Recipe video above. Everybody loves Sloppy Joes - and they're easy to make from scratch! I like making it with crushed tomato and less ketchup, and skipping the flavoured canned tomato sauces. Ideal freezer food, and to scale up to make for gatherings. SWEETNESS: Sloppy Joes are typically quite sweet, this is less sweet than most. But if you want it with just a bit of sweetness, skip the brown sugar and add it in gradually towards the end, adjusting to taste.

1 tbsp /15g butter
2 garlic cloves (, minced)
1 onion (, finely chopped)
1 green capsicum/bell pepper (, diced)
500 g/1lb ground beef ((mince) (Note 1))
1 tbsp Dijon mustard (OR 1 tsp dry mustard)
1.5 tbsp brown sugar
1/2 cup ketchup
400 g/14oz crushed tomato (, canned)
2 tsp Worcestershire sauce
1 tbsp tomato paste
1 beef bouillon cube (, crumbled (Note 2))
1/4 tsp black pepper
5 to 6 soft rolls ((Note 3))
Cheese slices ((optional))

Steps:

  • Melt butter in a large pot over high heat.
  • Ad garlic and onion, cook for 2 minutes until onion is almost translucent.
  • Add capsicum and cook for 2 minutes until softened.
  • Add beef and cook, breaking it up as you go, until it changes from red to brown.
  • Add remaining ingredients. Mix well, then turn heat down to medium low (or low for strong stoves).
  • Cover and cook for 30 minutes, stirring once or twice to make sure it doesn't catch on the base. (If in rush, cook 15 minutes without lid)
  • Remove lid and give it a good stir for a minute. Mixture should be thick, not runny and saucy (see video). Adjust salt to taste.
  • Toast rolls. Butter if desired (I don't).
  • Pile on lots of filling, immediately top with cheese (heat should semi melt, otherwise pop under broiler/grill). Top with lid and serve immediately!

1 large green bell pepper, diced
1/2 large onion, diced
1 1/2 cups ketchup
5 cloves garlic, minced
Hot sauce, such as Tabasco
Worcestershire sauce
Salt and freshly ground black pepper
8 kaiser rolls
2 tablespoons packed brown sugar
2 teaspoons chili powder, or more as needed
1 teaspoon dry mustard
1/2 teaspoon red pepper flakes, or more as needed
2 tablespoons butter, softened
Chips or salad, for serving, if desired

Steps:

  • Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
  • Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
  • To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion, bell pepper, celery, and garlic; season with salt and pepper. Cook, stirring frequently, until vegetables are softened, 5 to 7 minutes.
  • Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
  • Stir tomato sauce, ketchup, and Worcestershire sauce into beef mixture in skillet. Simmer until thickened, stirring occasionally, 6 to 8 minutes.
  • Season the mixture with more salt and pepper, as desired. Spoon onto buns, and serve immediately.

2 tablespoons McCormick Montreal Steak Seasoning
2 medium carrots (minced (I recommend using a food processor or food chopper))
8 oz white mushrooms (minced (I recommend using a food processor or food chopper))
2 medium yellow onions (minced (I recommend using a food processor or food chopper))
3 garlic cloves (minced)
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
3 cups water
2 (15 oz) cans tomato sauce
1 (14.5 oz) can petite diced tomatoes
¼ cup tomato paste
1 tablespoon brown sugar
¼ teaspoon cayenne pepper
12 oz uncooked pasta shells (use whole wheat pasta if following the WW Purple plan)

Steps:

  • Lightly mist a large dutch oven or soup pot with cooking spray and bring over medium heat. Place the ground turkey in the pot and cook, breaking up with a spoon or spatula. Add the Montreal Steak seasoning and stir in. Cook until the turkey is cooked through and in small pieces.
  • Add the carrots, mushrooms, onions, garlic, vinegar and Worcestershire sauce and stir together. Continue to cook for another 5 minutes, stirring occasionally or until vegetables are softened. Add the water, tomato sauce, diced tomatoes, tomato paste, brown sugar and cayenne pepper and stir together. Bring to a boil and then reduce heat to low. Cover the pot and simmer for 15-20 minutes.
  • Add the pasta and stir until well combined. Re-cover the pot and simmer for 20-25 minutes until the pasta is cooked through. Remove from heat, stir and allow to sit for 15 minutes uncovered before serving.

¾ pound quality lean ground beef (10% fat) or turkey
1 yellow onion, peeled and diced
1 green bell pepper, cored, seeded and diced
¾ cup tomato puree
2 tablespoons cider vinegar
1½ tablespoons light brown sugar
1 tablespoon honey
2 teaspoons Dijon mustard
½ teaspoon chilli powder
½ can kidney beans, drained and rinsed
freshly ground pepper, to taste
4 whole wheat hamburger buns or whole wheat wraps
1 cup shredded lettuce

Steps:

  • Put a large sauté pan over a medium heat and crumble in the beef or turkey. Fry until the meat starts to brown then add the bell pepper and onion. Continue cooking, stirring occasionally, until the veggies start to soften - this should take around 5 to 10 minutes.
  • When the veggies are tender, add the tomato purée and stir into the meat, then add the vinegar, brown sugar, honey, mustard and chile powder to the pan and give everything a really good stir. Add the beans, season with salt and pepper, then bring to a boil and cook until the sauce is nice and thick.
  • To serve: pile the Sloppy Joe mix onto the bottom of a bun or middle of a wrap, top it with lettuce and close up the sandwich or roll up the wrap.
  • Serving suggestions: Delicious served with an Everyday chopped green salad or some Brilliant broccoli.
  • Jamie's top tips • Look out for ground beef with around 10% fat - if buying turkey, try to buy the best quality you can afford. Don't buy poor-quality turkey mince. If your grocery store has a meat counter you can ask them to grind the meat for you. • This can be made completely ahead of time and reheated just before serving. If you're reheating Sloppy Joes, add water a little bit at a time to loosen. • If you want to give it a bit of a kick add some more chile powder or even a chopped fresh chile.
  • Tips from the dietitian: • Sloppy Joe is a real favorite, but for a healthier version, use lean ground turkey instead of beef - the leaner meat is better for the heart. • Rinsing beans removes some of the salt but you can also look for low-sodium or no-salt-added beans.

1 lb. ground beef (85% lean)
½ cup onions (diced)
1 15.5 oz can Manwich sauce
2 ½ cups chicken broth
1 14.5 oz. can diced tomatoes (*not* drained)
¾ pound farfalle pasta (uncooked)
8 oz. Velveeta cheese (cubed)
1 cup corn (frozen or drained from a can)
1 ½ cups cheddar (shredded)

Steps:

  • Preheat oven to 375 degrees.
  • Cook and crumble the ground beef in a large, high-walled skillet pot over medium-high heat for 2 minutes. Add the onions and cook for 5 more minutes, or until the beef is brown and the onions are softened. Drain grease.
  • Add liquids: Manwich sauce, chicken broth, and undrained diced tomatoes.
  • Bring to a gentle boil, then add the pasta and stir to combine.
  • Cover and let it boil gently until al dente. Stir a few times throughout to ensure the pasta doesn't stick to the bottom of the pot. Add a few extra minutes than what's indicated on the box since we are boiling gently. Taste-test a noodle before proceeding.
  • Reduce heat to low. Stir in the corn. Add the cubed Velveeta and place the cover on the pot to allow it to melt. Lift the cover and gently stir to combine.
  • Transfer to a lightly greased 9 x 13 inch casserole dish.
  • Top with shredded cheddar.
  • Cover and bake for 15 minutes. Remove cover and serve with cornbread!

Steps:

  • Preheat oven to 375F.
  • Dump ground beef into a large saute pan over medium-high heat, along with a dab of butter or margarine.
  • Add the diced onion to the pan with the ground beef.
  • Crumble the ground beef well as it cooks.
  • When the ground beef is completely cooked, turn off the heat and drain the excess grease from the pan.
  • Dump the ketchup, Worcestershire sauce, brown sugar and onion powder into a medium mixing bowl. Stir well.
  • Add the sauce mixture to the pan with the ground beef.
  • Stir until the ground beef is all coated in sauce.
  • Add the French's fried onions to the pan and stir well again.
  • Dump the sloppy joe mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
  • Sprinkle the shredded cheese on top.
  • Open the package of biscuits and cut each one into 6 pieces.
  • Place the biscuit pieces on top of the cheese, spacing them out as evenly as possible.
  • Place the dish in the oven and bake the casserole until the biscuits are nicely browned. 22-25 minutes.
  • Serve and enjoy!

2 cups ziti pasta or 2 cups penne pasta, uncooked
1 1/2 lbs lean ground beef
1 cup onion (diced)
1 cup green pepper (diced)
1 tablespoon prepared mustard
1/4 cup brown sugar, packed
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
28 ounces canned stewed tomatoes, with juice
7 1/2 ounces tomato sauce
5 1/2 ounces tomato paste
1/2 teaspoon ground allspice
1/2 teaspoon hot pepper sauce (optional)
1 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook the pasta according to package directions.
  • Drain and keep in cold water.
  • Scramble fry the beef in a non-stick skillet for 5 minutes.
  • Add the onion and green pepper and cook until the beef is browned and the onion is soft.
  • Drain
  • Add the remaining ingredients - mix well.
  • Bring the mixture to a boil.
  • Cover and simmer for 20 minutes.
  • Add the drained pasta and spoon into a lightly sprayed 9 x 13 inch pan or a 3 quart casserole dish.
  • Bake, uncovered, in a 350 degree oven for 20 minutes or until hot.

1 tsp minced garlic
1/2 cup ketchup

  • Stir in water, ketchup, brown sugar, and mustard. Stir in chicken broth and bring to a boil over high heat. Stir in corn, tomatoes, and pasta. Place a lid on skillet and lower heat to a medium high. Cook for 8-9 minutes until pasta is al dente.

Steps:

  • Preheat oven to 400 degrees F. Split buns and lay them cut side up on a large baking tray (15x21). Lightly brush the cut sides with softened butter or mayonnaise (optional for crispier/more flavorful buns). Bake for 5 minutes to toast the buns. Meanwhile you can continue with the recipe:
  • Heat 1 tablespoon olive oil in a large cast iron skillet over medium-high heat. Add beef, onions and bell peppers and cook until beef is browned and onions are softened, about 7 minutes. Add garlic, and sauté 30 seconds.
  • In a liquid measuring cup (or small bowl), whisk the beef broth, cornstarch and beef bouillon together until smooth. Add to the meat mixture followed by the ketchup, Worcestershire sauce, Dijon and all seasonings.
  • Gently simmer over medium heat, stirring occasionally, until most of the liquid has been absorbed, but the mixture is still a little saucy, about 5 minutes.
  • Stir in the sharp cheddar cheese until melted. Taste and season with salt, pepper, red pepper flakes to taste (I like more salt). Keep in mind the flavors will be diluted with the cheese and buns.
  • Divide mixture between the bottom toasted buns and top each with a slice of provolone cheese. Bake (leaving both top and bottoms cut side up) at 400 degrees F for 5-10 minutes or until cheese is completely melted. Top the sandwiches and serve immediately.

Our Sloppy Joe Casserole has ground beef and noodles that are smothered in Manwich sauce and topped with melted cheese for a twist on a classic dinner recipe.

1 cup diced yellow onion
24 oz can original Manwich sauce
15 oz can original Manwich sauce
12 oz pkg farfalle (bowtie) noodles (cooked al dente)
8 oz pkg shredded velveeta
8 oz pkg shredded colby-jack cheese

Steps:

  • Preheat the oven to 350*. Lightly spray a 9x13 baking dish and set it aside.
  • Using a 4-5 quart heavy bottomed stock pot, brown the ground beef and diced onion on medium-high heat. Drain any excess grease, and return the browned ground beef and onions to the stock pot.
  • Add the 2 cans of manwich sauce, the cooked bowtie noodles and the shredded velveeta. Stir the ingredients until well combined.
  • Pour the Manwich casserole into the prepared 9x13 baking dish.
  • Evenly sprinkle the 8 oz pkg shredded colby-jack on top of the casserole.
  • Bake for 25 minutes.

3 tablespoons red wine vinegar
3 tablespoons Worcestershire sauce
One 15-ounce can tomato sauce
2 tablespoons EVOO
1 1/2 pounds ground beef (80-to-85-percent lean)
Kosher salt and freshly ground pepper
3 to 4 cloves garlic, finely chopped
1 red bell pepper, seeded and finely chopped
1 onion, finely chopped
1 cup beef broth
12 ounces elbow macaroni with ridges
2 cups shredded yellow Cheddar
1/2 cup chopped crisp deli-style dill pickles

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the brown sugar, vinegar, Worcestershire sauce and tomato sauce in a small bowl. Heat the EVOO in a large skillet or Dutch oven over medium-high heat. Add the beef and cook until well browned. Season with salt and lots of pepper. Add the garlic, bell peppers and onions and cook, stirring, for 5 minutes. Pour the tomato mixture over the beef, add the beef broth and stir until well combined. Simmer until thickened, 5 to 10 minutes.
  • Meanwhile, cook the macaroni in a large pot of salted boiling water until not quite tender, about 5 minutes. Drain and add to the sauce. Pour the mixture into a casserole dish and top with the cheese.
  • Bake until the casserole is bubbling and the top is browned. Top with the pickles and serve from the dish.
