Made with two types of ground beef and loaded with flavor, you'll never miss the beans in this Slow Cooker Hearty No-Bean Chili!

1 pound lean ground beef
1 pound ground chuck
2 (15 ounce) cans tomato sauce (see note below)
2 (15 ounce) cans diced tomatoes (drained )
1 (6 ounce) can tomato paste
1 small white onion (diced)
1 green bell pepper (diced)
5-6 tablespoons chili powder
1½ teaspoons ground cumin
1 teaspoon minced garlic ((or 2 teaspoons garlic powder))
¾ teaspoon dried oregano
½ teaspoon granulated sugar
⅛ teaspoon cayenne pepper
Salt and pepper (to taste)

Steps:

  • In a large skillet, brown and crumble ground beef and ground chuck until cooked through. Drain and add to slow cooker.
  • Add tomato sauce, diced tomatoes, tomato paste, onion, pepper, minced garlic, cayenne pepper, ground cumin, chili powder, white sugar, oregano, salt and pepper to slow cooker. Stir to combine. **See note below**
  • Cover and cook on low for 8 hours or high for 4 hours. Serve with shredded cheddar cheese and sour cream, if desired.

Number Of Ingredients 15

2 teaspoons canola oil
1 large green pepper, chopped
1 large onion, chopped
2 garlic cloves, minced
3 pounds lean ground beef (90% lean)
2 cans (14-1/2 ounces each) stewed tomatoes, undrained
2 cans (8 ounces each) tomato sauce
2 cans (4 ounces each) chopped green chiles
1/2 cup minced fresh parsley
2 tablespoons chili powder
1-1/4 teaspoons salt
1 teaspoon paprika
1/2 teaspoon pepper
Hot cooked rice or pasta
Optional toppings: Shredded cheddar cheese, sour cream and sliced green onions

Steps:

  • In a large skillet, heat oil over medium-high heat. Add green pepper, onion and garlic; cook and stir until tender, 3-4 minutes. Transfer to a 6-qt. slow cooker., In same skillet, add beef, half at a time; cook over medium-high heat until no longer pink, 6-8 minutes, breaking into crumbles. Using a slotted spoon, transfer to slow cooker., Stir tomatoes, tomato sauce, chiles, parsley and seasonings into beef mixture. Cook, covered, on low 6-8 hours to allow flavors to blend. , Reserve 5 cups chili for Double-Duty Layered Enchilada Casserole. Serve remaining chili with rice and toppings as desired. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water or broth if necessary.

This is my variation of chili. I usually cook it with ground venison, though it tastes just as good with ground beef, and I am sure ground turkey would be fine as well. I use a 4.5 qt slow cooker.

1 lb ground beef or 1 lb venison
1 large onion, chopped
15 1/2 ounces light red kidney beans, drained
15 1/2 ounces dark red kidney beans, drained
2 teaspoons minced garlic
2 (14 1/2 ounce) cans diced tomatoes
2 (15 ounce) cans tomato sauce
3 teaspoons chili powder (or to taste)
1/4 teaspoon pepper
2 teaspoons cinnamon (optional)
1 teaspoon adobo seasoning (optional)
1 cup shredded cheese

Steps:

  • Cook and drain meat.
  • Add all ingredients except cheese to the crock pot.
  • Mix ingredients well
  • Cook on low heat for 6 hours.
  • When serving, top each bowl with shredded cheese.

14 1/2 ounces diced tomatoes
2 medium garlic cloves, minced
1 1/2 lbs ground beef or 1 1/2 lbs ground turkey, browned
2 (15 ounce) cans red kidney beans, rinsed and drained
1/4 cup chili powder
1/2 cup water
1 cup onion, chopped
2 teaspoons ground cumin

Steps:

  • COOK: beef in skillet over medium high heat until need is browned, stirring to separate meat. Pour off fat.
  • MIX: beef, soup, water, chili powder, cumin, garlic, onion, beans & tomatoes in 3.5 qt slow cooker.

No Bean Slow Cook Chili image

This is a great recipe to set up in the morning and eat when you get home from work. I made this intentionally because I do not like beans in my chili. You can also make it mild to hot depending on the kind and amount of chili powder and the addition of Louisiana Hot Sauce. I usually add a mixture of medium and hot chili powders. The chilies can be optional, but the morita chilies are required to give the chili a nice subtle smoky flavor.

1 (29 ounce) can tomato sauce
1 (28 ounce) can diced tomatoes
1 (15 1/4 ounce) can whole kernel corn
1 lb ground beef
1 medium diced yellow onion
chili powder (to taste)
1 pinch salt
2 diced fresh jalapenos (Can substitute for canned)
1 diced fresh green anaheim chili (For hotter chili substitute for a New Mexico chile)
3 morita dried chilies, ground
1/4 cup medium Pace Picante Sauce (optional)
4 dashes louisiana hot sauce (~1 tsp) (optional)

Steps:

  • Brown beef making sure to prevent large clumps of hamburger.
  • When hamburger is still pink add onion and salt to taste.
  • Drain beef and add to 4qrt crockpot.
  • Add tomato sauce.
  • Drain and add diced tomatoes and corn.
  • Add in chili powder to taste (I use mostly chili powder but add a couple dashes of hot chili powder.).
  • Add the rest of the ingredients; mix well.
  • Cook on low to medium for ~8hrs.
