One of the best slathers for ribs and ham. Its exotic fruitiness goes well with chicken, turkey, duck and even game. Guava paste is much beloved by Cuban Americans, Puerto Ricans, and South Americans too!

1 cup cold water
1 cup guava paste
⅓ cup apple cider vinegar
¼ cup dark rum
¼ cup tomato paste
¼ cup fresh lemon juice
2 tablespoons minced onion
1 tablespoon minced fresh ginger root
1 tablespoon soy sauce
2 teaspoons ketchup
2 teaspoons Worcestershire sauce
2 cloves garlic, minced
¼ scotch bonnet chile pepper (or to taste), minced
kosher salt and pepper to taste

Steps:

  • Place the water, guava paste, vinegar, rum, tomato paste, lemon juice, onion, ginger, soy sauce, ketchup, Worcestershire sauce, garlic, and scotch bonnet pepper into a saucepan. Bring to a simmer over medium-high heat, whisking until evenly blended. Season to taste with salt and pepper. Reduce heat to medium-low and simmer until the sauce has slightly thickened and is richly flavored, 10 to 15 minutes. The sauce should be pourable. If it has become too thick, thin it with some water. Serve hot or cold.

1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1/2 cup water
1/4 cup brown sugar
1 tablespoon liquid smoke flavoring
2 tablespoons fresh lemon juice
1 tablespoon Worcestershire sauce
2 tablespoons habanero sauce
1 teaspoon molasses
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a large saucepan over low heat, stir together the guava, tomato sauce, tomato paste, water, and brown sugar until well blended.
  • Stir in liquid smoke, fresh lemon juice, Worcestershire sauce, habanero sauce, and molasses.
  • Season with garlic powder, onion powder, salt, and black pepper.
  • Cover, and cook 30 minutes, stirring occasionally, until thickened.

This is one of my favorite tomato-based barbecue sauces. It's great on turkey, chicken, pork and, of course, beef! This is the sauce on turkey meatballs.

1 tablespoon molasses
1 tablespoon red wine vinegar or 1 tablespoon red wine
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
2 teaspoons granulated onion
2 teaspoons ground black pepper
1 teaspoon ground cumin
1/2 cup water (optional)

Steps:

  • 1. In a medium bowl whisk together the ingredients in the order they are listed.
  • 2. I enjoy using a mortar and pestle to grind the black pepper and cumin fresh but you can use pre-ground pepper and cumin.
  • 3. Simmer over low heat for 10 minutes (optional).

  • Get a shaker or a container you can lid and shake. Put all the ingredients in and shake thoroughly.
  • Put your feet up - your work is done!

Sauce Chien (literal translation is dog sauce but in actuality from the idiom "avoir du chien," or to have pluck, spunky) was originally served along side fish and seafood dishes. In today's world, it goes well with grilled chicken as well as grilled vegetables.

3 garlic cloves, peeled
2 medium shallots, peeled and quartered
1 scotch bonnet peppers or 1 habanero pepper, seeded and quartered
2 teaspoons fresh ginger, chopped
1/2 cup flatleaf fresh parsley leaves
1/4 cup fresh chives or 1/4 cup scallion top, chopped
1/2 teaspoon thyme (fresh or dried)
salt, to taste
1/2 teaspoon fresh ground black pepper
1/4 teaspoon ground allspice
1/3 cup fresh lime juice (or more)
1/2 cup extra virgin olive oil

Steps:

  • Finely chop the garlic, shallots, chili, ginger, parsley and chives in a food processor. Add remaining ingredients, and process just to mix. Add 1/4 cup boiling water, and process to mix. Run the machine in short bursts until you have a coarse puree. If desired, add more salt or lime juice, to taste. The sauce can be served immediately, but it becomes more flavorful if you let it sit for an hour.
