, minced
1 tsp garlic, crushed
¼ tsp black pepper
400 g (14.1 oz) crushed tomatoes
2 tsp brown sugar
¼ cup boiling water
1 Tbsp cornstarch
1 Tbsp water

Steps:

  • In a frypan over high heat, quickly brown the beef strips.
  • In a small bowl, combine the boiling water and the beef bouillon cube. Stir until completely dissolved.
  • Next, in the slow cooker, add the beef, bell peppers, onion, beef bouillon mix, soy sauce, ginger, garlic, black pepper, crushed tomatoes, and the brown sugar, mix slightly together.
  • Cook on low for 6-8 hours or until beef is deliciously tender.
  • To thicken, mix the cornstarch and the water until it forms a paste. Mix this into the slow cooker, cook for 15 minutes or until thickened.
  • Serve & Enjoy.

Stuffed bell peppers have never been simpler to prepare, thanks to your slow cooker! Just stir all the filling ingredients together (raw ground beef included), then stuff the mixture into the peppers and let the cooker do the rest. Top with sour cream for a comforting, nourishing dinner your whole family will love.

5 large red, orange or yellow bell peppers
1 pound 90-percent lean ground beef
One 14.5-ounce can fire-roasted diced tomatoes
2 cups shredded pepper jack cheese (from one 8-ounce block)
1 cup cooked medium-grain white rice
4 cloves garlic, minced
4 scallions, thinly sliced
2 teaspoons chili powder
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
1/2 cup low-sodium chicken broth
Sour cream, for serving

Steps:

  • Trim about 1/8 inch from the bottom of each pepper so it can stand upright. Cut the top 1/4 inch off each pepper. Remove and discard the stems, then finely chop the remaining flesh from the tops and set aside. Scoop out and discard the seeds and as much of the membranes as you can from inside the peppers.
  • Mix the reserved chopped pepper with the ground beef, tomatoes and their juices, 1 cup of the cheese, cooked rice, garlic, 3 of the scallions, chili powder, cumin, 1 1/2 teaspoons salt and several grinds of black pepper in a large bowl with your hands until combined. Dividing evenly, spoon the filling into the hollowed-out peppers, packing it in (the filling will mound a bit above the tops).
  • Pour the chicken broth into the bottom of a 6-quart slow cooker, then add the stuffed peppers. Season the top of each pepper with another pinch of salt. Cover and cook on high until the peppers are tender and the ground beef is cooked through, for 3 to 3 1/2 hours. Top with the remaining 1 cup cheese, cover and cook on high for 10 minutes more to melt the cheese. Sprinkle the peppers with the remaining scallions and add a dollop of sour cream to each.

2 lbs beef chuck (thinly sliced)
2 cups chopped to 1 inch squares bell pepper
½ medium onion (peeled, cut in half, sliced)
1 cup beef broth
2 tsp freezer dried garlic
⅓ cup chopped parsley
2 tsp salt
1 tsp black pepper
3 tsp Sriracha sauce ((add more if you like it extra spicy))
½ cup water
2 Tbsp cornstarch

Steps:

  • Place 2 lbs of meat on the bottom of the slow cooker. Top with 1/2 a sliced onion. For even better flavor, sauté onion in skillet until golden brown, then add it to the slow cooker. Top with 2 cups of cut-up bell pepper. Sprinkle with salt, pepper, and garlic.
  • Mix 1 cup of broth with 3 tsp Sriracha, or water, bullion cubes, and Sriracha. Pour over the peppers and beef.
  • (if using bullion cubes, add only 1 tsp salt). Set on high heat for 3.5-4 hours.
  • Mix ½ cup water and 2 tablespoons cornstarch. Add 1 cup of liquid from the meat & pepper mixture and cook on medium heat until boiling, then cook 2 minutes past boil to remove the cornstarch flavor. Add this mixture back to the meat and bell peppers. Sprinkle with chopped parsley, stir and serve.
  • Serve hot over rice, noodles or mashed potatoes.

1 beef top round roast (3 pounds)
1 large onion, halved and sliced
1 large green pepper, cut into 1/2-inch strips
1 large sweet red pepper, cut into 1/2-inch strips
1 cup water
4 garlic cloves, minced
1/3 cup cornstarch
1/2 cup reduced-sodium soy sauce
2 teaspoons sugar
2 teaspoons ground ginger
8 cups hot cooked brown rice

Steps:

  • Place roast, onion and peppers in a 5-qt. slow cooker. Add water and garlic. Cook, covered, on low until meat is tender, 6-8 hours., Remove beef to a cutting board. Transfer vegetables and cooking juices to a large saucepan. Bring to a boil. In a small bowl, mix cornstarch, soy sauce, sugar and ginger until smooth; stir into vegetable mixture. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes., Cut beef into slices. Stir gently into sauce; heat through. Serve with rice. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

1-1/2 pounds beef top round steak
2 tablespoons canola oil
1 cup chopped onion
1/4 cup reduced-sodium soy sauce
1 garlic clove, minced
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon pepper
4 medium tomatoes, cut into wedges or 1 can (14-1/2 ounces) diced tomatoes, undrained
1 large green pepper, cut into strips
1 tablespoon cornstarch
1/2 cup cold water
Hot cooked noodles or rice

Steps:

  • Cut beef into 3x1-in. strips. In a large skillet, brown beef in oil. Transfer to a 3-qt. slow cooker. Combine the onion, soy sauce, garlic, sugar, salt, ginger and pepper; pour over beef. 2 pounds beef sirloin, cut into 2 inch strips
garlic powder to taste
3 tablespoons vegetable oil
1 cube beef bouillon
¼ cup hot water
1 tablespoon cornstarch
½ cup chopped onion
2 large green bell peppers, roughly chopped
1 (14.5 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon white sugar
1 teaspoon salt

Steps:

  • Sprinkle strips of sirloin with garlic powder to taste. In a large skillet over medium heat, heat the vegetable oil and brown the seasoned beef strips. Transfer to a slow cooker.
  • Mix bouillon cube with hot water until dissolved, then mix in cornstarch until dissolved. Pour into the slow cooker with meat. Stir in onion, green peppers, stewed tomatoes, soy sauce, sugar, and salt.
  • Cover, and cook on High for 3 to 4 hours, or on Low for 6 to 8 hours.

1 1/2 lbs beef tenderloin steaks, cubed
1 teaspoon sea salt, ground (or to taste)
1 teaspoon black pepper (or to taste)
2 cups white onions, cubed
3 cups bell peppers, ribs removed, seeded and cubed
2 large tomatoes, washed and cubed
4 garlic cloves, pressed
1 tablespoon ginger, minced
1 tablespoon brown sugar
2 tablespoons hoisin sauce
1 tablespoon Worcestershire sauce
1 tablespoon low sodium soy sauce
1/2 tablespoon chili oil
2 cups low sodium beef broth

Steps:
