DESSERT FRUIT PIZZA
Bright and colorful Dessert Fruit Pizza with a sugar cookie crust, cream cheese frosting, and a citrus glaze. A potluck showstopper!

Steps:
- In a medium bowl with an electric mixer, beat the butter and sugar together until light and fluffy. Add in the egg and vanilla and combine.
- In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt; add to the creamed butter mixture and beat until combined.
- Cover tightly and chill dough for 30 minutes (or up to 24 hours.)
- Preheat oven to 350 degrees F.
- Coat a 12-inch pizza pan with nonstick cooking spray; press chilled dough onto the pan in a flat even circle.
- Bake for 12-14 minutes or until light golden brown. Remove from oven and cool completely.
- In the meantime, make the glaze. In a small saucepan, whisk together the sugar and cornstarch; pour in the orange juice and water and whisk until combined. Bring to a boil, then immediately turn down the heat to medium-low, stirring continuously until thickened, 1-2 minutes. Take off the heat and allow to cool completely.
- For the topping, in a medium bowl with an electric mixer, beat together the cream cheese and powdered sugar until smooth. Add in the heavy cream and vanilla; beat until combined.
- Spread topping evenly over cooled cookie crust, arrange fruit over the top, and gently brush with the glaze.
- Slice and serve!

A cookie dough crust, cream cheese filling, and fruit topping. Tip: For a quick crust, use one package of ready made sugar cookie dough rolled out to fit a pizza pan. Use an assortment of fresh fruit such as bananas, peaches, blueberries, kiwi, pineapple, and strawberries.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan.
- Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Cool.
- In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust.
- Arrange desired fruit on top of filling, and chill.

FRUIT PIZZA EVEN BETTER
Almond extract makes all the difference in this updated version of the traditional fruit pizza. Kiwi makes the topping completely fresh and adds beautiful color. Use low-fat cream cheese for a slightly lighter version. Any clear juice (apple, pear, peach, etc.) may be substituted for the pineapple.

- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 12-inch round pizza pan with butter-flavored cooking spray.
- Combine flour and confectioners' sugar in a bowl. Cut in butter with a knife or pastry blender until the mixture resembles coarse crumbs. Press into prepared pizza pan to make a crust.
- Bake in preheated oven until very lightly browned, 12 to 15 minutes. Cool on a wire rack.
- Beat cream cheese, 1/3 cup white sugar, and almond extract until smooth; spread over completely cooled crust. Arrange strawberries, blueberries, and kiwi decoratively over cream cheese mixture.
- Mix pineapple juice, 1/2 cup white sugar, cornstarch, and lemon juice in a saucepan until smooth; bring to a boil. Cook and stir until thickened, about 2 minutes. Cool slightly and drizzle over fruit. Refrigerate until chilled.

ALL AMERICAN FRUIT PIZZA (DESSERT)
I got the recipe for the cookie pizza crust and marshmalllow sauce from a magazine several years ago. The recipe suggested different fruit combinations for toppings. I usually decorate it with red (strawberries), white (marshmallow sauce), and blue (blueberries) for Memorial Day and July 4th. I'm sure most everyone has a similar recipe but this one is especially quick and easy. And its very good.

- Preheat oven to 350 degrees. On an ungreased pizza pan, smooth out the refrigerated sugar cookie dough to approximately 1/4 inch thick. Bake in the preheated oven 10 minutes, or until the edges are lightly browned and center appears done.
- Using a mixer combine the marshmallow creme and cream cheese. Spread this mixture over the completely cooled baked crust. Chill in the refrigerator until just before serving. At serving time place berries on pizza in any design desired.

- Mix the butter, sugar, egg, and vanilla until well combined. (You can use an electric mixer or just mix with a spoon if your butter is melted.) Add flour, baking powder, and salt. Mix until combined. Chill the dough for 30 minutes.
- Preheat the oven to 350 degrees. Grease a 14-inch pizza pan or round baking stone, or line with parchment. Roll the chilled dough out onto it, leaving some space around the edge. Bake for 12 minutes. Allow it to cool.
- Using an electric mixer, combine the cream cheese, butter, powdered sugar and vanilla until smooth and creamy. Spread over the cooled cookie crust and chill again to firm up the frosting.

- Arrange cookie dough slices in bottom of 9x13 pan, and press together to form a crust. Bake 14 minutes. Cool.
- While crust is cooling, beat cream cheese, sugar, and vanilla until well blended. Spread over crust.
- Arrange fruit over cream cheese layer. Strawberry glaze is optional.

- In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, cream the softened butter for about 1 minute on medium speed. Get it nice and smooth, then add the sugar and beat on medium speed until fluffy and light in color. Beat in egg and vanilla. Scrape down the sides as needed.
- In a medium bowl, whisk the flour, salt, baking powder, baking soda, and cornstarch together. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients. Once completely combined, cover the dough tightly and chill in the refrigerator for 30 minutes and up to 1 day. Without chilling, your cookie dough may spread over the sides of the pan.
- Preheat oven to 350°F (177°C). Grease a 12-inch pizza pan. Remove chilled cookie dough from the refrigerator and press onto the pizza pan in an even flat circle, as pictured above. Bake for 18-20 minutes or until the edges are very lightly browned. Overbaking will lend a hard crust. Allow crust to cool completely before decorating. I put the crust in the refrigerator after 10 minutes of cooling at room temperature – this sped up the process.
