8-12 boneless, skinless chicken thighs, each cut into 3 chunks
2 tbsp veg or rapeseed oil
1 large onion, chopped
2 garlic cloves, crushed
thumb-sized piece ginger, finely grated or chopped
3 tbsp tikka curry paste
500ml passata
1 tbsp tomato purée
1 tbsp malt vinegar
1 tbsp light brown soft sugar
1 cinnamon stick
5 cardamom pods
100ml double cream
handful chopped coriander
cooked basmati rice, lime wedges and naan bread, to serve (optional)

Steps:

  • Heat the slow cooker. Season the chicken, then put the oil in a wide frying pan and, once hot, add the chicken. Don't overcrowd the pan - you may want to do this in batches. Cook over a high heat until the chicken is browned, then transfer it to the slow cooker. Add the onion, garlic and ginger to the pan and cook for a few mins until softened. Add a splash of water and scrape any bits from the bottom of the pan, then tip everything into the slow cooker.
  • Add the remaining ingredients, except the cream and coriander, then season well and cover with a lid. Cook on low for 5-7 hrs or on high for 4-5 hrs.
  • Add the cream and check the seasoning, adding more vinegar, sugar or salt if needed. Cook for another 10-15 mins until hot. Ladle between bowls and garnish with the coriander. Serve with rice, naan bread and lime wedges, if you like.

2 lbs boneless, skinless chicken thighs
1/2 tsp kosher salt
1/4 tsp black pepper
3 Tbsp vegetable oil
1 medium yellow onion (minced)
1 serrano pepper (seeded and minced)
2 Tbsp tomato paste
1 Tbsp garam masala
1/2 tsp smoked paprika
1/2 tsp ground tumeric
1/4 tsp ground cumin
1 - 2 tsp granulated sugar
1 Tbsp fresh ginger (grated)
3 cloves garlic (minced)
15 oz can tomato sauce
3/4 cup whole-fat plain yogurt ((not greek))
2 Tbsp fresh cilantro (minced)

Steps:

  • Heat oil in a large skillet over MED HIGH heat. Season chicken thighs with salt and pepper, then add to the skillet once hot. Sear chicken 2-3 minutes per side, until very browned. Remove to a cutting board and slice into 1 inch pieces.
  • Add onion, serrano, tomato paste, garam masala, tumeric, smoked paprika, cumin and sugar to same skillet over MED HIGH heat. Cook 3-4 minutes, until onion is soft and slightly browned at the edges.
  • Stir in garlic and ginger and cook another 30 seconds or so. Add 1/4 cup of water or chicken broth to scrape up any browned bits in the skillet.
  • Transfer skillet contents to bottom of slow cooker. Top with diced chicken and tomato sauce, stirring well to combine.

  • After 3 hours, remove 1/2 cup of sauce from the slow cooker and slowly pour it into the yogurt, while whisking quickly. This tempers the yogurt so it doesn't curdle.

Slow Cooker Chicken Tikka Masala has super tender chunks of chicken in a creamy tomato sauce, seasoned with Indian spices. Recipe gently adapted from Foodie with Family

9 boneless, skinless chicken thighs (about 3 pounds)
1 teaspoon kosher salt
1 tablespoon ground coriander
1 tablespoon ground cumin
1 cup plain yogurt
2-4 tablespoons butter (to be used for browning the chicken)
4 tablespoons butter
1 large yellow onion, diced (about 1 3/4 cups)
6 cloves garlic, minced
1 tablespoon kosher salt
3 tablespoons garam masala
1 large piece of ginger (2-3 inches in size), peeled and grated
4 cups crushed canned tomatoes
1 tablespoon sugar
1 whole jalapeno, washed, stem removed and pierced several times with a sharp knife
2 teaspoons cornstarch
1 1/2 cups heavy cream
Buttered basmati rice with peas
Chopped cilantro (for garnish)
Naan bread (serve warm)

Steps:

  • Cut the chicken thighs into 1 to 1 ½ inch pieces. Place in a bowl with the 1 teaspoon salt, coriander, cumin and yogurt. Stir until all of the chicken pieces are coated. Cover and let sit for about 10-15 minutes at room temperature.
  • In a large skillet over medium high heat, brown the chicken pieces in batches - using about a tablespoon of butter per batch. Transfer the browned chicken to the slow cooker as each batch is finished.
  • Once all of the chicken is cooked, using the same skillet, prepare the sauce by melting the 4 tablespoons of butter over medium high heat. Add the onions, garlic and 1 tablespoon of salt and cook, stirring frequently until the onions are lightly brown around the edges.
  • Stir in the garam masala and ginger, and cook for about 1 one minute.
  • Raise the heat to high and add in the crush tomatoes and sugar. Stir frequently, scraping the browned, caramelized bits from the bottom of the pan. When the tomato mixture comes to a boil, remove from heat and pour into the slow cooker. Add the pierced jalapeno pepper.
  • Put the lid on the slow cooker and cook on low heat for 5 hours, or until the chicken is tender.
  • Whisk the cornstarch into the heavy cream and stir until smooth. Add the heavy cream mixture to the slow cooker and stir to blend. Replace the lid and cook for another 10 minutes or until the sauce is bubbling around the edges.
  • Serve the Chicken Tikka Masala over hot buttered rice and peas. Garnish with chopped cilantro (optional but recommended) and warm naan bread.

28oz Canned Peeled Whole Tomatoes
2 Tablespoons Tomato Paste
½ White Onion
2 Cloves Garlic
1 Teaspoon Ginger paste
2 Tablespoons Garam Masala
1 Teaspoon Cayenne Pepper
1 Teaspoon Turmeric
2 Teaspoons Paprika
1 Teaspoon Cumin
½ Teaspoon Ground Coriander
1 Tablespoon Salt
1 Tablespoon Light Brown Sugar
1 Cup Light Coconut Milk
½ Cup Fat Free Greek Yogurt
Cilantro, For Garnish

Steps:

  • In a food processor (or blender), add onion, garlic, and ginger. Pulse until well combined.
  • In a small skillet, sauce onion mixture for 5 minutes.
  • Add tomato paste garam masala, cayenne pepper, turmeric, paprika, cumin, coriander, salt and sauté for 2 minutes.
  • Add mixture from skillet to a crock pot along with chicken breast, canned tomatoes, and brown sugar.
  • Cover with lid and let cook for 4 hours on high or 8 hours on low.
  • Gently remove chicken breast onto a cutting board to rest.
  • Add in coconut milk and Greek yogurt to crock pot and mix well.
  • Shred chicken breast and add back to crock pot. Mix well.
  • Serve over brown rice and garnish with cilantro.
