Creamy Ham, Peas, and Pasta image

Creamy sauce tops pasta with ham and peas. A great recipe to use leftover holiday ham.

8 ounces uncooked farfalle pasta (or your favorite small pasta )
4 Tablespoons unsalted butter, divided into 1 and 3 Tablespoons (Note 1)
1 shallot, peeled and diced
2 cloves garlic, peeled and minced
1/2 teaspoon Italian seasoning (Note 2)
1/2 teaspoon salt (Note 3)
1/2 teaspoon black pepper (Note 2)
1 Tablespoon all-purpose flour
2 cups heavy cream (Note 4)
1 cup low-fat mozzarella cheese, shredded
1 cup Gouda cheese, shredded
1 cup frozen peas, thawed
1 cup diced ham (Note 4)
pasta water (Note)
fresh parsley, optional garnish

Steps:

  • Prepare the farfalle according to package directions, set aside
  • While pasta cooks, in a saute pan, over medium heat add 1 Tablespoon unsalted butter (Note 1), let melt. Add in diced shallots, saute about 2 minutes to soften shallots.
  • Add in minced garlic, Italian seasoning, salt, and black pepper. Continue to saute another few seconds to blend flavors. (Note 6)
  • Stir in the remaining butter (Note 1), let melt. Whisk in the flour, continue to whisk about 1 minute to blend flavors.
  • Whisk in heavy cream to blend. Cook and stir occasionally, about 5 minutes to thicken sauce.
  • Mix in the shredded cheese combo. Whisk to melt cheese, about 1 minute.
  • Gently stir in the peas, ham, and cooked farfalle. Simmer another minute to blend flavors and warm pasta, stirring occasionally.
  • Taste sauce for seasoning, adjust any, if needed.
  • Serve with chopped fresh parsley, optional.

1/4 cup green onion (chopped)
2 teaspoons fresh parsley (minced)
2 tablespoons flour
1 cup milk

1 1/2 to 2 cups diced ham
1 1/2 cups frozen peas (thawed, cooked and drained)
1/4 teaspoon salt, or to taste
1/8 teaspoon black pepper

Steps:

  • Slice the green onions, keeping the white and light green parts separate from the dark green.
  • Heat the butter in a saucepan over medium-low heat. Add the green onion (white and light green) and minced parsley and cook for 1 minute. Stir in the flour until smooth and bubbly. Cook, stirring, for 2 minutes.

1 cup frozen or fresh shelled peas
1 cup heavy cream
1 tablespoon plus 1 1/2 teaspoons finely grated lemon zest (from about 1 large lemon)
2 tablespoons finely chopped fresh flat-leaf parsley, plus more for serving
Freshly ground black pepper
Freshly grated Parmesan (for serving)

Steps:

  • Cook farfalle in a large pot of boiling salted water, stirring occasionally, until al dente; drain, reserving 2 Tbsp. pasta cooking liquid.

6 medium potatoes, peeled and cut into 1-inch cubes
1 medium onion, diced
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt, divided

2 -3 tablespoons coarse-ground mustard (Dijon or spicy brown work fine too)
4 ounces cooked ham, cut into small cubes

Steps:

  • Place potatoes and onion in a large pot with enough water to cover by an inch. Cover and bring to a boil over high heat. Remove cover, reduce heat to med-high and cook an additional 15 minutes or until potatoes are easily pierced with a paring knife. Drain well.
  • Meanwhile, melt butter in a saucepan over medium heat.
  • Combine flour, 1/2 tsp salt, and 1/4 tsp pepper. Whisk into butter until smooth.
  • Gradually whisk in milk, ensuring liquid has been fully incorporated before adding more. Cook 2-3 minutes until slightly thickened, whisking frequently.
  • Add mustard to sauce. *Sauce should have a strong flavor on its own as the potatoes mellow it out a lot.*.
  • Combine drained potatoes, sauce, and ham in the large pot by stirring with a heavy spoon. This will break down some of the potatoes and the released starches will finish binding up the sauce.
  • Add remaining salt and pepper, more to taste if needed, and heat through.

1/4 cup butter
1/2 cup all-purpose flour
2 1/2 cups milk
1/2 tsp salt
1/2 tsp coarse black pepper
10 large potatoes, peeled and sliced, keep in a bowl of water to prevent browning, drain before using.
10 slices of left over ham or 3 cups diced Ham
1 can sweet peas, drained
Paprika for garnish

Steps:

  • In a large skillet, over medium heat, melt 1/4 cup of butter. Using a whisk, add 1/2 cup of flour and whisk briskly to create a thick paste.
  • Slowly add in 2 1/2 cups of milk, whisking continually, until thick and creamy. If sauce is too thick add in more milk until the creamy consistency of gravy.
  • Add in 1/2 tsp. of salt and 1/2 tsp, coarse black pepper.
  • Spray a deep, 4 quart, baking dish, with cooking spray.
  • Place 1/3 of the sliced, drained potatoes in the bottom of the baking dish. Place 1/2 the ham slices or 1 1/2 cups of diced ham on top of the potatoes. Sprinkle half the can of drained peas over the ham.
  • Pour 1/3 of the white cream sauce over the top of the layers.
  • Repeat the layers again. 1/3 of sliced potatoes, other half of the ham, other half of the can of peas. 1/3 of the cream sauce.
  • Top with last layer of potatoes and cream sauce. Ending with cream sauce.
  • Sprinkle with Paprika.
  • Cover and bake in a 350°F oven for one hour. Remove cover and brown for 10 minutes.
  • Serve Immediately.

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well. To make the garlic parmesan cream sauce, melt butter in the skillet skillet over medium heat. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth, thyme and basil. Cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in half and half and Parmesan until slightly thickened, about 1-2 minutes. If the mixture is too thick, add more half and half as needed; season with salt and pepper, to taste. Stir in spaghetti, ham and peas, and gently toss to combine. Serve immediately, garnished with parsley, if desired.

1 Tbsp good-quality olive oil
1 Tbsp unsalted butter
0.75 cup diced onions
1 Tbsp minced garlic cloves
0.333 cup cooked ham (diced)
0.25 cup dry white wine
1.5 cups heavy cream
0.75 cup frozen, sweet peas
0.75 tsp salt
freshly ground Black pepper (to taste)
0.75 cup grated Parmesan
fresh parsley (chopped)

Steps:

  • In a large pot of boiling water, cook the pasta according to package instructions, stirring frequently, until al dente.
  • Meanwhile, in a large 12-inch saute pan, set over medium-high heat, add the olive oil and the butter, stirring gently until the butter melts. Add the onions and saute until translucent, about 3 minutes. Add the garlic to the pan and saute until fragrant, about 30 seconds. Place the diced ham in the pan and saute for 1 minute.
  • Deglaze the pan with wine and cook until it is reduced, about 30 seconds. Add the cream, peas, salt and pepper and reduce the cream by half, about 4 to 5 minutes.
  • Drain the pasta well and transfer to a large heat resistant bowl. Pour the sauce over the pasta and sprinkle with the cheese and the parsley. Toss gently with tongs until the pasta is coated with sauce. Serve hot.
