Our one-pan fish dinner can go straight from the grill to the table. Be sure to serve with plenty of crusty bread to sop up all that delicious sauce.

22 ounces cherry tomatoes
1 onion, halved and thinly sliced
4 cloves garlic, smashed and sliced
2 cans (13.5 ounces each) whole artichoke hearts, drained, halved if large
1/2 cup pitted olives, such as Kalamata
1/2 cup caper berries
1/4 cup extra-virgin olive oil
1/4 cup dry white wine
Coarse salt and freshly ground pepper
1 1/2 pounds skinless firm white-fleshed fish, such as cod or monkfish, cut into 4 pieces
1 small lemon, thinly sliced
Crusty bread, for serving

Steps:

  • Combine tomatoes, onion, garlic, artichokes, olives, caper berries, oil, and wine in a large straight-sided skillet (it will be used on the grill). Season with salt and pepper, then season fish on both sides with salt and pepper and arrange on top. Place lemon slices on top of and around fish.
  • Preheat grill to medium-high. Place skillet on grill, cover grill, and cook until fish is opaque throughout, about 20 minutes. Serve immediately with bread.

1 green pepper, chopped
1/2 cup pitted black olives
4 frozen haddock fillets (1 lb.), thawed

Steps:

  • Cook onions in dressing in large skillet on medium heat 5 min. or until crisp-tender, stirring occasionally. Add tomatoes, peppers and olives; mix lightly.
  • Top with fish; cover. Simmer on medium heat 8 to 10 min. or until fish flakes easily with fork.
  • Serve fish topped with sauce.

1 large or two small skin-on fish fillets, about 8 ounces (rainbow trout, small salmon, brown trout)
Kosher salt
Ground black pepper
Flour for dredging
2 tablespoon Canola oil
3 tablespoons butter
1 tablespoons capers, drained
1 lemon, juiced

Steps:

  • Heat a heavy pan over medium high heat.
  • Season fish on meat side with salt and pepper. Lightly dredge fish in flour and shake off excess. When pan is good and hot, add Canola oil followed immediately by 1 tablespoon butter. As soon as foaming subsides, place fish in pan with the skin side down. Jiggle pan for the first 10 seconds to keep the fish from sticking. Cook until golden crust forms on meat. Carefully turn fish away from you and again jiggle pan for the first few seconds. Cook until skin turns golden brown. Remove to a warm plate.
  • Pour out the cooking fat, add remaining butter and quickly fry the capers. Remove pan from the heat, add lemon juice to pan and swirl. Pour sauce over the fish and serve.

2/3 cup olive oil
20 cloves garlic, peeled and sliced thinly
1 teaspoon salt
1/2 teaspoon of ground black pepper
2/3 cup clam juice or fish stock
Juice of 3 limes, about 1/4 cup
1 ancho chile, stemmed, seeded and chopped
1 bunch flat leaf parsley, roughly chopped
6 6-ounce skinless, boneless filets of fresh fish
1 pound tomatillos, husked, washed and chopped
1 pound Roma tomatoes, cored and chopped
1 large onion, chopped
1/2 cup olive oil
1/3 cup white vinegar
1 bunch cilantro, leaves only, chopped
1/4 cup sugar
6 garlic cloves, minced
1 jalapeno chile, stemmed, seeded and diced
1 red bell pepper, cored, seeded and chopped
2 teaspoons salt
1 teaspoon fresh black pepper

Steps:

  • Preheat oven to 350 degrees. Season fish filets with salt and pepper. Heat a large cast iron or heavy bottomed skillet over moderately high heat. When hot add 2-3 tablespoons of olive oil. Sear fish fillets about 1-2 minutes per side or until lightly golden, remove to a oven proof platter and set in oven to finish cook for 3-5 minutes or, to desired doneness. Meanwhile add the remaining olive oil, slivered garlic, salt and pepper to the pan and cook over medium low heat stirring often for about 2 minutes. Add chopped ancho chiles and continue cooking a minute or two until a toasty aroma is released. Add the fish stock or clam juice reduce by half, adding any juices that have collected on the platter holding the fish fillets. Then add lime juice and parsley, bring sauce to a boil and pour over fish on platter. Serve immediately along with plenty of white rice.
  • Combine all the ingredients in a pot, cover and simmer about 1 hour. Set aside to cool to room temperature. Tomatillo relish can be stored in the refrigerator up to a week. To serve, line a large platter or serving plates with relish and top with grilled fish fillets. Or serve as a condiment with cold meats. Garnish with scallions.

1/2 teaspoon sugar
1 tablespoon vegetable oil
lemon wedge (omit if using the accompanying relish)
1/2 cup slivered almonds, toasted
1/2 cup oil-cured green olives, coarsely chopped
1 small garlic clove, minced
1 teaspoon orange zest
1/4 cup orange juice
2 teaspoons white wine vinegar
1/4 cup extra virgin olive oil
1/4 cup of fresh mint, minced
1 pinch cayenne pepper

Steps:

  • Adjust oven rack to middle position and heat oven to 425 degrees.
  • Dry fish thoroughly with paper towels and season with salt and pepper.
  • Sprinkle very lightly with dusting of sugar (about 1/8 tsp) evenly over each side of fillet.
  • Heat oil in large ovensafe nonstick skillet over high heat until smoking.
  • Place fillets in skillet, sugared sides down, and press lightly to ensure even contact with pan.
  • Cook until browned, 1 to 1 1/2 minutes.
  • Using 2 spatulas, flip fillets and transfer skillet to oven.
  • Roast fillets until centers are just opaque and register 135 degrees (7-10 minutes).
  • Immediately transfer to serving plates and top with relish.
  • Relish: Process almonds, olives, garlic, and zest in food processor until nuts and olives are finely chopped, (10-12 one-second pulses). Transfer to bowl and stir in orange juice, vinegar, olive oil, and mint. Season to taste with salt and cayenne; serve spooned over fish.

1/2 cup all-purpose flour
1-1/4 teaspoons salt
1 teaspoon paprika
1/8 teaspoon pepper
2 pounds halibut, haddock or salmon fillets or steaks
1 medium onion, sliced
1/3 cup butter, cubed
1-1/2 cups sour cream
1 teaspoon dried basil
1 tablespoon minced fresh parsley

Steps:

  • In a large bowl, combine the flour, salt, paprika and pepper. Add fish and toss to coat (if using fillets, cut into serving-size pieces first). , In a large cast-iron or other heavy skillet, saute onion in butter until tender; remove and set aside. Add fish to the skillet, cook over medium heat until fish just begins to flake easily with a fork, 3-5 minutes on each side. Remove fish to a serving plate and keep warm. , Add the sour cream, basil and onion to the skillet; heat through (do not boil). Serve with fish. Garnish with parsley.
