HONEY ORANGE GLAZED CHICKEN
Honey Orange Glazed Chicken combines delicious spices and a sweet and tangy honey orange glaze. This makes the perfect meal for your family and has amazing flavor!

- In a small saucepan, combine orange juice, cider vinegar, brown sugar, honey, chili powder, coriander, and cumin. Bring to a boil, reduce heat and let simmer for 35-45 minutes or until sauce has reduced to one cup.
- In a medium saucepan add olive oil and heat to medium high heat. Salt and Pepper the chicken thighs and cook until 165 degrees in center and no longer pink. Drizzle the glaze on top and allow to simmer for 1-2 minutes making sure the chicken is coated well in the glaze. Serve immediately.

- To Make Marinade: Combine the soy sauce, honey, orange juice, garlic, oregano, pepper and paprika. Mix all together and pour over chicken pieces. Refrigerate for 2 to 4 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Remove chicken from refrigerator. Place chicken and marinade in a 9x13 inch baking dish and bake, uncovered, in preheated oven for 1 1/2 hours. Baste once.

ORANGE HONEY GARLIC AND THYME CHICKEN THIGHS

- Pre-heat oven to 450
- Heat an oven proof skillet on the stove on medium til it gets nice and hot.
- Pat your chicken with paper towel to make sure they are dry.
- Salt and pepper both sides of the chicken, then sprinkle dried thyme on the skin as well.
- Drizzle olive oil in hot pan then place chicken skin side down and don't move it until you get a deep golden crust on the skin side.
- While crust is browning add a little thyme to the other side.
- When deep golden flip over chicken, add the garlic cloves, letting them cook til they start to smell nice and garlicky.
- Add olives and the juice of one large orange, if not juicy enough squeeze another orange into the pan, you want to see the juice.
- Now squeeze your honey into the pan, whisking it into the juice.
- Lay your orange slices all around, sprinkle them with a little salt, pepper and thyme.
- Brush some of the orange and honey juice on top of each thigh.
- Place the whole pan into the oven to finish cooking, (it should only take maybe 15 more minutes but test with meat thermometer to make sure) taking it out and basting it again with the orange and honey mixture, which will thicken in the oven.
- Let it rest for 5 minutes then serve.
HONEY-GARLIC CHICKEN THIGHS
This is one of my family's favorite recipes. It's garlic-sweet and the cilantro tops it off.

- Season the chicken on both sides with salt and pepper.
- Cover the bottom of a cast iron skillet with olive oil and bring to medium-high heat. Add chicken and brown on one side, 3 to 5 minutes. Flip chicken, and add onion and garlic; continue to cook until chicken is mostly (but not fully) cooked and onion and garlic are soft, 5 to 7 minutes more. Remove chicken to a plate.
- Add honey, soy sauce, onion powder, garlic powder, and onion powder to the skillet. Stir and scrape the bottom of the pan with a wooden spoon to get the garlic and onion to mix with the liquid.
- Put chicken back into the pan, cover, and reduce heat to medium. Cook until no longer pink in the center and juices run clear, about 10 more minutes, turning once halfway through. An instant-read thermometer inserted into the center of a thigh should read at least 165 degrees F (74 degrees C).
- Place on a serving tray and drizzle liquid from the pan on top. Sprinkle with chopped cilantro before serving.

SPICY HONEY-ORANGE CHICKEN
If you like General Tzo's Chicken, you will probably like this flavorful dish. It is both sweet and spicy and is very easy to make. It can be served with rice, or you can leave the chicken breasts whole, glazed with the spicy honey-orange sauce. It is very easy to adjust the ingredients to fit your family's taste. This recipe was adapted from a recipe that was given to me by a friend.

- In small bowl, combine honey with juice concentrate, orange zest, garlic, and the red pepper flakes. Set aside.
- Pound chicken to approximately 1/4 " thickness. Cut into bite size pieces.
- In a plastic bag mix together the flour, garlic powder, salt and pepper. Toss chicken pieces to lightly coat with flour mixture.
- In a large non-stick skillet, heat butter and oil over medium-high heat. Add chicken and stirfry until just cooked through.
- Pour honey mixture over chicken and cook, stirring to coat all chicken pieces with spicy honey-orange glaze. Sprinkle with parsley and green onion.
- Tip: As stated above, you can leave the chicken breasts whole. Pour the glaze over chicken that has been cooked through, turning chicken to coat as sauce begins to thicken, about 2 minutes. Serve chicken breasts with honey-orange glaze spooned over the top. Garnish with parsley and green onions.

- To make the sauce: in a saucepan over medium heat, stir the sauce ingredients together until the sugar dissolves and the flavors are blended, about 1 minute.
- Preheat the oven to 350 degrees.
- Place the chicken in a lightly sprayed or oiled 11 x 7 inch glass baking dish.
- Pour the sauce over the chicken.
- Cover and bake for 15 minutes.
- Uncover, baste with the sauce, and continue to bake, uncovered, until the chicken is cooked through, about 15 minutes longer.
- Pour the sauce into a small pan over medium heat.
- Blend the cornstarch and water and stir into the sauce.
- Stir until thickened, about 1 minute.
- Transfer the chicken to a plate and pour the sauce over it.
- Garnish with orange slices and parsley.
