This slow cooked vegan and vegetarian collard greens recipe is the perfect side dish for any entree.

- Heat the oil in a stock pot over medium heat. Add the onions, cooking until they are translucent, about 5 minutes. Add garlic and cook, stirring constantly, for 1 minute.
- Add carrots and pepper and cook for 2 minutes, stirring constantly. Turn the heat down to low and add vegetable stock and collard greens. Cover pot and allow to cook just until the greens are tender, about 30-40 minutes. Salt to taste at the very end to keep your greens from getting soggy. Serve hot.

- To prepare the greens: cut away the tough stalks and stems from the collards, and discard any leaves that are bruised or yellow. Wash the collards thoroughly to remove the grit, 2 or 3 times, until the water runs clear. Dry thoroughly. Tear the leaves into large pieces.
- Place a large pot over medium heat and add the olive oil. Add the onion, garlic, bay leaves, and ham hock. Cook until the onions are soft and starting to brown, about 8 to 10 minutes. Pack in the greens, pushing them down into the pot. Add the broth, vinegar, and sugar. Bring up to a boil turning the greens over occasionally with a wooden spoon as they wilt. Lower to a simmer, cover the pot, and let cook for 45 minutes. Taste the "pot liquor" (broth) and check the seasoning, add salt and pepper. Cover and let cook for 15 more minutes. Remove the bay leaves and serve.

I've been making collard greens for years but my newly vegetarian daughter won't eat them prepared with the usual fatback used for seasoning anymore. I made this recipe up one afternoon and my family has been clamoring for these ever since! Really great flavors that meld together over the entire cooking time. They really are so good. They try to eat them right out of the pot! Serve with some hot sauce and vinegar on the side with your favorite meal. I promise you won't have any leftovers they are so good!

- Fill a large stockpot halfway with water; add vinegar, seafood seasoning, and olive oil. Bring liquid to a boil.
- Mix collard greens, jalapeno peppers, and garlic into boiling water; return to a boil. Cover stockpot, reduce heat to medium-low, and simmer until greens are very tender, 3 to 4 hours.
- Drain water from greens and mash garlic cloves; season with salt and pepper.

EASY VEGETARIAN COLLARD GREENS
This is a wonderful way to make delicious, tender, vegan collard greens. The smoked sweet paprika in these greens imparts a wonderful smoky flavor without the traditional but decidedly non-kosher and non-vegetarian smoked ham hock. Make sure the paprika you buy is smoked, as the regular kind won't give you that smoky flavor. Whatever you do, don't discard the pot liquor! It is full of the nutrients and flavor that have leached out of the greens during cooking, and makes a very full-bodied and rich broth you can use as a replacement for water when making rice (my favorite), as the base for soups or stews, or in any other savory dish that requires broth or water.

- Wash greens well, submerging in a sink full of cold water to remove any dirt and grit. Drain well. Cut off the stems right where the leaf starts. Stack about 5-8 leaves on top of eachother, then roll lengthwise. Cut rolled up leaves into 1" slices widthwise. Repeat until all the greens are done, and add to a large pot.
- Add all other ingredients. Cover and bring to a boil over high heat, then reduce heat to a simmer. Simmer for 45 minutes or until greens are extremely tender. Serve hot, using a slotted spoon to drain the liquid from the greens.

- Fill up a clean sink halfway with cool water. Add 2 Tbsp of white vinegar. Put the whole collard leaves into the water, stir them for a couple minutes with your hands or a big spoon - this removes any of the sand or dirt that may have stuck to the leaves.
- Once the leaves are clean, take them out and remove the thick central stem: stack a few leaves on top of each other with stems aligned, then cut it out with a sharp knife.
- After the stems are removed, chop all of the leaves into 1-inch squares or strips. Collards will wilt quite a bit during cooking, so there's no need to cut them smaller.
- Spray the bowl of your slow cooker lightly with cooking spray, add all of the ingredients except the finishing ones, lightly mix and cover with a lid.
