BUFFALO DRUMSTICKS

- For the chicken: Preheat the oven to 375 degrees F. Rinse and pat dry the drumsticks. Mix the oil, chili powder, garlic powder, and some salt and pepper in a medium bowl or resealable plastic bag. Toss the drumsticks in the seasoned oil to coat well. Bake the drumsticks on a wire rack placed on a baking sheet (so air circulates around chicken) until very tender and the skin is crisp, 50 minutes.
- For the spicy sauce: Mix together the butter, hot sauce and BBQ sauce in a large bowl.
- Toss the drumsticks in the spicy sauce until well coated. Place the drumsticks back on the rack and continue baking an additional 10 to 15 minutes.
- Cook's Note: For an alternate milder sauce, whisk together 1 tablespoon maple syrup, 1 teaspoon hot sauce, juice and zest of 1 lime, 1 clove of garlic, minced and some salt and pepper.

- Stir together the ranch-style salad dressing, the two hot pepper sauces, cayenne pepper, and chili powder. Chill for at least one hour.

BAKED CHICKEN DRUMSTICKS, BUFFALO-STYLE
Steps:
- Gather the ingredients. Pre Heat oven to 350 F.
- Line a large rimmed baking pan with foil and then place a cake cooling rack in the pan.
- Pat the chicken pieces with paper towels to dry thoroughly. Toss the chicken with the olive oil and garlic.
- Arrange the chicken legs on the rack and bake in the preheated oven for 30 minutes.
- Turn and bake for 20 minutes longer.
- Increase heat to 400 F and bake for about 15 to 20 minutes longer, until nicely browned.
- In a large bowl, combine the melted butter and hot sauce. Toss the hot cooked drumsticks with the sauce mixture.
- Arrange the chicken on a serving platter and drizzle with Ranch dressing or blue cheese dressing.
- Serve the drumsticks with more dressing on the side.

- Mix the butter, Dirty Steve's Original Wing Sauce, garlic, sugar, pepper and ranch dressing in a bowl. Stir vigorously until completely combined.

- Cut the chicken wings into three sections; discard wing tip sections. In a gallon-size resealable plastic bag, combine the hot pepper sauce, butter and vinegar. Add chicken wings; seal bag and toss to coat evenly. Refrigerate for 4-8 hours. , Place chicken on racks in two greased 15x10x1-in. baking pans. Sprinkle with dressing mix and paprika. Bake, uncovered, at 350° for 40-50 minutes or until juices run clear.

- Remove the skin from the drumsticks. I do this by pulling the skin as far down as I can, then when I can pull any further I grab onto the skin with a paper towel and the skin usually comes right off. I did have to cut the skin off of a few.
- Place the chicken into the slow cooker. Sprinkle over the garlic, cayenne, pepper, and ranch dressing mix. Pour over the Frank's Red Hot and the melted butter. Stir.
- Place the lid on the slow cooker, and cook on HIGH for 4 hours without opening the lid during the cooking time.
