- Cut roast in half. Mix onion powder, garlic powder and Creole seasoning; rub onto beef. Place in a 5-qt. slow cooker; add stock. - In a large dutch oven, or if you have an aluminum insert for your slow cooker add the canola oil and heat on high.
- Add the Kosher salt and pepper to your chuck roast.
- Brown on both sides aggressively (3-5 minutes on each side).
- Don't move the beef before flipping (this lets the meat get a deep crust).
- In a slow cooker add the meat, any meat juices from the pan, beef broth, Worcestershire sauce, beer and onions.

- Generously season each side of the roast with salt and pepper. In a large skillet add the olive oil and turn to medium high heat. Sear each side of the roast for 3-4 minutes until it gets a golden brown crust.
- Place the roast into the slow cooker. Add the beef consommé, beef broth, onion, soy sauce, And Worcestershire sauce.

- Special equipment: stoneware slow cooker
- Cook's Note: If you do not have a stoneware slow cooker that doubles as both a saute pan and Dutch oven, saute everything in a pan, then place into the slow cooker to cook.
- Sprinkle the beef with salt and pepper. Heat the oil in the sleeve to the slow cooker on the stove over medium-high heat. Add the beef and sear until brown on all sides. Add the onions, garlic, bay leaf, Worcestershire sauce, tomato paste, Thai hot sauce and broth. Place the sleeve in the slow cooker and turn the slow cooker to its lowest setting. - In a large glass measuring cup, combine the beef broth and worcestershire sauce and set aside.
- In a large cast iron skillet, dutch oven or in your Instant Pot in sauté mode, heat oil on medium-high heat, add the meat and sear on all sides until each side has a nice brown crust formed. Transfer meat into your slow cooker (if using) OR remove the meat from your Instant Pot and continue.

- Heat vegetable oil over medium high heat in a cast iron skillet. Using two forks or tongs to hold roast, sear on all sides until lightly browned. Add to slow cooker and top with all remaining Slow Cooker ingredients.

- Place roast in 4.5 - 6 quart slow cooker.
- Sprinkle with onion soup mix and then pour onion soup and beer over it.
- Drop bouillon cubes in different spots into the liquid and sprinkle pepper and salt to taste over all.
- Cook on high for 4-5 hours. (I guess you could also cook on low for 8 hours or so, but I haven't tried it!).
- Remove meat and slice or shred; return to slow cooker and cover.
- Turn to low and let meat soak up the juices until ready to serve.
- Our favorite way to serve: open rolls and place a slice of provolone on one side of each; place under broiler until cheese is almost melted. Spoon beef on top with slotted spoon and serve sandwich with a side cup of au jus.

- In a large bowl, or in your slow cooker, add your cold water and gravy packets and whisk it together so there are no lumps. Pour the sauce into your slow cooker if you did not mix in your slow cooker.**Ignore the packet instructions for adding water!!! Follow this recipe! There will be extra sauce/liquid after cooking, you can use this extra au jus for dipping!
- Add your roast beef to the slow cooker. Separate each slice of roast beef as you add it to the slow cooker so it will cook and heat evenly.**If you have a smaller slow cooker, it will look super full of meat. After adding all of the roast beef, press the meat in to the gravy mixture so it is mostly covered. The meat shrinks a bit and settles in the sauce as it cooks!
- Add your sliced onion to the meat and gravy/sauce if you are adding onions. If adding peppers add them as well.**If you are adding mushrooms, wait and add them to the slow cooker the last 5 minutes of cooking time.
- The meat just needs heated through and given time to soak up the savory flavor of the gravy and au jus. Cook the roast beef on low for 4-6 hours. (Mine never needs 6 hours and is always done after 4 hours or less). Or on high for 2-3 hours. Using tongs, gently stir the meat half way through cooking if you can. (Not super important but if you can, do it!)
- When you are ready to eat, set your oven to BROIL at 450°. Slice your rolls in half. Spread some butter on each half of the roll and top with your cheese ( I always use at least 2 slices). Let the rolls broil for a few minutes until the cheese is melted to your liking. Watch them closely so they don't burn!**This is optional. You do not have to broil your buns in the oven to melt the cheese! You can just slice your buns, add the cheese and top it with the roast beef!
- Once the cheese is melted, add the meat and onions (optional) to each sandwich. Get a small dish of the au jus sauce for dipping if desired!
- This French Dip can be stored in an airtight container in your fridge for about 3 days and can be reheated in your microwave!
FRENCH DIP SANDWICHES

- Make the onion spread: Heat the vegetable oil in a large skillet over medium-low heat. Add the onion and a pinch of salt; cover and cook, stirring, until golden, about 35 minutes. Add the shallots and scallion whites; cover and cook, stirring, until browned, about 25 more minutes. Stir in the scallion greens, then remove from the heat and let cool.

Place on a rack in a roasting pan; add 1 cup broth, 3/4 cup water, the celery, onion and parsley to the pan. Roast 10 minutes, then reduce the oven temperature to 350 degrees F and roast until a thermometer inserted into the center of the beef registers 115 degrees F, about 45 more minutes. Transfer to a cutting board; let rest 20 minutes. Strain the pan juices; reserve.
- Meanwhile, make the jus: Melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, 1 minute. Whisk in the reserved pan juices and the remaining 3 cups broth and bring to a boil, whisking. Remove the pan from the heat and stir in the sherry.
- Brush the rolls with some of the onion spread. Thinly slice the beef against the grain. Dunk the slices in the jus, then layer on the rolls. Serve the remaining jus in small bowls for dipping.

- Place a rack 5 inches from heat source; preheat broiler. Slice rolls in half, butter insides and place on a baking sheet. Toast until light golden, 30 seconds to 1 minute. Pile beef on bottom halves of rolls, cover with top halves and serve with sauce.
