- Set oven to broil on high.Place lobster tails on a rimmed baking sheet and cut lengthwise with kitchen shears to butterfly and expose lobster meat. Lay the exposed meat over the top of the lobster shell.Melt the butter and add the minced garlic, stir to combine.Season lobster with lemon juice, garlic salt and melted butter.Broil on high for 5-8 minutes.Garnish with more melted butter and serve with melted butter for dipping and a lemon wedge.

Steps:
- Preheat grill.
- Remove the soft part of lobster tail with scissors.
- Hit shell lightly with a mallet to make it lie flat.
- Melt butter in saucepan and add garlic, ginger, tarragon, mustard and salt.
- Spoon some of the butter mixture over tails and reserve remaining.
- Let stand 20 minutes.
- Grill lobster 4 inches from heat for 10 - 15 min with meaty side up, basting frequently with reserved butter mixture.

- Combine butter, minced garlic, hot sauce, and pepper in a bowl; mix until fully combined. Set aside.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Butterfly lobster tails by cutting lengthwise through the centers of the hard top shells and about halfway through the top of the meat with kitchen shears. With your fingers, press shell halves of the tails apart. Flip them over, and insert a skewer down the lobster tail so that the tail is easier to remove after cooking and doesn't curl up. Brush tails with olive oil and season with salt.
- Place lobster tails on the preheated grill with the cut shell sides down; grill until shells are bright in color, 5 to 8 minutes. Flip and spoon 1 tablespoon butter mixture onto the butterflied meat through the cut in the shell. Grill until lobster meat is an opaque white color, 4 to 7 more minutes, basting once more with butter mixture.
- Remove lobster tails from the grill and serve with more garlic butter and lemon wedges.

- Preheat broiler to high.
- Set pre-cut lobster tails on a baking sheet or an oven safe dish. (See Notes for Cutting Instructions)*
- Put butter and minced garlic in a small microwavable bowl and microwave about 30 seconds until melted. Using a small spoon, drizzle evenly over the exposed lobster meat.
- Squeeze a slice of lemon over each tail.
- Sprinkle with a pinch of cajun seasonings or sea salt (one or the other - not both).

- Preheat your grill to direct medium-high heat.
- In a small bowl blend butter, chives, tarragon, minced garlic, hot sauce, and black pepper with a rubber spatula. Blend thoroughly. Cover with plastic wrap and reserve.
- Using kitchen shears, butterfly the lobster tails straight down the middle of the softer underside of the shell. Cut the meat down the center without cutting all the way through. Insert a metal skewer down the lobster tail so the tail stands straight. Brush the tails with olive oil and season with salt, to taste.
- Grill lobsters cut side down over medium high heat about 5 minutes, until the shells are bright in color. Turn the tails over and spoon a generous tablespoon of herbed butter onto the butterflied meat. Grill for another 4 minutes, or until the lobster meat is an opaque white color.
- Remove lobster tails from the grill and serve with more herb butter and lemon wedges. Garnish with chive sprigs.

- First you will need a sauce pan that has a steamer basket. If your lobster tails are frozen thaw them out. Cut the top of the lobster tail enough to allow expansion of the meat. In the sauce pan - on a medium low heat mix together the garlic, butter and white wine stirring occasionally. Once the butter wine mix comes to a boil, place the steam basket and cover. Let the Lobster tails steam for 8 minutes. They will turn bright red. Set aside. Using a strainer, pour the butter wine mixture into serving cups. Use the butter wine mixture to dip the lobster tails inches I hope you enjoy it!

- Preheat oven to 450°F with a large shallow baking pan in upper third.
- Mince and mash garlic to a paste with 1/2 teaspoon salt, then stir together with butter and parsley.
- Plunge lobsters headfirst into a large pot of boiling salted water (3 tablespoons salt for 6 quarts water) and cook, covered, 3 minutes from time they enter water. Transfer with tongs to a plate and let stand 5 minutes. (Lobsters will not be fully cooked.)
- Lightly crack claws, then split lobsters lengthwise and discard innards from body cavity.
- Remove tail meat from 1 lobster and cut crosswise into 8 pieces. Spread about 2 tablespoons garlic butter in one empty half shell, then fill that shell with all of sliced lobster and dot with 1 tablespoon garlic butter. Spoon about 5 tablespoons garlic butter into other empty half shell (for dipping). Repeat with remaining lobster.

- Preheat oven to 400 degrees F.
- Use kitchen scissors to cut down the back of each lobster shell until you reach the tail. Leave the base of the tail untouched as this will keep the whole tail together.
- Pull the shell back slightly, use your fingers to separate the meat from the shell and pull the meat upwards and set it on top of the shell. Remove the black vein from the meat (if it hasn't already been). Rinse under cold water if the meat needs additional cleaning.
- Place the lobster tails on a baking sheet and rack.
- Combine 1/4 teaspoon of paprika, 1/4 teaspoon of Old Bay seasoning, 1/4 teaspoon salt, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and 1/4 teaspoon black pepper in a small bowl. Sprinkle the seasoning over the lobster tails.
- Bake the lobster tails for 10 minutes.
- Meanwhile, combine the melted butter, chopped parsley, grated garlic, lemon zest, 1 teaspoon paprika, 1 teaspoon Old Bay seasoning, and 1 teaspoon of kosher salt. Stir till combined.
- Remove 3 tablespoons of the butter mixture and set it aside. Brush the remaining butter mixture on the lobster tails.
- Turn the oven broiler on high and broil the lobster tails for 3 minutes. Remove them from the oven and top with the remaining garlic butter sauce.
- Serve immediately alongside a lemon wedge or two.
