MINESTRONE SOUP

Minestrone soup image

This hearty and nutritious minestrone soup is brilliant at embracing what you've got in your fridge. We make it every month and all the kids love it - it's one of the dishes where they always go in for seconds. It's super-easy to tweak according to the vegetables you have in the house - embrace the seasons but also use the best of your freezer and store cupboard, let it flex for you. And if you want to keep it veggie, leave out the bacon and just go straight to the veg.

Provided by Jamie Oliver

Categories     Healthy soup recipes     Jamie's Food Revolution     Keep cooking and carry on     Winter warmers

Time 30m

Yield 8

Number Of Ingredients 14

4 rashers of higher-welfare smoked streaky bacon, optional
olive oil
1 clove of garlic
2 small onions
2 fresh bay leaves
2 carrots
2 sticks of celery
2 large handfuls of seasonal greens, such as savoy cabbage, curly kale, chard
1 vegetable stock cube
1 x 400 g tin of quality plum tomatoes
2 x 400 g tins of beans, such as cannellini, butter, or mixed
100 g dried pasta
Parmesan cheese, to serve
extra virgin olive oil

Steps:

  • Put a large shallow casserole pan on a medium-high heat.
  • Finely slice the bacon, if using, and sprinkle into the pan with 1 tablespoon of olive oil, stirring occasionally while you prep your veg.
  • Peel and finely chop the garlic and onion, adding the garlic to the pan with the bay leaves as soon as the bacon turns golden, followed by the onions.
  • Trim and chop the carrots and celery into rough 1cm dice, adding to the pan as you go. Remove and finely chop any tough stalks from your greens and add to the pan. Cook for 10 to 15 minutes, stirring regularly, or until softened and caramelised.
  • Crumble in the stock cube, pour in the tinned tomatoes, breaking them up with your spoon, then add 1 tin's worth of water.
  • Pour in the beans, juice and all, then add a pinch of sea salt and black pepper.
  • Shred your greens and sprinkle into the pan, top up with 600ml of boiling kettle water, then add the pasta. Cover and leave to simmer for 10 to 15 minutes, or until the pasta is just cooked and the soup has thickened to your liking.
  • Season the soup to perfection, then serve it with a grating of Parmesan cheese and a drizzle of extra virgin olive oil. A sprinkling of fresh baby basil leaves will always be delicious, if you've got them, and my kids enjoy it with a dollop of pesto on top, too.

QUICK AND EASY MINESTRONE

Quick and Easy Minestrone image

Traditionally, minestrone is slow-simmered with Parmigiano-Reggiano rinds to impart a rich umami flavor to the broth. In our shortcut version, soy sauce is used instead, adding instant depth to this pantry-friendly soup.

Provided by Food Network Kitchen

Categories     appetizer

Time 25m

Yield 4 servings

Number Of Ingredients 12

1 tablespoon olive oil, plus more for serving
One 8-ounce can corn kernels, drained
2 tablespoons tomato paste
1/2 teaspoon dried rosemary, chopped
1/4 teaspoon dried oregano
1 quart chicken broth
One 14-ounce can diced tomatoes
3/4 cup small pasta, such as small shells
One 14-ounce can white beans, drained, reserving half of the liquid
1 teaspoon soy sauce
Kosher salt and freshly ground black pepper
One 14-ounce can cut green beans, drained

Steps:

  • Heat the oil in a medium pot over medium-high heat. Add the corn and cook, stirring occasionally, until it starts to brown slightly, about 3 minutes. Add the tomato paste, rosemary and oregano and cook, stirring constantly, until the tomato paste begins to darken in color, about 1 minute. Slowly whisk in the chicken broth until the paste is smooth and incorporated into the liquid.
  • Add the whole can of diced tomatoes (including the liquid), and bring the mixture to a boil. Stir in the pasta, the white beans and reserved liquid and the soy sauce. Season with salt and pepper. Cook until the pasta is al dente, 7 to 8 minutes, stirring in the green beans during the last 2 minutes of cooking. Serve in individual bowls with a little oil drizzled on top.

SIMPLE ITALIAN MINESTRONE SOUP

Simple Italian Minestrone Soup image

Simple and hearty Italian minestrone soup, brimming with vegetables, beans and a little pasta. The draw here is in the thick, flavorful tomato broth with piney rosemary, lots of fresh herbs, and Parmesan rind (a secret ingredient that Italian grandmothers have been using for years to flavor their soups)!

Provided by Suzy Karadsheh

Categories     Soup

Number Of Ingredients 20

1/4 cup extra virgin olive oil
1 small yellow onion (chopped)
2 carrots (chopped)
2 celery stalks (diced)
4 garlic cloves (minced)
1 zucchini or yellow squash (diced)
1 cup green beans (fresh or frozen, trimmed and cut into 1-inch pieces, if needed)
Salt and pepper
1 tsp paprika
1/2 tsp rosemary
1 15- oz can crushed tomatoes
6 cups broth (vegetable or chicken broth)
1- inch Parmesan cheese rind (optional)
1 bay leaf
2 to 3 springs fresh thyme
1 15- oz can kidney beans
Large handful chopped parsley
Handful fresh basil leaves
Grated Parmesan cheese (to serve (optional))
2 cups already cooked small pasta such as ditalini or elbow pasta

Steps:

  • In a large Dutch oven, heat the extra virgin olive oil over medium heat until shimmering but not smoking. Add onions, carrots and celery. Raise heat to medium-high, if you need to, and cook, tossing regularly, until the veggies soften a bit (about 5 minutes or so). Add the garlic and cook another minute, tossing regularly.
  • Add the zucchini or yellow squash and green beans. Season with paprika, rosemary, and a generous pinch of kosher salt and pepper. Toss to combine.
  • Now add the crushed tomatoes, broth, fresh thyme, bay leaf and Parmesan rind (if using.) Bring to a boil, then reduce the heat to a gentle simmer and partially cover the pot. Let simmer for about 20 minutes or so.
  • Uncover the pot and add the kidney beans. Cook for another 5 to 10 minutes.
  • Finally, Stir in the parsley and fresh basil. And, if serving immediately, stir in the cooked pasta and simmer ever so briefly till the pasta is warmed through; do not overcook. (See Cook's Tip #2)
  • Remove the cheese rind and bay leaf. Taste and adjust seasoning to your liking. Serve the minestrone hot in dinner bowls with a sprinkle of grated Parmesan (optional.)

  • Heat the olive oil in a large soup pot over medium-high heat. Add the onions, carrots, celery, a large pinch of sea salt and pinch of black pepper, and sauté for 5–6 minutes, until the veggies are soft.
  • Reduce heat to low, add the garlic, bay leaf and Italian herbs, and continue to sauté for another 2–3 minutes, until very fragrant. Garlic burns easily, so watch it carefully, or reduce the heat until you add the liquid.
  • After the garlic is cooked and very fragrant, add the tomatoes with their juices and cook another minute. Next, add the beans, 1 quart of chicken or veggie stock, plus 4 cups of purified water (you’ll need 8 cups of liquid total; any combo of stock and/or water works). Add 2 teaspoons of sea salt and a few big pinches or turns of your black pepper grinder. Adjust the salt as needed depending on your liquid—add another teaspoon or two to taste if using no-salt-added stock.
  • Turn the heat to high to let it come to a boil for one minute. If using uncooked noodles, add the 1/2 cup uncooked noodles now and cook at a low boil until the noodles are cooked through, usually about 8 minutes. Reduce to a simmer. If your noodles are already cooked, add them now and reduce the soup to a simmer. Simmer on low for 15 minutes.
