Steps:
- Place beef brisket into the pot. Discard the spice packet that comes with the meat.
- Cover the beef with water, add more to cover if needed.
- Add the spices into the pot.
- Cover and set on "Meat/Stew" for 60 minutes on high.
- Hit Cancel then use the Natural Release method, about 20 minutes.
- Remove cover carefully, watch for steam, remove brisket and keep warm.
- Add the vegetables to the pot and press "Soup" setting for 15 minutes.
- Use the "Quick" Release method.
- Uncover and add the beef back to the pot to warm through.
- Enjoy immediately!

Slow Cooker Keto Corned Beef Cabbage is the low carb and paleo-friendly version of the traditional Irish dish but I made it in the slow cooker and used a healthier, preservative free, nitrate free, uncured brand of corned beef.

Steps:
- Add corned beef brisket and the spices to a slow cooker.
- Pour 4 cups or enough water over brisket to just cover the whole roast.
- Add onions, carrots and celery. Cover and slow cook on low for 6 to 8 hours or on high for 4 to 5 hours.
- Add cabbage the last half hour of cooking time, Cover and continue to cook the remaining 30 minutes.
- Remove vegetables and cabbage with a slotted spoon from crockpot to drain excess liquid.
- Remove corned beef and slice against the grain. Serve.

- Layer the potatoes, carrots, onions, celery and thyme in the insert of a 6-quart slow cooker. Put the brisket on top of the vegetables and add the beer and pickling spice. Add enough water to just cover the brisket. Cover and cook on low until the meat and vegetables are tender, about 8 hours.
- Arrange the cabbage over the brisket (it's OK if the cooker seems crowded), cover and cook until soft and wilted, 45 minutes to 1 hour more.
- Whisk together the sour cream, horseradish and mustard in a small bowl.
- Remove the cabbage and toss with 1 tablespoon of the butter and pepper to taste in a large bowl. Remove the meat and let rest. Strain the remaining vegetables (reserve some of the cooking broth to serve on the side if you like) and toss with the parsley, the remaining 2 tablespoons butter and salt and pepper to taste.
- Slice the corned beef against the grain and serve with the vegetables, horseradish sauce and broth if using.

- Add barley, then onion and carrots to slow cooker. Place corned beef on top of vegetables. Pour in beer, broth, and enough water to cover beef by 1 inch (2.5 cm). Add bay leaf.
