- Spread butter over one side of each tortilla. Spread cream cheese over unbuttered side on half the tortillas. Sprinkle with cheeses, onion, cilantro and olives. Top with remaining tortillas, buttered side up., Cook on a griddle over medium heat for 1-2 minutes on each side or until cheese is melted. Cut into wedges. Serve with salsa and sour cream if desired.

- In a medium sized bowl mix the cheeses together and set aside, covered, in the refrigerator until ready to use.
- In a hot saute pan over medium heat the olive oil. When the oil is hot, add the jalapeno chili, garlic, tomato, scallion, zucchini, and oregano and saute for 2 minutes. Fold in the cilantro and set aside.
- Place the tortillas in a hot dry saute pan over medium heat or on a hot grill and spoon 2 tablespoons of the vegetable saute and 2 tablespoons of the cheese mixture on to each tortilla. Fold the tortillas in half and toast each side for 1 to 2 minutes until the cheese starts to melt. Cut each tortilla in thirds and arrange on a serving plate garnished with spinach and Swiss chard.

Steps:
- Combine chiles, cheese, and cilantro in a medium bowl and toss to evenly mix.
- Heat a seasoned cast iron skillet or a large frying pan over medium heat. Add 1 quesadilla and cook until soft, about 15 to 30 seconds.
- Add 1/2 cup cheese mixture on one half, fold in half, and cook until cheese is melted and tortilla is golden brown, about 1 to 2 minutes. Repeat for remaining quesadillas. Cut each quesadilla into 4 wedges and serve with tomatillo salsa.

Steps:
- Combine cheeses in a bowl; set aside.
- Heat oil in a large nonstick skillet over medium heat. Add tomatoes, scallions, jalapeno, garlic, and oregano and cook 2 minutes., until fragrant, sirring frequently. Stir in cilantro. Remove vegetables from pan; set aside.
- Return skillet to heat and add 1 tortilla. Top 1/2 of tortilla with 2 tablespoons each of cheese mixture and vegetable mixture.
- Fold over untopped side and cook 1 minute per side, until cheese melts.
- Repeat with each tortilla. Remove from pan and cover with foil to keep warm.
- Cut each quesadilla into 3 wedges and serve warm.

- Combine crabmeat, Monterey Jack cheese, mozzarella cheese, cheddar cheese, 1/4 cup cocktail sauce, green onions and garlic in medium bowl; mix well.
- Spread about 1/2 cup mixture onto 2 tortillas; sprinkle evenly with remaining Monterey Jack cheese.
- Top with remaining tortillas.
- Melt 1 tablespoons butter on cast iron griddle over medium-high heat.
- Add one quesadilla; cook for 2 minutes on each side or until golden brown.
- Repeat.

Steps:
- Lightly spread one side of each tortilla with butter; place four tortillas buttered side down on large skillet or griddle (may have to cook in batches).
- Whip cream cheese until fluffy; stir in onions, tomato and salt.
- Spread on tortillas in skillet to within 1/2-inch of edge; sprinkle on Colby Jack cheese and jalapeno.
- Top with remaining tortillas, buttered side up.
- Cook on medium heat until bottom is lightly browned, about 2 minutes.
- Carefully flip quesadillas over to brown other side.
- Remove from heat and cut into 4 or 6 wedges.
- Serve with sour cream, guacamole and/or salsa.
