Ingredients

18 ounces cream cheese, softened
1/4 cup sour cream
1-1/2 tablespoons Dijon mustard
1 teaspoon garlic powder
1 cup beer or nonalcoholic beer
1 pound bacon strips, cooked and crumbled
2 cups shredded cheddar cheese
1/4 cup heavy whipping cream
1 green onion, thinly sliced
Soft pretzel bites

Steps:

In a greased 6-qt. electric pressure cooker, combine cream cheese, sour cream, mustard and garlic powder until smooth. Stir in beer; add bacon, reserving 2 tablespoons. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 5 minutes. Quick-release pressure. , Select saute setting, and adjust for medium heat. Stir in cheese and heavy cream. Cook and stir until mixture has thickened, 3-4 minutes. Transfer to serving dish. Sprinkle with onion and reserved bacon. Serve with pretzel bun bites.

1 package (8 ounces) cream cheese, softened
1 cup sour cream
5 green onions, thinly sliced
4 medium tomatoes, chopped
1 large green pepper, chopped
1 jar (16 ounces) taco sauce
2 cups shredded cheddar cheese
1 pound sliced bacon, cooked and crumbled
Tortilla or nacho tortilla chips

Steps:

In a bowl, beat cream cheese and sour cream until smooth. Spread in an ungreased 13x9-in. dish or on a 12-in. plate. Combine onions, tomatoes and green pepper; sprinkle over the cream cheese layer. , Pour taco sauce over the vegetables. Sprinkle with cheddar cheese. Refrigerate. Just before serving, sprinkle with bacon. Serve with chips.

Chop bacon and pan fry in a 4.5 quart dutch oven or 12" skillet. Once bacon reaches desired level of crispiness, remove from the pan with a slotted spoon, placing on paper towels to drain.
Carefully remove the hot bacon grease from the pan by pouring into a ramekin or coffee mug. Gently scrape with a rubber spatula to remove excess grease, but do not wash.
Carefully measure 2 TBSP of the hot bacon grease back into the pan. The remaining bacon grease can be reserved for later, or allowed to harden then disposed of in the trash.
Adjust the flame to medium low. Add the flour and whisk together with the bacon fat to make a roux. Allow to cook 1 - 2 minutes, until it turns a light golden brown.
