TRADITIONAL MEAT PIE

- Preheat the oven to 400 degrees F.
- Pie Crust: Mix flour and shortening. Add salt and cold water. Add all the cold water at once and mix delicately. Form a ball and refrigerate for 2 hours.
- Once dough is chilled, flour your worktop. Divide dough in half. Roll out 2 pie crusts. One should be slightly larger than the other, this will be your bottom crust.
- Meat Filling: Heat the oil in a large pot. Add the pork and onion and cook over medium-low heat for 45 minutes, stirring often. When pork is cooked remove fat from pan. Add grated potato, salt, pepper, and allspice, to taste. Stir well, and let mixture rest for 20 minutes.
- Preheat the oven to 400 degrees F. Butter the bottom of 9-inch pie plate. Place the bottom crust in the pie plate and poke several holes in the crust with a fork. Make sure an ample amount of crust spills over the edges of the pie plate. Fill the crust with the meat mixture. Level with a spatula. Wet edges of bottom crust and place top crust over meat mixture. Press top crust onto meat mixture to eliminate any air holes. Beat together the egg and the milk to make an egg wash. Pinch the crust edges together and brush the top crust with the egg wash.
- Bake for 10 minutes. Reduce heat to 350 degrees F and continue baking for 15 minutes or until crust is golden brown.
- Slice and serve hot or cold.
LAHMACUN (TURKISH SPICED LAMB PITA)
This traditional Turkish dish dates back to before the Ottoman Empire and is a variation of a traditional Arabic dish, lahm bi'ajin (meat with dough). Another variation that might be more known internationally is the Gyro from Greece.

Steps:
- Heat the olive oil in a large skillet, add the onions and cook until they are soft. Add the spices and ground lamb, cook until the meat is evenly browned, breaking it up as it cooks.
- Stir in the tomato paste, salt and parsley, cook for another minute. Set aside to cool. Can be made ahead.
- When ready to cook, heat a griddle or large cast iron pan very hot. To four pitas, divide lamb mixture and top each pita with mixture, leaving a 1/2-inch border around the edge. One at a time, place on grill and heat for 5 minutes. Remove to plate.
- Put 1/4 of the parsley, onions and tomatoes on the pita. Squeeze a lemon wedge over the top. Roll the pita up like a crepe. Wrap it in parchment to make it easier to eat or spear it with a toothpick to keep it closed.

ARMENIAN PIZZA - LAHMAJOUN
This is an individual size 'pizza' made with a ground meat mixture. After baking you can roll it up and eat it plain, or with a squeeze of lemon. I love it with melted grated jack and chedder cheese,lettuce and tomato taco style! They are delicious! Also, when cool, stack with wax paper in between, bag and freeze. Heat in microwave. Normally my family doubles this recipe and we have a marathon with my Dad manning the oven and my Mom and I preparing the pizzas. The kids love to grab one or two out of the freezer after school. Feel free to adjust seasonings to taste and definitely use the tortillas rather than pita bread!

- Mix all ingredients except tortillas together in a large bowl.
- Adjust seasonings to taste.
- Spread meat mixture thinly on each tortilla.
- Bake on large cookie sheets at 375 degrees for 15 minutes.
SPICED MEAT PIES (LAHMEJUN)
Steps:
- 1. To make dough: Combine yeast and 2 tablespoons warm water and set aside for 5 minutes. Combine flour and salt in a large bowl; add oil, yeast mixture and a scant 1/2 cup warm water. Mix, using hands if necessary, until dough comes together: it should be elastic but not sticky. If needed, add a little more flour or water. Turn out onto a board (no need to flour it) and knead until soft and smooth, about 10 minutes. Transfer to a bowl, cover and let rise in a warm place 1 hour. 2. When dough has risen, combine all ingredients for topping in a bowl. Divide dough in two and roll out on a floured surface to about 1/8-inch thickness. Cut 3-inch rounds with a water glass or cookie cutter, stacking them between layers of wax paper. Roll and cut remaining dough. 3. Preheat oven to 400 degrees. Spread a heaping tablespoon of meat mixture on each dough round, spreading all the way to the edge: meat mixture will shrink during baking. (Once assembled, pies can be frozen, stacked in wax paper, and then baked directly from freezer.) Arrange pies on 2 lightly oiled baking sheets. Bake 20 minutes, rotating pans halfway through baking. Serve hot, sprinkled with lemon juice and coarse salt. *Note: Refrigerated pizza dough or dough from a pizzeria will work well in this recipe. Some Middle Eastern markets also stock frozen mini pastry rounds.
