SLOW COOKER CREAMY POTATO SOUP
This is a very rich and creamy soup. A great family favorite. It may be cooked on the stove or in a slow cooker. Garnish with chives, if desired.

Steps:
- Place bacon and onion in a large, deep skillet. Cook over medium-high heat until bacon is evenly brown and onions are soft. Drain off excess grease.
- Transfer the bacon and onion to a slow cooker, and stir in chicken broth, water, potatoes, salt, dill weed, and white pepper. Cover, and cook on Low 6 to 7 hours, stirring occasionally.
- In a small bowl, whisk together the flour and half-and-half. Stir into the soup along with the evaporated milk. Cover, and cook another 30 minutes before serving.

- Place the potatoes, onion, butter, chicken bouillon cubes, parsley and water into a slow cooker. Set on low and let cook for 6 to 8 hours.
- At least half an hour before serving, stir together the milk and flour until no lumps remain, and mix into the soup. Cook for 30 minutes or until the soup is thickened.

- Place potatoes, celery, onion, chicken stock, and parsley into a slow cooker. Season with salt and black pepper. Set cooker on High, cover, and simmer until vegetables are tender, about 2 hours.
- Whisk flour with milk in a bowl until smooth. Pour into slow cooker and stir until thickened. Cook on High for 2 more hours.
- Mash potatoes in the slow cooker to your desired thickness and consistency; stir in cream cheese and cooked ham. Simmer soup until cream cheese has melted, soup is thick and creamy, and ham is heated through, 30 minutes to 1 hour.

CREAMY SLOW COOKER POTATO CHEESE SOUP
Soup for a crowd made in my 6 1/2 quart slow cooker. Hearty and flavorful. Serve with corn bread or your favorite crusty bread and a salad or other vegetable. For a 3 quart slow cooker, halve all ingredient amounts.

- Melt butter in a large saucepan over medium heat. Cook onion in butter until translucent. Stir in flour until smooth, then gradually stir in 2 cups water, carrots, celery, garlic, salt, and pepper. Heat through, then stir in milk. Dissolve chicken base in 1 cup warm water, and pour into vegetable mixture.
- Place potatoes in slow cooker, and pour heated vegetable mixture into potatoes. Place bay leaf in pot.
- Cover, and cook 5 hours on High, or 8 hours on Low.
- Remove bay leaf. Puree about 4 cups of the soup in a blender or food processor, and then stir pureed soup into contents of slow cooker. Stir in cheese and bacon until cheese is melted.

- In a large slow cooker, combine all ingredients except for the cream cheese and flour.
- Cook on low for 8 hours or until potatoes are done.
- About an hour before you serve the soup, add the cream cheese, stirring well until melted.
- After cream cheese is melted, take out about 2 cups of the soup broth and pour into a medium bowl; add the flour and whisk until smooth and no lumps remain.
- Pour the 2 cups of soup broth back into the crock pot and stir to combine.
- Replace lid and cook for about 30 minutes more.

- Combine potatoes, chicken stock, onion, salt, and pepper in a slow cooker. Cook on High until potatoes are tender, about 4 hours.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and wipe out most of the grease from the skillet.
- Puree potatoes in the slow cooker with an immersion blender until smooth. Add 1/2 cup Cheddar cheese and 1/2 of the cooked bacon, set temperature to Low, and cook for 1 to 2 hours.
- Melt butter in the skillet over medium-low heat. Whisk in flour and stir until the mixture becomes paste-like and light golden brown, about 5 minutes. Add heavy cream and sour cream and whisk until thickened. Pour into the slow cooker and cook on Low for 1 more hour.
- Ladle into bowls and garnish with remaining bacon, remaining Cheddar, sour cream, and scallions.

I made this with coconut milk and a little butter instead of the almond beverage. I also added a lot more jalapenos and some creamed corn to go with the canned corn and cooked this on the stove instead of the slow cooker. Good stuff.

- Place the yellow potatoes, corn, jalapenos, salt, cumin, oregano, ground coriander, and stock in a large slow cooker.
- Cook on low for 6-8 hours or on high for 4 hours.
- Prior to serving scoop out 6 cups of potatoes and place in a large bowl. Add the Almond Breeze and mash potatoes until almost smooth but still a bit chunky.
- Return to the pot along with the lime juice.
- Taste and add salt and extra stock if needed.

- Add warm milk 30 minutes before serving. Cold milk will stop the cooking process and delay meal. Do not add sooner because the milk may curdle.
- To thicken soup, add instant potato flakes to taste. You may use potato pearls but you will have to stir the soup a lot more to get the pearls to desolve.
