8 cups torn mixed salad greens
2 packages (6 ounces each) ready-to-use grilled chicken breast strips
1/3 cup chopped pecans, toasted
2 tablespoons crumbled blue cheese
2 tablespoons dried cherries
VINAIGRETTE:
2 tablespoons balsamic vinegar
1-1/2 teaspoons Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
6 tablespoons olive oil

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, whisk the first six vinaigrette ingredients; gradually whisk in oil until blended. Pour over salad; toss to coat.

This is with cherry preserves, from Penzey's Spices. They had it in their recipes for 4th of July. Even my picky DH, who doesn't like fruit in his main dish, likes this. Prep. time includes marinating time.

1/2 cup light soy sauce
1 (10 ounce) jar cherry preserves
3 garlic cloves, minced
1/4 cup dijon-style mustard
1 teaspoon hot pepper sauce (to taste)
4 -5 lbs chicken parts, rinsed and patted dry
green onion, sliced lengthwise

Steps:

  • In small saucepan, mix soy sauce, preserves, garlic and mustard.
  • Stir over med heat just until preserves are melted and mix is well blended.
  • Season to taste with hot pepper sauce. Cool.
  • Arrange chicken in single layer in baking dish just large enough to hold pieces.
  • Pour sauce over all and turn to coat evenly.
  • Cover and refrigerate at least 2 hours or up to 1 day.
  • Lift chicken from marinade, collecting remaining marinade in small bowl.
  • Grill chicken over med coals until done, about 25 min, turning frequently and basting with additional marinade.
  • Garnish with green onions.

In our house, this light and tasty salad is a real summer favorite! I usually serve it with sliced tomatoes and bread and butter. It can also be used to make wonderful chicken salad sandwiches - perfect in hot weather.

6 cups cubed cooked chicken
1 cup chopped celery
1 cup mayonnaise
1 cup sour cream
2 tablespoons lemon juice
1/4 teaspoon salt
1/2 cup crumbled cooked bacon
1 cup pecan halves, toasted
Lettuce leaves
Tomato wedges

Steps:

  • In a bowl, combine chicken and celery. In another bowl, combine mayonnaise, sour cream, lemon juice and salt. Pour dressing over chicken; toss well to coat. Refrigerate. Just before serving, toss with bacon and pecans. Serve on lettuce with tomato garnish.

2 or 3 c stewed, roasted or canned chicken use how ever much you want in your chicken salad 2 or 3 cups
2 stalk(s) celery 2 stalks of celery
1 c chopped pecans 1 c. of chopped
1 can(s) sliced water chestnuts chopped 1 sm. can of sliced water chestnuts chopped
1 c . raisins
1/20oz. can(s) pineapple tidbits drained
1/4 to 1/2 c sugar
1 c light mayonnaise more if needed
alfalfa sprouts if desired for sandwich
makes 3 loaves, each 9 inches
1-1/3 pkg (1 tablespoon plus 1 teaspoon) active dry yeast
3 c lukewarm water
1 Tbsp honey
5 c all-purpose flour, plus extra for dusting
3 c rye flour
1-1/2 Tbsp salt
1 tsp chopped fresh rosemary or thyme leaves, or 1/2 teaspoon dried
3-1/2 oz unsalted butter, softened, plus extra for greasing
1-1/2 c chopped pecans
1-1/2 c fresh cherries cut in half or quartered

Steps:

  • 1. CHICKEN SALAD Make sure everything is cut into bite size. Mix well and chill for 2hrs. Cut you bread in thin slices and toast the bread lightly, add a small amount Alfalfa of sprouts to your bread and then add your chicken salad and another small amount of Alfalfa sprouts to the top of your salad and then add another slice of bread. Cut in half and lay on a plate This is one of the best sandwich's I have ever had.
  • 2. PECAN CHERRY BREAD Dissolve the yeast in 1/2 cup of lukewarm water. Put the remaining water, the honey, both flours, the salt, the rosemary or thyme, and the butter in a mixer fitted with a dough hook. Mix for about 5 minutes. Add the dissolved yeast and continue to knead in the mixer for about 10 minutes, until the dough looks smooth and elastic and comes away from the sides of the bowl and comes together into a ball. Add the pecans and walnuts and continue to knead briefly just until the nuts look fully incorporated. Remove the bowl from the mixer and take out the dough hook, scraping any pieces of dough back into the bowl. Cover the bowl with a clean, damp kitchen towel and leave at warm room temperature until the dough approximately doubles in volume, about 45 minutes. Turn out the dough onto a lightly floured work surface. With clean hands, knead the dough briefly, pushing it down and away, then folding it back on itself and giving it a quarter turn, just until it deflates and any air pockets have been removed. Butter and flour three 9-by-5-inch loaf pans. With a sharp knife, carefully cut the dough into 3 equal pieces and shape each into a cylinder 9 inches long. Place the cylinders in the prepared pans. Put the pans on a tray, cover with a clean, damp kitchen towel, and leave to rise at warm room temperature until the dough as at least doubled in volume, about 1 hour. About 20 minutes before the loaves are done rising, position the oven rack in the middle of the oven and preheat the oven to 375 degrees F. Bake the loaves until they look nicely browned, about 20 minutes. Then, reduce the temperature to 325 degrees F. and continue baking about 25 minutes longer, until the loaves are a deep brown color and a loaf carefully tipped out of its pan sounds hollow when tapped on its bottom. Remove all 3 loaves from the pan and transfer to wire racks to cool. To serve, use a serrated bread knife to cut into slices 1/3 to 1/2 inch thick and toast as desired.

2 tablespoons hot red pepper sauce
½ cup margarine, melted
⅔ cup brown sugar
1 teaspoon Worcestershire sauce
1 tablespoon lemon juice
1 pinch salt
1 pound coarsely chopped pecans
6 skinless, boneless chicken breast halves
1 tablespoon olive oil
1 tablespoon Greek seasoning
1 pound romaine lettuce, torn
1 cup cherry tomato halves
½ cup fresh strawberries
½ cup seedless grapes
¼ cup fresh raspberries
¼ cup fresh blueberries
½ cup honey mustard salad dressing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix the hot red pepper sauce, margarine, brown sugar, Worcestershire sauce, lemon juice, and salt. Mix pecans into the bowl, tossing to coat evenly. Spread pecans in a single layer on a baking sheet. Bake 10 minutes in the preheated oven, stirring often and watching carefully, until lightly browned. Remove from heat, and set aside.
  • Rub chicken with the olive oil, place on a baking sheet, and sprinkle with Greek seasoning. Bake 20 minutes or until juices run clear. Slice into strips.
  • In a salad bowl, toss together romaine lettuce, chicken strips, cherry tomato halves, strawberries, grapes, raspberries, and blueberries. Sprinkle with pecans, and drizzle with dressing.

The cherries can be ordered on-line these days, which makes it much easier for those of us living where cherries are not readily available. Regular milk can be substituted for buttermilk, if necessary.

1 1/2 cups cooked or canned chick peas (garbanzos), drained
1 large clove garlic
1/3 cup rice vinegar
2 tablespoons soy sauce
1/4 cup sesame oil
1/4 cup vegetable oil
1 1/2 pounds boneless skinless chicken breasts
3 cups chicken stock, homemade or canned
1 7-ounce package Konriko Wild Pecan rice
3 ounces (1 cup) pecan halves, toasted and coarsely chopped
1 1/2 cups thinly sliced scallions, including green part
12 cherry tomatoes, cut in half
1 large, ripe avocado
Freshly ground black pepper to taste

Steps:

  • To prepare the vinaigrette, place the chick peas, garlic, vinegar and soy sauce in the bowl of a food processor fitted with a steel chopping blade and process into a smooth puree, scraping down the workbowl as necessary.
  • With the motor running, pour the sesame and vegetable oils through the feed tube in a slow, steady stream. The vinaigrette will be creamy and thick. Scrape into a screw-top glass jar and refrigerate until needed.
  • For the salad, poach the chicken breasts in the stock until just cooked. Remove from the stock, let cool and cut into three-quarter-inch cubes.
  • Cook the rice according to package directions, making sure all the water has evaporated. Set aside to cool.
  • In a large bowl, combine the rice, chicken cubes, chopped pecans and scallions. Add the cherry tomatoes. Peel the avocado and cut it into three-quarter-inch cubes, adding it to the salad. Pour on the vinaigrette and toss to blend. Add freshly ground black pepper to taste. Serve on Boston lettuce leaves, if desired.
