10 baby red potatoes, quartered
1 onion, peeled and cut into bite-sized pieces

1 (4 pound) corned beef brisket with spice packet

Steps:

  • Place the carrots, potatoes, and onion into the bottom of a slow cooker, pour in the water, and place the brisket on top of the vegetables. Pour the beer over the brisket. Sprinkle on the spices from the packet, cover, and set the cooker on High.
  • Cook the brisket for about 8 hours. An hour before serving, stir in the cabbage and cook for 1 more hour.

1 medium onion, cut into 8 wedges
1 (2 -2 1/2 lb) corned beef brisket, with seasonings packet
2 cups apple juice
water
8 pieces cabbage, thin wedges
1 tablespoon horseradish (more or less to taste)
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons prepared mustard
2 teaspoons Dijon mustard

Steps:

  • Place potatoes, carrots and onion in 5 to 6-1/2 quart slow cooker. Top with corned beef brisket; sprinkle with contents of seasoning packet. Add apple juice and enough water to just cover brisket.
  • Cover; cook on Low setting 10 to 12 hours.
  • About 40 minutes before serving, remove beef from slow cooker; place on serving platter and cover to keep warm.
  • Add cabbage wedges to vegetables and broth in slow cooker. Increase heat setting to High; cover and cook 30 to 35 minutes longer or until cabbage is crisp-tender.
  • Meanwhile, in small bowl, combine all horseradish sauce ingredients; mix well.
  • To serve, cut corned beef across grain into thin slices. With slotted spoon, remove vegetables from slow cooker.
  • Serve corned beef and vegetables with sauce.

12 ounces stout beer
2 tablespoons pickling spice

Steps:

  • Layer the potatoes, carrots, onions, celery and thyme in the insert of a 6-quart slow cooker. Put the brisket on top of the vegetables and add the beer and pickling spice. Add enough water to just cover the brisket. Cover and cook on low until the meat and vegetables are tender, about 8 hours.
  • Arrange the cabbage over the brisket (it's OK if the cooker seems crowded), cover and cook until soft and wilted, 45 minutes to 1 hour more.
  • Whisk together the sour cream, horseradish and mustard in a small bowl.
  • Remove the cabbage and toss with 1 tablespoon of the butter and pepper to taste in a large bowl. Remove the meat and let rest. 2 tablespoons real maple syrup
1 teaspoon Instacure #1 (optional)
1 teaspoon yellow mustard seeds
1/2 teaspoon Tellicherry black peppercorns
1 teaspoon caraway seeds
1/2 teaspoon allspice berries
4 bay leaves
Kosher salt
1 quart ice cubes
4 pounds beef brisket (fatty or lean, up to you)
1 tablespoon olive oil
2 medium yellow onions, halved
2 tablespoons brown miso paste
4 garlic cloves
2 tablespoons unsalted butter
1 head Savoy cabbage, sliced into thin ribbons (about 3 cups)
Dill Potatoes, to serve
2 tablespoons chopped fresh dill
1/4 cup Pickled Mustard Seeds, for garnish

6-quart (or larger) slow cooker

Steps:

  • Pour 1 1/2 quarts of cold water and the apple juice into a large pot and bring to a boil. Add the maple syrup, Instacure, mustard seeds, peppercorns, 1/2 teaspoon of the caraway seeds, the allspice berries, bay leaves, and 1/2 cup salt. Cook for 3 minutes at a rapid boil; then remove from the heat. Add the ice and wait for the brine to cool to room temperature.
  • Place the brisket in a large container and cover it fully with the brine. (If you have an extra-large sealable plastic bag, those work really well, keeping the meat fully immersed in the brine.) Cover with a lid or plastic wrap and store in the refrigerator for 1 week.
  • After that week, remove the brisket from the brine and strain the brine, saving the spices and bay leaves and discarding the liquid. Set the brisket aside on a plate.
  • Preheat a large slow cooker on the low setting for at least 20 minutes.
  • In large skillet, warm the olive oil over medium-high heat. When the oil begins to shimmer, add the onions and cook for 15 minutes, turning them once in a while, until they are well browned and a touch charred.
  • Place the brisket in the slow cooker and add the charred onions, miso, garlic, 1 tablespoon of the butter, and the strained spices and bay leaves. Add enough room-temperature water to cover the brisket by 2 inches. Cover with the lid and cook on the low setting for 8 to 10 hours, until the brisket is really tender-a paring knife should plunge into the meat with little resistance. Skim off any fat that has risen to the surface.
  • Place a large skillet over medium-high heat and add the remaining 1 tablespoon butter. When it begins to bubble and froth, add the cabbage, remaining 1/2 teaspoon caraway seeds, and 1/2 teaspoon salt. Stir to combine; then let the cabbage char for 2 minutes to develop some color. Toss the cabbage and cook for another 2 minutes. Then transfer it to a large platter.
  • Remove the brisket from the slow cooker, taking care to keep it in one piece. Place it on top of the cabbage on the platter, let it rest for 5 minutes, and then slice it into 1/2-inch-thick slabs, against the grain. It will be very tender, and it may fall apart. That's okay. We want that. Add the potatoes to the platter. Garnish with the fresh dill and the Pickled Mustard Seeds.

Get a corned beef made from flat-cut brisket, if you can, as it will be easier to slice into neat, uniform slabs. (The point cut has more striations of fat and may fall apart when sliced.) Corned beef is often braised in beer, and you could certainly do that, but a slightly sweet wine, like a semi-dry Riesling, balances the beef's saltiness. Finish with a simple honey-mustard glaze and a quick trip under the broiler. Serve this satisfying one-pot meal with mustard and enjoy with beer. 1 1/4 cups semi-dry white wine, such as Riesling
1 pound red or Yukon gold potatoes, cut into 1- to 2-inch pieces
2 to 3 large carrots (about 1/2 pound), peeled and cut into 1- to 2-inch pieces

Steps:

  • Remove the corned beef from its packaging in the sink and reserve the spice packet. Rinse the beef well under cold running water and pat it dry with paper towels. (If you don't rinse off the brine, the meat will be too salty.) If there is a substantial fat cap on top of the beef, place the beef on a cutting board and trim most of it, if you'd like. (The fat will not completely render away during cooking.) Be sure to leave at least a thin layer of fat on top, about 1/8- to 1/4-inch thick, to keep the meat moist.
  • Transfer the corned beef into a 6- to 8-quart slow cooker with the fat cap facing up. Add the wine and the spices from the packet. Cook on high for 4 hours.
  • Reduce the heat to low. Baste the beef with the cooking liquid. Drop the potatoes and carrots into the liquid surrounding the beef. Lay the cabbage wedges on top. Cook on low for 4 hours, or until the vegetables and beef are tender. (A paring knife should slip easily into the beef, though the meat shouldn't be falling apart.)
  • Heat the broiler to high. Stir together the mustard and honey in a small bowl. Using tongs, remove the corned beef from the slow cooker and put it on a foil-lined sheet pan. Spread the honey-mustard all over the top and sides of the beef and place it under the broiler. Cook until the glaze bubbles and caramelizes in spots, about 3 minutes.
  • Let the corned beef rest for 5 to 10 minutes then slice it against the grain into 1/2-inch slabs. Place the beef slices on the serving platter alongside the vegetables and drizzle everything with a little bit of the cooking liquid. 1 Corned Beef Brisket (2-1/2 pounds)
5 cups water, divided
1 medium head cabbage (about 2 pounds), cut into wedges
8 ounces Yukon Gold potatoes, cut into 8 wedges
8 ounces carrots, cut into 1-inch pieces
2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°F. Place Corned Beef Brisket and 3 cups water in large stockpot or Dutch oven, fat-side up. Bring to a simmer. Do not boil. Cover tightly and cook in 350°F oven 2-1/2 to 3 hours or until fork-tender.
  • Transfer brisket to cutting board, reserving any liquid in stockpot; cover brisket with aluminum foil. Let stand 15 to 20 minutes.

  • Remove fat from brisket, if desired. Carve brisket into thin slices across the grain. Combine butter, salt and pepper in small bowl. Drizzle over vegetables. Serve brisket with vegetables.
  • Recipe can be made in a 6-quart electric pressure cooker. Place Corned Beef Brisket and 1/2 cup water in pressure cooker. If seasoning packet is included with corned beef brisket, pour it over the beef brisket after water is added. Close and lock pressure cooker lid. Use beef, stew or high-pressure setting on pressure cooker; program 70 minutes on pressure cooker timer. Use quick-release feature to release pressure; carefully remove lid. Remove beef; keep warm. Add potatoes, carrots and cabbage to pressure cooker. Close and lock pressure cooker lid. Use beef, stew or high-pressure setting on pressure cooker; program 3 minutes on pressure cooker timer. 2 lbs. red or gold potatoes ((or a mixture of both!) Peel them if you'd like! )
3 carrots (sliced thick)
2 garlic cloves (peeled)
1/2 head cabbage (cut into thin wedges)
1 1/2 cup water ((or see notes below for other liquid ideas))
parsley for garnish
melted butter for potatoes if desired
horseradish or stone-ground mustard

Steps:

  • Add the sliced onion to the slow cooker.
  • Add the corned beef to your slow cooker. Sprinkle over the included seasoning packet.
  • Add your baby potatoes on top of the roast. If your potatoes are larger you can halve them to ensure they get tender. Add the carrots and garlic.
  • Pour over the water. Add cabbage now if you want ultra-tender cabbage. Otherwise wait to add it until the last 2 hours.

  • In a 6 quart crock-pot add the onion, potatoes, and carrot. Nestle in the corned beef w/ pickling spice - fat side up. Pour the chicken broth over the top. If the broth does not cover the brisket, add enough water to come ~ 1/2 way up the beef.
  • Cook on low for 7-9 hours or until tender. When the beef is tender, add the cabbage to the crockpot and cook for an additional hour. Sometimes there is not enough room for the cabbage to fit in the crockpot and it can get crazy frustrating trying to shove it all in. If this is the case, bring a large pot of water to a boil, throw in the cabbage, and cook for ~ 7-9 minutes or until desired doneness. Strain and set aside.
  • Remove the brisket, let cool, and slice across the grain. Throw the cooked cabbage in the crockpot with the rest of the ingredients and then strain a big cup full or two of veggies on your plate and add the sliced corned beef.
