A delicious and easy soup that takes 5 minutes to throw into the crockpot and you have an amazing flavor packed soup ready for dinner!

Steps:
- Spray your slow cooker with cooking spray. Add chicken to the bottom of the slow cooker.
- In a medium sized mixing bowl, mix cream of chicken soup, salsa, corn, black beans, water, cumin, and cilantro. Pour over the top of chicken.
- Cook on low for 4-6 hours. Remove the chicken and shred with two forks. Place back into the slow cooker and add shredded cheese. Continue cooking until cheese has melted about 15 minutes. Serve with your favorite toppings.

SPICY FAJITA SOUP

- In the sleeve of a slow cooker, add the onions, peppers, corn, tomatoes, garlic, 1 tablespoon chile powder, chipotle, and broth. Season with and salt and pepper, to taste. Cook on low for 4 to 6 hours.
- In a deep skillet over medium heat, add the canola oil and heat to 365 degrees F. Fry the tortilla pieces until brown and crispy, 1 to 2 minutes. Drain on brown paper and immediately season with salt and the remaining 1 tablespoon chile powder. (Reserve half the chips for Online Round 2 Recipe Creamy Mexican Dip with Spiced Chips.)
- Preheat the broiler.
- (Reserve 1 cup of the onion and pepper mixture for Round 2 Recipe Creamy Mexican Dip with Spiced Chips.) Ladle the soup into ovenproof bowls or crocks and top each with 2 tablespoons cheese. (Reserve remaining 1/2 cup cheese for Round 2 Recipe Crispy Steak Sandwiches.) Put the bowls on a sheet pan and put under the broiler until the cheese is brown and bubbly, 1 to 2 minutes. Garnish with scallions and serve.

- Spray a slow cooker with nonstick cooking spray.
- Place chicken breasts in the bottom of the slow cooker.
- Add peppers, onion, garlic, chicken broth, tomatoes, chili powder, cayenne powder, cumin, paprika, oregano, salt, pepper, and black beans to slow cooker.
- Gently mix together and cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken breasts from slow cooker and shred using 2 forks.
- Add chicken back into the slow cooker, along with lime juice, cilantro, and rice.
- Serve topped with sour cream and cheddar cheese, if desired.

- Add half of the sliced peppers and onions to your slow cooker.
- Layer the chicken and coat all sides with taco seasoning.
- Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
- Add the remaining peppers and onions, cover and any remaining lime juice.
- Cook on high for 3-4 hours.
- Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
- Return the sliced chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
- NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
- Assemble Fajitas to your liking - we recommend topping with cheese, sour cream, and guacamole!

I searched high and low for a great recipe for slow cooker fajitas before I came up with this. The best part for me is that I don't have to defrost the meat before I throw it in there. Also, this makes a very large batch, so it's good for big families or a crowd of guests.

- Combine chicken breasts, tomatoes, salsa, chili powder, salt, paprika, sugar, onion powder, garlic powder, bouillon granules, cumin, cayenne pepper, and red pepper flakes in a slow cooker.
- Cover and cook on Low until chicken is tender, about 5 hours. Transfer chicken to a cutting board; shred using 2 forks. Return to the slow cooker. Add onions, red bell pepper, yellow bell pepper, green bell pepper, and cornstarch.

SLOW COOKER FAJITA STEW
This is a great departure from the typical chicken taco soup for when I want a healthier mexican flavored dish. The tomatoes, please use your best judgement on the type of tomatoes -- I have used both the rotel tomatoes and just plain tomatoes depending on what's on hand :D But use them to the taste of your family. This is a chunky stew with a thin broth -- not thick like a chowder. Also I like to use Kathy's Recipe #28011 for the fajita seasoning! Mmmm love it! :D

- Combine stew meat with onion, beef broth and corn in a 3-4 quart slow cooker.
- Mix together fajita seasoning mix (either purchased or your own homemade)with the garlic, lime juice, hot sauce (if using) and undrained tomatoes and pour over beef.
- Place peppers on top. Cover crockpot and cook on low for 7-9 hours until beef is tender.
- Dish into bowls and garnish with cilantro on top, or stir in chopped cilantro just before serving.
