6 bone-in pork loin chops (8 ounces each)
1 tablespoon canola oil
1 large onion, sliced
1 medium sweet red pepper, cut into rings
1 can (4 ounces) mushroom stems and pieces, drained
1 can (28 ounces) diced tomatoes, undrained
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice

Steps:

  • In a large skillet, brown chops in oil in batches; drain. Transfer to a 5-qt. slow cooker. Layer with onion, red pepper and mushrooms. Combine the tomatoes, brown sugar, vinegar, Worcestershire sauce, salt and pepper; pour over vegetables., Cover and cook on low for 5-6 hours or until meat is tender. Serve with rice.

1 cup Roasted Garlic Rub, recipe follows
One 6-pound boneless pork shoulder or butt roast (not tied)
2 cups roasted minced garlic
5 tablespoons salt
1/4 cup coriander seeds, ground and toasted
2 tablespoons mustard powder
4 tablespoons dried chipotle pepper, ground
2 tablespoons dried thyme
5 tablespoons dried rosemary, finely chopped
5 tablespoons lemon zest
2 1/2 teaspoons black pepper

Steps:

  • Preheat oven to 275 degrees F. If necessary, trim fat from top of pork, leaving a 1/8-inch thick layer of fat. Spread Roasted Garlic Rub all over pork and inside any cavities, concentrating on boned side.Put pork, fat side up, in a roasting pan and roast in middle of oven 6 to 8 hours. Transfer roast to cutting board and let stand 15 minutes. Pull shreds apart with tongs into chunks. Serve.
  • Combine all ingredients in a food processor. Can also be mixed by hand in a bowl, but make sure to combine well.

Steps:

  • Sprinkle pork chops with pepper. Place pork chops in 3 1/2- to 4-quart slow cooker. Sprinkle with garlic. Pour soup over pork chops.
  • Cover; cook on Low heat setting 7 to 8 hours or until the pork is fork-tender. Remove pork chops from slow cooker and place on plate; cover to keep warm.
  • About 30 minutes before serving, make rice as directed on package. Stir together cornstarch and water. Stir cornstarch mixture into mushroom sauce in slow cooker. Heat in slow cooker 5 minutes. Serve sauce over pork chops and rice.

1/4 cup flour

2 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees. Mix the flour, salt, pepper, ground mustard, thyme and garlic powder together. In large frying pan, melt butter and olive oil and saute garlic until tender. Dredge the chops in the flour mixture and fry in a skillet. You don't need to cook them all the way, just get them browned. Next, remove pork chops from skillet and place on rack in roasting pan. Fill pan with water under the rack but do not pork chops touch the water. Cover in foil and bake for 15 minutes at 400 degrees. Lower heat to 250 and allow chops to cook for 3-4 hours on low 250 degree heat. Once chops are done, drain water from roasting pan and put chops back in the oven. Broil for 5 minutes until crispy on top. You may also use a slow cooker for the chops. Put chops in crock pot and cook for 6-8 hours on low.

1 boneless pork chop (I use thick chops from Costco and one makes two servings.)
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 egg
15 saltine crackers, crushed

Steps:

  • If using a thick pork chop, cut through the thick part to make two.
  • You want your pork chop to be no more than a half inch thick, and thinner if possible.
  • Use a piece of plastic wrap to surround the pork.
  • Place it on a board and place the board on a sturdy surface.
  • Use a board you don't mind being marked as it might be by the hammer.
  • Now, have fun. Take out your aggressions on the pork and pound it thin (less than an eighth of an inch).
  • It should have at least doubled in area.
  • Beat the egg and spices to create an egg wash.
  • Place that in a bowl next to a sheet of plastic wrap or waxed paper with cracker crumbs on it.
  • Take each piece of meat and drag it through the egg wash and then coat with cracker crumbs.
  • Set aside.
  • When the meat is all coated, heat a skillet with some butter/margarine.
  • Fry each piece of meat until golden brown on both sides and cooked through.
  • Because the meat is thin this should take no more than about three to four minutes on a side.
  • Serve.

¼ cup olive oil (, divided)

Steps:

  • Season pork chops generously with salt, pepper and creole seasoning. Preheat 2 tablespoon of oil over medium-high heat in a cast iron or heavy Dutch pan, brown pork for about 3 minutes on each side. When ready, transfer pork into the slow cooker.
  • Preheat the remaining oil in the cast iron pan, add in onion, garlic and thyme. Sauté until onions is transparent and fragrant, for about 3-5 minutes. Next add in mushroom, Dijon mustard and Italian seasoning. Sauté for another 3 minutes.
  • Pour in water and heavy cream, bring to a boil and simmer for about 3-4 minutes. Season with salt and pepper to taste.Transfer sauce to pork in the slow cooker and cook for about 7-8 hours on low OR 3-4 hours on high until the pork is tender.

3 tablespoons Extra Virgin Olive Oil
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon chili powder
2 tablespoons brown sugar

Steps:

  • Preheat oven to 400 degrees F. Spray a large, 13x9-inch baking dish with nonstick cooking spray.

2 cups soy sauce
1 cup brown sugar
1 tablespoon dark molasses
1 teaspoon salt
1 tablespoon dry mustard
1/4 cup water
1 cup brown sugar
1 (18 ounce) bottle ketchup
1 (14 ounce) bottle Heinz Chili Sauce

Steps:

  • Mix marinade ingredients in saucepan, and bring to a boil.
  • Let marinade cool.
  • Marinate each 3" thick pork chop overnight in the cooled marinade.
  • Preheat oven to 375 degrees F.
