4 tablespoons (1/2 stick) unsalted butter, plus more for baking dish
Coarse salt and freshly ground pepper
3 cups elbow macaroni
2 (12-ounce) cans evaporated milk
1/3 cup skim milk
2 large eggs
1/2 teaspoon seasoned salt
1/4 teaspoon garlic powder
2 (8-ounce) packages extra-sharp cheddar cheese, grated
1 (8-ounce) package Monterey Jack cheese, grated
Paprika, for sprinkling

Steps:

  • Preheat oven to 375 degrees. Generously butter a 13-by-9-inch glass baking dish; set aside. Bring a large pot of water to a boil; add salt and macaroni. Cook until al dente according to package directions. Drain, and return to pot. Add butter, and toss until pasta is coated and butter has melted; set aside.
  • In a medium bowl, whisk together evaporated milk, skim milk, and eggs. Add seasoned salt, garlic powder, 1 teaspoon salt, and 1/2 teaspoon pepper; set aside. In another medium bowl, combine cheeses; set aside.
  • Place 1/3 macaroni in an even layer in the bottom of prepared baking dish; cover evenly with 1/3 cheese. Repeat with remaining macaroni and cheese mixture. Pour milk mixture evenly over contents of baking dish. Sprinkle with paprika. Bake until top layer is lightly browned, 35 to 45 minutes. Let stand 10 to 15 minutes before serving.

1/4 cup all-purpose flour
3 1/2 cups milk
1/4 teaspoon white pepper
1/4 teaspoon mustard powder
1 pinch cayenne
1 pinch nutmeg
300 g grated cheddar cheese
454 g fresh spinach
1/2 cup breadcrumbs
50 g grated cheddar cheese
1 cup breadcrumbs
1 tablespoon butter
150 g grated cheddar cheese
450 g macaroni
300 g ham

Steps:

  • Preheat oven to 350F convection bake.
  • In batches, pulse spinach in food processor until coarsely chopped.
  • Place chopped spinach in a pot, cook over medium-low heat until wilted.
  • Place spinach in small mixing bowl, set aside.
  • Boil a pot of water, cook macaroni as directed.
  • At the same time, melt butter for cheese sauce in a pan.
  • Add flour, white pepper, mustard powder, cayenne, and nutmeg to butter, fry briefly to toast flour.
  • Mix in milk a bit at a time, mixing thoroughly to avoid lumps.
  • Continue to heat sauce until thickened slightly, stirring regularly.
  • Add cheese to sauce, stir until melted.
  • Add 1/2 cup of cheese sauce to spinach, add the rest to cooked macaroni.
  • Add cheese and bread crumbs to spinach.
  • Dice ham.
  • Mix together butter and bread crumbs for topping, then mix in cheese.
  • Grease a 13x9 pan. Pour in one third of the macaroni and cheese. Layer diced ham on top. Cover with another third of the macaroni. Spread out spinach layer on top. Cover with remaining macaroni. Sprinkle topping over all.
  • Bake uncovered for 35 minutes.

Steps:

  • Heat oven to 350ºF.
  • Prepare Dinners as directed on package; spread onto bottom of 13x9-inch baking dish sprayed with cooking spray. Cover with beans.

1/2 cup chopped onion
1 garlic clove, minced
1 can (28 ounces) crushed tomatoes

1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/8 teaspoon pepper
8 ounces uncooked elbow macaroni
2 cups fat-free cottage cheese
1-1/2 cups shredded reduced-fat cheddar cheese
TOPPING:
1/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1 tablespoon butter, melted

Steps:

  • In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the tomatoes, tomato paste, sugar and seasonings. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Meanwhile, cook macaroni according to package directions; drain. 1 pound elbow macaroni
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
1 cup fresh bread crumbs
1/4 cup grated Parmesan, plus 8 ounces
1 tablespoon chopped fresh parsley leaves
1 tablespoon canola oil
1 teaspoon paprika
1 (8-ounce) block Cheddar, grated
1/2 cup cottage cheese
Freshly cracked black pepper
Cooking spray

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a large pot of salted water to a boil over medium heat. Add the macaroni and cook until slightly underdone, or very al dente, about 7 minutes. Drain the pasta and return it to the pot.
  • In a saucepan over medium heat, melt the butter and stir in the flour. Cook, stirring constantly, until the roux turns a very pale golden color. Add the milk and whisk well to remove any lumps. Bring to a simmer over low heat.
  • Meanwhile, in a small bowl, mix together the bread crumbs, 1/4 cup of Parmesan, parsley and canola oil. Reserve.
  • Add the paprika, Cheddar, the remaining 8 ounces of grated Parmesan, the cottage cheese and salt and pepper, to taste, into the milk mixture. Pour the cheese sauce over the pasta and stir to combine.

1 lb shell macaroni (large or medium shells)
3/4 teaspoon salt
pepper
4 cups shredded sharp cheddar cheese
2 tablespoons butter or 2 tablespoons margarine
4 cups milk

Steps:

  • Cook shells in boiling water until barely al-dente.
  • Drain well.
  • Heat oven to 400 deg.F and grease a 13 x 9 inches baking dish.
  • Put about 1/3 of the shells in prepared dish. Sprinkle with 1/4 tsp salt, pepper and 1/3 of the cheese. Dot with 1/ tbsp butter. Repeat layers twice more, ending with the remaining cheese. Don't push down on the shells or it will make it too dense. Pour milk over top.
  • Bake 45 minutes to 1 hour, depending on how crisp you like the top.

4 eggs
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 sticks (1 cup) unsalted butter, plus for greasing the casserole dish
1 cup all-purpose flour
4 cups whole milk
1 tablespoon Dijon mustard
1 tablespoon hot sauce
1 cup shredded Cheddar
1 cup shredded gouda
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
2 tablespoons sherry vinegar
1 clove garlic
1/2 shallot
1 Anaheim chile
1 jalapeno chile
1 poblano chile
1 serrano chile
Kosher salt and freshly ground black pepper
1/2 cup grated Parmesan

Steps:

  • For the pasta: Mound the "00" flour on a clean work surface and make a well in the center. Crack the eggs into the well and beat with a fork. Add the olive oil and season with salt and pepper. Slowly work the flour from the edges of well into center until a dough ball starts to form. Knead for 3 to 5 minutes, until very smooth. Wrap in plastic and let rest at room temperature for 30 min.
  • Divide the dough into four pieces and cover with a damp towel. Using a pasta roller set to the thickest (widest) setting, roll one piece of dough out into a sheet. Fold the sheet in half and pass it through the roller again on the same setting. Reduce the setting and repeat, rolling and folding the dough and passing it twice through the machine before going to the next setting. Continue in this manner until the thinnest setting has been used. Repeat with rest of the dough.
  • Let rest on a baking rack for 10 to 15 minutes, until the moisture is reduced by about half.
  • Preheat the oven to 400 degrees F.
  • For the cheese sauce: Add the butter and all-purpose flour to a heavy-bottomed pot over medium heat. Cook, stirring continuously, until blond and smooth. Whisk in the milk and bring to a boil. Add the mustard, hot sauce and cheeses, slowly at first; cook, whisking, until smooth and combined. Add salt and pepper to taste.
  • For the green chile puree: To a blender, add the olive oil and the sherry vinegar, garlic, shallot and chiles. Blend until smooth. Season with salt and pepper.
  • To assemble dish: Bring 4 cups salted water to a boil. Cut the pasta sheets to fit a buttered 10-inch square casserole dish. In batches, cook the pasta sheets for 1 minute in the boiling water; immediately submerge in an ice bath to stop cooking.
  • Spread a ladleful of cheese sauce in the bottom of the casserole dish; arrange pasta sheets on top to fit the dish. Ladle in more cheese sauce, just to cover, then liberally spread with green chile puree. Cover with more pasta sheets. Repeat the layers all the way to the top of the casserole dish. Sprinkle the Parmesan on top.
  • Bake until golden brown and delicious, and the center has reached 160 degrees F, about 15 minutes.
