SIMPLEST SLOW COOKER BLACK BEANS



Simplest Slow Cooker Black Beans image

Notes: Don't be afraid to make these ahead of time, as they continue to develop more flavor as the beans sit in their cooking liquid. Olive oil is something I always add to my slow-cooker cooked beans (see here). I think it adds flavor, especially once the beans finish cooking and are cooling in the flavorful cooking liquid. Feel free to omit if you wish. Pepper flakes: if you like a little bit of spice, add the the chili flakes; if you don't, omit or use less. 1 teaspoon will not make for especially spicy beans, but there will be a nice kick. To make these in the Instant Pot, into the Instant Pot add all of the ingredients listed below along with 6 cups of water. Start with 2 teaspoons kosher salt. Turn the valve to sealing. Set the IP to Manual, High Pressure, 30 minutes. Let it release naturally for at least 20 minutes. Uncover. Taste. Add more salt (I often add 1 to 2 more teaspoons of salt) to taste.

1 lb. dried black beans, no need to soak
1 half of a small onion, halved through the core to keep it intact, peeled
1 bay leaf
1 garlic clove, smashed and halved
2 to 4 teaspoons kosher salt, plus more to taste
1 teaspoon crushed red pepper flakes, optional
1/4 cup olive oil, optional

Steps:

  • Place the beans, onion half, bay leaf, garlic, 2 teaspoons kosher salt, pepper flakes (if using), and olive oil (if using) into a slow cooker. Cover with 8 cups of water. Cover pot. Cook on high heat for 6 to 8 hours or until the beans are done, but start checking at the 4-hour mark - all slow cookers are different and times might vary, too, depending on the age of your beans.
  • Taste. Add more salt to taste. I add 2 more teaspoons, but start with 1 or a 1/2 teaspoon and adjust from there. Note: When you first taste a bean, do not expect to be wowed. The beans develop more flavor as they cool in their cooking liquid, which will continue to season them. As noted above, I find they taste even better on day 2.
  • Store the beans in their cooking liquid. I love these deli quart containers for this purpose. I freeze the beans in their cooking liquid in these quart containers as well.

Quick and easy Dominican Black Beans Stew made with garlic, onions, bell pepper, cilantro and olives. The perfect dish to pour over rice!

1 tbsp vegetable oil
2 tbsps homemade sofrito
1/4 cup tomato sauce
1 tbsp olives,
1/4 tsp adobo
1/2 cube chicken or vegetable bouillon
1 tsp oregano
1/2 tsp ground black pepper
1 can (15 oz) black beans, (with its juice)
1 1/2 cup water
1 tsp freshly squeezed lemon juice
1 tbsp fresh cilantro, (roughly chopped)

Steps:

  • Heat oil in a medium pot over medium-high heat. Sautee the sofrito, tomato sauce, olives, adobo, bouillon, oregano and ground pepper for about 2 minutes.
  • Stir in black beans and water. Bring to a boil. Lower the heat to medium and let simmer for about 15-20 minutes or until beans are tender and liquid has reduced by half. Squeeze in lemon juice, add cilantro, and stir.
  • Serve warm over rice.

2 cups (500 mL) dried black beans, sorted and rinsed
6 cups (1½ L) water
2 dried Mexican avocado leaves
1 tbsp dried epazote
1 white onion, diced
1 yellow bell pepper, stems and seeds removed, and diced
1 Tbsp extra virgin coconut oil
4 garlic cloves, peeled and minced
1 Tbsp minced chipotles en adobo
1 Tbsp cumin seeds, toasted and ground
2 tsp sea salt
3 Tbsp sour orange juice (or 2 Tbsp orange juice + 1 Tbsp lime juice)
¼ cup (60 mL) fresh cilantro leaves

Steps:

  • In a slow cooker on high heat, add beans and water.
  • On a griddle on high heat, toast avocado leaves for a few seconds on each side, until aroma is released. Using fingers, crumble into bean pot, along with epazote.
  • In a large frying pan on medium heat, sauté onions and bell peppers in oil until soft, about 10 minutes. Add garlic, chipotle, and cumin and sauté for 1 minute. Transfer mixture to bean pot. Cook beans on high for 4-6 hours or low 6-9 hours, or until skins are soft and insides are creamy. Add salt and cook, uncovered, for 20 minutes. Before serving, stir in sour orange juice and garnish with cilantro leaves.

Steps:

  • Rinse and sort beans. Heat oil in a large skillet over medium-high. Add onion, bell, and if desired, bacon. Cook, stirring occasionally, until onions are tender, about 8 minutes.
  • Add garlic, and cook, stirring often, until fragrant, about 30 seconds.
  • Transfer onion mixture to a 6-quart slow cooker; add beans, jalapeno chile, chicken broth, salt, brown sugar, cumin, pepper, and chopped oregano.
  • Cover and cook on LOW until beans are tender, about 6 hours.

28 -30 ounces canned pinto beans, drained and rinsed
4 cups water
2 ounces fresh cilantro
1 large onion, chopped
2 large garlic cloves, chopped
2 tablespoons olive oil
3 tablespoons tomato paste
1 tablespoon distilled white vinegar
1 sweet pepper (italian frying pepper-halved lengthwise, stem and seeds discarded)
2 bay leaves
1 teaspoon salt
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon black pepper

Steps:

  • Puree half of beans in a food processor or blender with 1 cup water until smooth.
  • Tie cilantro into a tight bundle with string.
  • Cook onion and garlic in olive oil in a 5-6 quart pot over moderate heat, stirring occasionally, until onion is softened but not browned, about 8 minutes.
  • Add tomato paste, vinegar, and 1 cup water, then bring to a boil and cook, stirring, 2 minutes.
  • Add pureed and whole beans, Italian frying pepper halves, cilantro, bay leaves, salt, oregano, pepper and remaining 2 cups water, then simmer, uncovered, stirring occasionally, 1 1/2 hours (mixture will reduce and thicken).
  • Remove and discard Italian pepper halves, cilantro, and bay leaves, then serve.

1 (8 ounce) can unsweetened crushed canned pineapple

1 tablespoon lime juice
1 tablespoon fresh ginger, grated

3 onions, chopped
1 green pepper, chopped
4 cloves garlic, minced
1 ham hocks or 3/4 cup cubed ham
1 tablespoon oil
1 tablespoon ground cumin
2 teaspoons dried oregano
1 teaspoon dried thyme
1 tablespoon salt
1/2 teaspoon pepper
3 cups water
2 tablespoons vinegar
sour cream
fresh cilantro, chopped

Steps:

  • Soak beans overnight in 4 quarts water.
  • Drain.
  • Combine beans, onion, green pepper, garlic, ham, oil, cumin, oregano, thyme, salt, pepper, and 3 cups of fresh water.
  • Stir Cover and cook on low for 8-10 hours or on high 4-5 hours.
  • For thick soup, remove half of cooked bean mixture and puree until smooth in blender or mash with a potato masher.
  • Return to cooker.
  • If you like it souper, leave it as is.
  • Add vinegar and stir well.
  • Debone the ham hock if you used one and cut into bite sized pieces, and return to the soup Serve in soup bowls with a dollop of sour cream in the middle of each serving, topped with fresh cilantro.

Steps:

  • Rinse beans well in a colander, then spread out on a baking sheet and sort out any rocks or bad looking beans.
  • Place the beans in a slow cooker, and the garlic clove, and cover with hot water. Do not salt the beans at this point or the skins will get tough.
