1 (16 ounce) package dried split peas, rinsed
1 ham bone (meaty) or 2 ham hocks
1 cup carrot, diced
1/2 cup onion, chopped
1 cup celery, chopped
2 garlic cloves, minced
1 bay leaf
2 teaspoons parsley flakes
1/4 teaspoon dried marjoram, crushed
1/4 teaspoon dried thyme, crushed
1 tablespoon salt (to taste-definitely reduce if not using water)
1/2 teaspoon pepper
1 1/2 quarts hot water

Steps:

  • Layer ingredients in slow cooker in the order listed.
  • Pour in water. Do not stir!
  • Cover and cook on low 8 to 10 hours or until peas are very soft and ham falls off bone.
  • Remove bones and bay leaf.
  • Serve!

1.1kg (21⁄2lb) unsmoked ham
1 bay leaf
1tbsp olive oil
1 onion, finely chopped
Salt and freshly ground black pepper, season to taste
1tbsp Dijon mustard
3 garlic cloves, finely chopped
2 sprigs of rosemary handful of thyme, leaves only
900ml (11⁄2 pints) hot beef stock for the slow cooker OR 1.2 litres/2 pints for the traditional method
450g (1lb) frozen peas
3 potatoes, peeled and chopped into bite-sized pieces

Steps:

  • Slow cooker method: Preheat the slow cooker, if required. Sit the ham and bay leaf in the slow cooker and cover with 900ml (11⁄2 pints) of water. Cover and cook on auto/low for 8 hrs or on high for 4 hrs, then remove the ham and set aside. Discard the stock, or strain and reserve a little to add to the soup. Heat the oil in a large heavy-based pan over a medium heat, add the onion, and cook for 3-4 mins until soft. Season with salt and pepper, then stir in the mustard, garlic, and herbs (reserve some thyme leaves for garnish). Add a little stock and bring to the boil, then tip in the peas (if you prefer them puréed, pulse them gently in a liquidizer or use a stick blender). Transfer to the slow cooker, add the remaining stock and the potatoes, cover, and cook on auto/low for 8 hrs or on high for 4 hrs. Remove any fat from the ham, chop into bite-sized pieces, and stir into the soup. Taste and season as needed. Garnish with the reserved thyme leaves and serve with wholemeal bread. OR Traditional method: Add the ham and bay leaf to a large pan, cover with 1.2 litres (2 pints) of water and bring to the boil. Partially cover, reduce to a simmer, and cook for about 1 hr or until the ham is cooked. Skim away any scum that comes to the surface of the pan as you go. Discard the stock, or strain and reserve a little to add to the soup. Set the ham aside until cool enough to handle. Heat the oil in a large heavy-based pan over a medium heat, add the onion, and cook for 3-4 mins until soft. Season with salt and pepper, then stir in the mustard, garlic, and herbs (reserve some thyme leaves for garnish). Add a little stock and bring to the boil, then tip in the peas and remaining stock. Bring to the boil, reduce to a simmer, and cook for 45 mins, topping up with hot water as needed. About 20 mins before the end of the cooking time, bring a separate pan of water to the boil. Add the potatoes, bring back up to the boil, and then simmer for 12-15 mins until soft. Drain and set aside. Remove the rosemary from the soup, then use a stick blender to gently purée the peas, or ladle them into a liquidizer and pulse a couple of times. Return them to the pan and stir in the potatoes. Remove any fat from the ham, chop into bite-sized pieces, and stir into the soup. Taste and season as needed. Garnish with the reserved thyme leaves and serve with wholemeal bread. 1 pound dried split peas
1 ham hock
3 tablespoons unsalted butter
1 cup finely chopped yellow onions
1/2 cup finely chopped celery
1/2 cup finely chopped carrots
2 teaspoons minced garlic
1 pound Smithfield ham, chopped
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper flakes
8 cups water
1 bay leaf
2 teaspoons fresh thyme
Parmesan Truffled Potato Chips, recipe follows
2 pounds red bliss potatoes, scrubbed well and patted dry, skins left on
4 cups vegetable oil, for frying
1/4 cup grated Parmesan
1 tablespoon truffle oil
1 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the peas in a large pot or bowl, cover with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside.
  • Score the ham hock. Place in a pot, cover with water and bring to a boil. Reduce heat and let simmer for 1 hour. Drain and set aside.
  • In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2 minutes. Add the celery and carrots and cook, stirring, until just soft, about 3 minutes. Add the garlic and cook, stirring, for 30 seconds.
  • Add the ham hock and ham and cook, stirring, until beginning to brown. Add the drained peas, salt, pepper, and pepper flakes, and cook, stirring for 2 minutes. Add 8 cups of water, the bay leaf and thyme, and cook, stirring occasionally, until the peas are tender, about 1 hour. (Add more water as needed, if the soup becomes too thick or dry.)
  • Remove the bay leaf and discard. Adjust the seasoning, to taste, and serve immediately with Parmesan Truffled Chips on top.
  • Using a mandolin or very sharp, heavy knife, slice the potatoes into rounds as thin as possible, and place in a large bowl of water to prevent discoloration.
  • Heat the oil in a large, heavy pot to between 340 and 350 degrees F.
  • Pat the potatoes completely dry. Add to the oil in batches and cook until golden brown, stirring with a long handled spoon to turn and cook evenly, about 2 minutes. Drain on paper towels and place in a large bowl. Toss with the cheese, truffle oil, salt, and pepper. Serve immediately.

1 large leek, white and light green part only, halved lengthwise and thinly sliced crosswise

Kosher salt and freshly ground pepper
1 smoked turkey leg (1 to 1 1/2 pounds)
1/4 cup nonfat plain yogurt
1/2 cup frozen peas, thawed
Crusty multigrain bread, for serving (optional)

Steps:

  • Tie the parsley stems and thyme together with kitchen string and place in a 6-quart slow cooker. Add the split peas, leek, celery, carrots, 1 teaspoon salt and 1/2 teaspoon pepper; stir to combine. Add the turkey leg and 7 cups water. Cover and cook on low until the split peas and meat are tender, 6 to 8 hours.
  • Discard the herb bundle. Discard the skin and bones from the turkey leg and shred the meat. Vigorously stir the soup to break up the peas and make the soup smoother. Thin with water, if desired. Stir in the chopped parsley and about three-quarters of the turkey meat; season with salt and pepper.
  • Ladle the soup into bowls. Thin the yogurt with a little water, then spoon onto the soup. Top with the thawed peas and the remaining turkey. Serve with bread, if desired.

  • My slowcooker holds about 12 cups, so adjust the recipe as necessary for the size of your slowcooker. First, rinse the peas. My grocery store sells the peas in 16 oz bags, so I use about half a bag and a little. I simply rinse them by pouring them into a strainer and running them under cold water for a few seconds while I shake. Place the rinsed peas on the bottom layer of the slow cooker. Then dice the ham, and place on the peas. Same with the onion, and add the bay leaf. Here's the secret. Shred the celery and carrot. This will result in a smooth and delicious soup.   • My slow cooker has 3 setting, high, low and auto. I cook this soup on high for 3 hours, then switch to low for another 5. Frankly I don't trust my slow cookers auto setting. I mean, really? How does it know how I want my soup cooked? This recipe will make a very thick soup, which is how I like it. If you like a thinner soup, then add less peas. What I do is make the thick soup, and when I reheat it I add water to thin it out.
