MY FAMILY'S FAVORITE SLOPPY JOES (PIZZA JOES)
I've tried many recipes, this is the best. I once 'dec-tupled' (10x) this recipe to sell sandwiches at a craft fair at my church. People were waiting in line to buy leftovers. Freezes well, goes up to the lake or camping well and is a hit on Halloween...it's no-fail. Easy to double, triple, etc. I've been making Joes this way for over 20 years. ***03-08-09, I just reinvented this recipe tonight when I went to make it for dinner and found I didn't have an 8-oz. can of tomato sauce (shame on me). The family was upset with me when I subbed an 8-oz. can of pizza sauce and told them to suck it up and call them 'Pizza Joes' and then served them up with shredded mozzarella cheese on the toasted buns, top and bottom. They loved it. I left out the BBQ sauce in this preparation and just used a 1/2 cup ketchup. Pizza Joes are good to go!

SLOPPY JOES
Recipe video above. Everybody loves Sloppy Joes - and they're easy to make from scratch! I like making it with crushed tomato and less ketchup, and skipping the flavoured canned tomato sauces. Ideal freezer food, and to scale up to make for gatherings. SWEETNESS: Sloppy Joes are typically quite sweet, this is less sweet than most. But if you want it with just a bit of sweetness, skip the brown sugar and add it in gradually towards the end, adjusting to taste.

SLOPPY JOES
Some foods are memory triggers, meals that send you back to long-forgotten moments in your life. The sloppy Joe sandwich is one such time machine. This version is an adaptation of one developed by Chris Gesualdi, the chef at TriBakery in Manhattan. It's a tribute to the one his mother, Rose, used to make for him as a child, and it is perfect: a sweet and spicy hill of thick sautéed ground beef spilling out of a toasted homemade kaiser roll. He tops his with melted cheddar, and that can't be a bad thing. All in all, it is a terrific antidote to adulthood.

- To serve, heat a broiler. Slice the rolls open and place them under the broiler until lightly toasted, turning as necessary. Ladle about 1/2 cup onto the bottom of each roll, and top with cheddar cheese to taste. Return bottom halves to the broiler until cheese just melts. SLOPPY JOSE WITH CHORIZO, CHARRED POBLANOS AND AVOCADO CREMA
Provided by Jeff Mauro, host of Sandwich King

Steps:
- For the avocado crema: Place the cilantro, sour cream, avocado, lime zest and juice in a food processor and run until smooth. Season with salt and pepper and reserve, covered with plastic wrap pressed directly on top to keep from browning.
- For the filling: Preheat a heavy-bottomed 12-inch skillet over high heat, and then add in the oil. Add the poblano peppers, season with cumin, salt and pepper and toss to coat. Saute until the peppers are slightly soft and blistered, 5 to 7 minutes. Remove from the heat and set aside.
- In the same skillet, add the chorizo and cook over medium heat, breaking up with a wooden spoon as it cooks. Cook the chorizo until well browned and cooked through, 10 to 15 minutes. If your chorizo has extra fat you can drain it on a paper-towel-lined plate to remove excess fat and then add the chorizo back to the pan along with the salsa. If your chorizo doesn't have that much fat, just add in your salsa and keep the party going. Simmer until heated through, about 5 minutes.
- For the sandwich build: Slice, butter and toast each of the rolls until golden brown and crusty.
- Sprinkle some cheese on the bottom bun, and then a hefty spoonful of the hot chorizo. On top of the chorizo place some poblanos. Smear the top bun with lots of avocado crema and serve 'em up.
COUNTRY SLOPPY JOES WITH FRIED ONIONS
I like to think of this as a grown-up version of that favorite sandwich we all had as kids. Instead of ground beef with the sweet tomato-based barbecue sauce, I like to slow-cook brisket instead for fall-apart-tender sloppy joes. That's not all though-I top them off with crispy fried red onion rings and pickle chips.

Steps:
- Preheat the oven to 300 degrees F.
- Start the brisket: Heat the olive oil in a large Dutch oven over medium-high heat. Sprinkle the brisket with the House Seasoning. Place the brisket, fat-side down, in the hot Dutch oven and brown until a deep golden crust forms, 5 to 7 minutes. Turn the brisket over and brown on the other side, another 5 minutes. Remove the brisket from the Dutch oven. Add the onions and bell pepper to the drippings in the Dutch oven and stir until well coated in oil. Add the beef broth and bay leaf and bring to a boil. Return the brisket to the Dutch oven. Cover and place in the oven. Bake for 3 hours.
- Meanwhile, make the sloppy joe sauce. Combine the diced tomatoes, ketchup, brown sugar, molasses, apple cider vinegar, garlic powder, mustard, paprika and cayenne pepper in a medium saucepan. Bring to a boil. Reduce the heat and simmer over medium-low until slightly thickened and reduced by one-fourth, about 30 minutes.
- After the brisket has baked for 3 hours, pour 2 cups of the sauce over the brisket. Cover the Dutch oven and continue baking the brisket until tender, 30 minutes longer. (Use a knife to test the tenderness of the brisket. It should pierce the brisket very smoothly, with no pushback.) Shred the meat using two forks and stir in 1 more cup of sauce. Season with salt and pepper.
- During the last 30 minutes, make the fried onions: Pour oil halfway up the sides of a large cast-iron skillet and heat to 350 degrees F.
- Place the onion in the buttermilk in a small bowl. Place the flour in a shallow baking dish and season with salt and pepper. Working with a few onions at a time, dredge them in the flour, shaking to remove any excess flour. Add to the hot oil and fry until golden brown and crispy, about 4 minutes. Remove the onions to a baking sheet with a wire rack and sprinkle with the House Seasoning while still hot. Repeat with the remaining onions and set aside.
- To assemble the sandwiches, spoon some of the brisket on the hamburger bun bottoms. Top with the fried onions, pickles and bun tops.
- Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.
THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Baked Beans. Sloppy Joe’s and baked beans is perhaps the most classic combo ever. I don’t know who came up with the idea, but these two really complement each other.
- Potato Chips. How perfect is a bag of potato chips to go with your sloppy joe’s? It is light and crispy, which gives a nice contrast to the softness of the sandwich.
- Tater Tots. To me, nothing better goes with potatoes than cheese. Those two are truly a match made in heaven. So why not make yourself and your friends some cheesy tater tots to go with your Sloppy Joes?
- Mac and Cheese. These two are a match made in heaven. The cheesy mac pairs perfectly with the sweet and savory Sloppy Joe. Classic comfort food that even the kids will agree on.
- Potato Salad. If you haven’t noticed yet, I love me some potatoes. And with sides, the classic potato salad never disappoints. It’s hearty, creamy, tender, and easy to make.
- Sweet Potato Hash. From potatoes to sweet potatoes! Sweet potato hash is sweet and starchy, which blends well with the flavors of the sandwich. Plus, the crunchiness of the sweet potato chunks is a terrific contrast to the softness of Sloppy Joes.
- Dill Pickles. The spiciness and crunchiness of dill pickles offer a wonderful contrast to your sloppy joes. They’re easy to make at home, as well! You’ll need cucumbers, of course.
- Macaroni Salad. Now, this side dish is excellent if you’re feeding a starving crowd. It’s hearty and delicious, just like Sloppy Joes, making them a perfect combination.
- Pasta Salad. Give your Sloppy Joe dinner an Italian flair by pairing it with a rustic pasta salad. Picture this: a bowl of penne pasta accompanied by cucumbers, basil, black olives, cherry tomatoes, and drizzled with red wine vinegar.
- Corn on the Cob. You and your guests are most likely going to make a mess while devouring your Sloppy Joes, so while you’re at it, why not have some corn on the cob?
