SLOW COOKER CHERRY AND PINEAPPLE DELIGHT
A good friend gave me this recipe and I converted it for the slow cooker. A great dessert for Sunday afternoon. Serve with ice cream on top.

Steps:
- Place cherry pie filling in the bottom of a slow cooker. Place crushed pineapple on top.
- Mix cake mix and butter together in a bowl. Spread evenly over cherry and pineapple. Sprinkle with walnuts.
- Cover and cook on High for 1 1/2 to 2 hours, or on Low for 3 to 4 hours. Spoon into serving dishes and serve warm.

CHERRY DELIGHT
This is my mom's recipe. It is a family requested recipe that she usually makes for Christmas. She's even added green food coloring to the cool whip to give it the festive look.

Steps:
- Melt butter, pour into a 9 x 13 dish add graham cracker crumbs.
- Press in bottom of 9 x 13 forming a crust.
- Bake 350 degrees for 8 10 minutes.
- Let cool.
- Beat cream cheese and powdered sugar with a mixer until smooth and creamy.
- Pour on top of cooled cracker crust smooth out.
- Pour cans of cherries on top of the cream cheese mixture then top the cherries with cool whip.
SLOW COOKER CHERRY DELIGHT
A rich slow cooker recipe that can be modified to your taste. You can use strawberry filling with chocolate cake mix or whatever you like, just keep the ratio the same and you will have an easy set and forget dessert. Serve with ice cream or whipped cream if desired.

- Get a glass pan about 13 by 9, and spray with non stick spray.
- Then drain the can of crushed pineapple, and put in pan. Next add the cherry pie filling, then the cake mix (unprepared), and then add the almonds on the top. Bake at 350 degrees for about an hour.

- If using whole pineapple: Peel, quarter, and cut away the core from the pineapple. Discard the core. Cut each quarter in half lengthwise then slice 1/4-inch thick slices crosswise.
- Stir the pineapple together with the sugar, ginger, and cinnamon in a slow cooker. Cover and cook on HIGH for 4 hours, until the pineapple is very tender and slightly sweet.

- In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and salt; gradually add to the creamed mixture and mix well. PINEAPPLE LADYFINGER DELIGHT
I wanted something not quite but almost a cheesecake. Checked my pantry and this was the result. I used a a glass dish for eye appeal. It would be easier to serve if made in a spring form pan. This could be changed to a lemon dessert by using a can of lemon pie filling in place of the pineapple. Just hold back a half cup of lemon filling before folding into the mix to use for a glaze on top and eliminate the cherry filling.

- Line the sides an attractive glass bowl or an 8" or 9" spring form pan with ladyfingers. If there are any remaining, put on the bottom.
- Skip this step if using a pie crust.
- Beat confectioners sugar into softened cream cheese until fluffy.
- Beat whipped topping into this mixture, reserve 2/3 C at this point if you plan to decorate the top.
- Fold in pineapple pie filling.

- Spray the bottom and sides of a 6 quart oval crockpot with cooking spray. Spread the crushed pineapple with the juice on the bottom. Spread the cherry pie filling over pineapple.
- In a medium size mixing bowl, mix together the melted butter and cake mix until crumbly. Sprinkle over the fruit.
- Cover the opening of the crockpot with doubled paper towels then fit the lid firmly on top. Cook on high for 2-3 hours or on low for 4-5 hours or until golden and a toothpick inserted into the center shows moist crumbs.
- Rest uncovered for 20 minutes then serve sprinkled with toasted almonds and a scoop of vanilla ice cream.
