THE CREAMIEST SCRAMBLED EGGS (WITH GOAT CHEESE)

- Crack the eggs into a large bowl. Add the milk, salt and about 10 twists of black pepper. Whisk until the mixture is thoroughly combined and pure yellow. Be sure to have your remaining ingredients prepped and ready, because this recipe comes together quickly once you start cooking.
- Warm a medium skillet over medium heat. Add the butter and let it melt.
- Add the spinach and cook, stirring with a silicone or rubber spatula, until the spinach is wilted and bright green, about 1 to 2 minutes.
- Pour the eggs into the skillet and reduce the heat to medium-low. Use your spatula to gently stir and push the eggs around the skillet until the eggs are clumpy but still slightly wet, about 3 to 5 minutes.
- Remove the skillet from the heat. Add the goat cheese, green onion and sun-dried tomatoes, and gently stir to combine. Divide the mixture into bowls. Sprinkle lightly with optional flaky sea salt, and serve with toast if you'd like. Serve promptly.

- Heat a nonstick skillet over medium heat. If your stovetop runs hot, err on the lower side, and heat to medium/low heat.
- While pan is preheating, whisk together eggs and milk.
- Add olive oil to pan, and once oil is fragrant, pour egg mixture into pan.
- Allow eggs to partially set around the edges of the pan, and then fold eggs toward the center of the pan as they cook.
- Keep folding eggs without fully flipping for 2-3 minutes.
- Add goat cheese, and continue to fold eggs until fully cooked.
- Remove from heat, and add salt and pepper, to taste.

TRUFFLED SCRAMBLED EGGS
Steps:
- Place a medium (10-inch) saute pan over low heat. Add the butter and allow it to melt but not completely. In a large bowl, whisk together the eggs, half-and-half, 1 teaspoon salt, and 1/2 teaspoon pepper until the yolks and whites are just blended. Pour the mixture into the pan but don't mix it.
- Allow the eggs to warm slowly over low heat without stirring them. This may take 3 to 5 minutes, so be patient! As soon as the eggs start to cook on the bottom, use a rubber spatula to scrape the bottom of the pan and fold the cooked eggs over the uncooked eggs. Once the eggs start to look a little custardy, stir them rapidly with the spatula until they are the texture of very soft custard. Remove the pan from the heat before the eggs are fully cooked, as they will continue to cook in the warm pan. Immediately, stir the truffle butter into the eggs. This will stop the cooking.
- Cut the slices of toast in half diagonally and place them on 3 dinner plates. Spoon the scrambled eggs over the toasts and garnish with minced chives. Sprinkle with salt and serve hot.

- Spray a pan with olive oil spray.
- Crack one full egg into the pan, adding only the egg whites of 2 other eggs.
- Sprinkle dried garlic and black pepper to taste (garlic salt can be added instead if you prefer that).
- When the egg has just hardened on the bottom (the eggs on the top should still be in liquid form), scramble the eggs.
- Squeeze any excess water from the spinach leaves and add them to the eggs. Let the spinach leaves cook until it's time to stir the scrambled eggs again.
- Cook until the spinach leaves are wilted.
- Add the goat cheese (you can use crumbles if you prefer) to the SIDE of the plate and use as a "dip". I find if you mix the goat cheese into the scrambled eggs, it dilutes the flavor of the goat cheese greatly.

- In 12-inch nonstick skillet, cook bacon until crisp. Drain on paper towels. Crumble bacon; set aside. Reserve 1 tablespoon bacon drippings in skillet. - Preheat the oven to 425 degrees Fahrenheit. Toss the grape tomatoes with the olive oil, fresh thyme, salt and pepper on a small sheet pan and set aside.
- Set up a bain marie (heatproof bowl set above a pot of barely simmering water–a few small bubbles per second. You want the edges of the bowl to be fully within the pot). In a separate bowl, whisk together the eggs, half and half, and pepper–wait to salt the eggs before serving.
- Pour the eggs into the bain marie bowl. Use a kitchen towel to carefully hold the edge of the bowl, as it will quickly become very hot. Using a rubber heatproof spatula, stir the eggs continuously until they begin to thicken. It will appear like nothing is happening for a good 10 minutes or so, but continue to stir!
- As the eggs are cooking, place the tomatoes into the oven to roast. Toss every 5 minutes or so, and roast for 12-15 minutes or until they are golden brown and just about to burst. Allow to rest for 5-10 minutes on a cooling rack.
