1 pkg. (17.3 oz.) frozen puff pastry (2 sheets), thawed
6 eggs, beaten, divided
1 cup POLLY-O Original Ricotta Cheese
dash hot pepper sauce
2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained
4 slices cooked OSCAR MAYER Bacon, crumbled
1-1/2 cups KRAFT Shredded Cheddar Cheese
1 cup chopped red peppers

Steps:

  • Heat oven to 400°F.
  • Unfold pastry sheets. Roll out 1 sheet to 11-inch square; set aside. Roll out remaining sheet to 12-inch square; use to line bottom and side of 9-inch springform pan sprayed with cooking spray.
  • Reserve 1 Tbsp. eggs for later use. Mix remaining eggs with ricotta, hot sauce and spinach. Layer half each of the bacon, cheddar, ricotta mixture and peppers in crust. Repeat layers.
  • Cover with remaining pastry sheet; fold under edges of pastry, then tuck inside pan. Brush pastry with reserved egg. Cut slits in top crust.
  • Bake 45 to 55 min. or until golden brown. Cool 10 min. Run knife around edge of pan to loosen crust before removing rim.

1 cup POLLY-O Natural Part Skim Ricotta Cheese
dash hot pepper sauce
4 slices cooked OSCAR MAYER Turkey Bacon, chopped
1-1/2 cups KRAFT 2% Milk Shredded Cheddar Cheese
1 cup chopped red peppers

Steps:

  • Heat oven to 400°F.
  • Unfold pastry sheets. Roll out 1 sheet to 11-inch square on lightly floured surface; set aside. Roll out remaining sheet to 12-inch square; use to line bottom and side of 9-inch springform pan sprayed with cooking spray.
  • Reserve 1 Tbsp. eggs. Mix remaining eggs with spinach, ricotta and pepper sauce until blended. Layer half each of the bacon, cheddar, spinach mixture and peppers in crust; repeat layers.

Make it the day before if you wish then just relax with your guests or family while it reheats or do the whole thing at one time! This is originally a Kraft recipe. I have not made it but I thought that I would share because it sounds so easy and good

1 (397 g) package frozen puff pastry, thawed
6 eggs, beaten
1 cup ricotta cheese
1/4 teaspoon hot pepper sauce
2 (300 g) packages frozen spinach, chopped, thawed and squeezed as dry as possible
1/4 cup bacon bits
3/4 cup mozzarella cheese, shredded
3/4 cup cheddar cheese, shredded
1 cup red pepper, Chopped 1/4-inch dice

Steps:

  • Preheat oven to 400F.
  • Cut the thawed puff pastry in half. Roll one half to an 11" square, the other to a 12" square.
  • Line the bottom and side of a 9" greased Springform pan with the 12" puff pastry square
  • Reserve 1 tbsp of the beaten eggs.
  • Add the ricotta cheese, pepper sauce & spinach to the remaining eggs, mix until blended.
  • Layer half of the bacon bits, Cheeses, spinach mixture & red peppers in the pastry lined pan, repeat layers.
  • Place remaining puff pastry square on top, tuck in the pastry edges, pinch the edges together
  • Brush surface with reserved egg, pierce pastry several times.
  • Bake 45-55 minutes or until golden brown Cool 10 minutes before serving, run a knife around the edges
  • *If you wish to do this as a make ahead assemble & bake the pie. Cover & refridgerate several hours or overnight. When ready to serve Bake uncovered in 350F oven for 30-40 minutes.

This can be made up to a day ahead for a delicious heat and eat breakfast or brunch. To make ahead, assemble as directed; wrap well. Refrigerate up to 2 days. When ready to serve, unwrap and bake at 350F for 50-55 minutes or until golden brown on top.

This is sooooooo yummy! Initially thought this would be to "spinachy" but it really isn't. I did add little more cheese and bacon as well as some chives to enhance the flavor. Play with it.... I hope you like it and make it every so often.

6 eggs
1 cup ricotta cheese
1 dash hot pepper sauce

1 cup chopped red peppers or 1 cup multi-colored bell pepper

1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup cold butter
3 to 5 tablespoons ice water
FILLING:
12 bacon strips, cooked and crumbled
1/2 cup shredded pepper jack or Monterey Jack cheese
1/2 cup shredded sharp cheddar cheese
1/3 cup finely chopped onion
4 large eggs
2 cups heavy whipping cream
3/4 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon cayenne pepper

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375°., Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.

1 (6 ounce) package seasoned stuffing mix, any flavour
5 eggs
1 cup mozzarella cheese, shredded
1 (10 ounce) package frozen spinach, thawed,well drained and chopped
1 sweet red peppers, chopped or 1 if preferred hot red pepper
1 onion, chopped
2 tomatoes, sliced
salt & fresh ground pepper

Steps:

  • Preheat oven to 400f degrees.
  • Prepare stuffing as directed on the package.
  • Lightly beat 1 egg and stir into stuffing mixture.
  • Press into greased 9 inch springform pan to form a crust.
  • Sprinkle half the cheese over the crust, evenly top with half the spinach then add all the pepper and onion.
  • Scatter remaining cheese and spinach over top, then beat the 4 remaining eggs and pour over all.
  • Top with tomato slices, season to taste with salt and freshly ground pepper.
  • Bake at 400f degrees for 40 minutes or until the pie top is completely set.
