BENIHANA ONION SOUP
This fantastic, light Benihana Onion Soup is a fan-favorite at the popular Japanese Steakhouse and it's surprisingly easy to make! The soup goes by many names, but is always loaded with onion flavor then topped with mushrooms, scallions, and fried onions!

- In a saucepan, combine the vegetable base for the broth: carrots, celery, onion, and garlic with a tablespoon or two of water or chicken broth. Saute the vegetables over medium-high heat until fragrant.
- Add the chicken broth, soy sauce, and water to the sauteed vegetables. Bring to a boil then reduce heat and simmer for 30 minutes.
- Using a fine-mesh sieve, drain the broth into a clean bowl and throw away the strained vegetables. Return the clear broth to your saucepan and keep on low heat while serving.
- Serve with 6-8 thinly sliced mushrooms, garnished with sliced green onions and fried onions.

- Place everything but the mushrooms and green onions into a slow cooker. I added in the bottom halves of the chopped green onions at this time as well and reserved the green upper halves for garnishing. Cover and cook on high for 2-4 hours or low for 4-5 hours. An hour before serving remove the cooked veggies from the crock pot with a slotted spoon Place the sliced mushrooms into the crock pot with the broth. Give it all a good stir. Cover to cook for another hour or until the mushrooms are tender. Divide amongst the bowls and serve!
SLOW-COOKED FRENCH ONION SOUP

- Place butter in a 5-qt. slow cooker. Top with sweet and red onions; sprinkle with pepper. Cook, covered, on low until onions are tender, 5-6 hours., Stir in broth, water, wine, herbs and Worcestershire sauce. Cook, covered, on low until flavors are blended, 2-3 hours. Remove herb sprigs and bay leaf., To serve, preheat broiler. Place bread on a baking sheet; broil 4 in. from heat until lightly toasted, 1-2 minutes per side. Top bread with cheese; broil until cheese is melted, 1-2 minutes. Divide soup among eight bowls; top with cheese toasts and serve immediately.

Steps:
- Melt butter in a skillet over medium heat; cook and stir sweet onion and red onion in melted butter until softened, about 10 minutes. Cook and stir garlic into onion mixture until fragrant, about 2 minutes. Transfer to a slow cooker.
- Pour beef stock, brandy, soy sauce, and Worcestershire sauce into slow cooker. Season with salt and black pepper.
- Cook soup on High for 4 to 5 hours.
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Ladle the soup into 3 oven-proof bowls; top with croutons and a slice of Provolone per bowl.
- Broil in the preheated oven until cheese melts and begins to brown, about 3 minutes.

- Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions are soft and browned, at least 30 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Stir sherry into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot. Transfer onions into a slow cooker and pour in beef broth. Season to taste with sea salt; stir in thyme and bay leaf. Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.
- About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven's broiler. Arrange bread slices on a baking sheet.
- Broil bread slices until toasted, 1 to 2 minutes per side.
- Combine Gruyere, Emmental, Parmesan, and mozzarella cheeses in a bowl, tossing lightly. Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with about 2 tablespoons of cheese mixture per serving.
- Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling, about 2 minutes.

SLOW COOKER FRENCH ONION SOUP
I made this fantastic recipe for a big batch of onion soup that You can freeze in portions to use later. Serve this with a lovely red wine and salad and voilà for a romantic meal. These are 14 large servings so if you are serving this before a meal reduce the amount of soup in your bowl. Better than bouillon also makes a great beef broth,

- Over medium heat sauté the onion in butter until soft and translucent and caramel colour. Make this in 3 batches.
- Place onions in slow cooker.
- Deglaze cooking skillet with some of the beef stock;this is the secret to that taste.
- Add to slow cooker along with the remaining beef broth (your own homemade or powdered mixed with boiling water).
- Add Worcestershire sauce, thyme and bay leaf.
- Cover; cook on High for 4 hours or on low for 6-8 hours.
- Add salt and pepper to taste. Remove bay leaf.
- Divide soup into appropriate containers.
- Seal and freeze.
- When ready to enjoy your French Onion Soup.
- Remove from freezer and place in a microwave dish with 2 tbsp sherry; heat for 5 minutes.
- Add Parmesan cheese to your onion soup bowl. Place one slice of toasted bread over the cheese. Fill bowl with soup.
- Top with shredded Gruyère cheese.
- Place under broiler to melt your cheese.
- Tip: When adding your ingredients to the slow cooker make sure they are all hot.
- Use the processor to slice your onions. I once read 'If I use my food processor just to make onion soup it will be worth the cost".

I love onion soup, and honestly, it doesn't get any easier than this. This recipe appeared in the Chicago Tribune Good Eating section 1/12/11, I made it the next day!

- Put onions in the slow cooker; set on high. Stir in the butter and olive oil to coat.
- Slow-cook for 5-6 hours, stirring occasionally, until deep brown. Careful not to burn.
- Stir in the flour, cook 1 minute. Add broth, sherry and salt. Adjust seasonings and cook in the slow cooker for 1 hour. To intensify the flavors: Prop the lid open a little (I stick a toothpick in between the pot & lid) to let some of the steam out and reduce the liquid. This will concentrate the flavor. The longer you let is simmer, the better it will. I let my soup simmer for 3 hours. YUM, it was rich and flavorful.
- 30 minutes BEFORE SERVING: Preheat oven to 450°. Toast the sliced bread on a baking sheet for 3-4 minutes, flip and bake for an additional 3-4 minutes for a drier crouton. Bake until crusty. Ladle soup into oven proof bowl. Top with toasted bread slice; sprinkle with cheese. Bake until the cheese has melted, 4-5 minutes.
