PERFECTLY COOKED STEAK IN A GRILL PAN

Steps:
- Start by removing the steak from the packaging and patting it dry with a paper towel. This step is important because if there is moisture on the steak it will create steam, and you don't want to steam your steak, you want to sear it creating a flavorful crust on the outside, right?
- Then generously coat it with a layer of seasoning salt and seasoning pepper - these are spice mixes available at your grocery store that add more flavor than salt and pepper alone.
- Rub the seasoning into the beef.
- Heat a grill pan or skillet over medium high heat. Melt 1 tablespoon of butter.
- Once the butter just starts to brown, add the steak. Let the steak cook for 2 minutes, then rotate it 90 degrees (to create criss crossing grill marks) and let cook for another 2 minutes.
- Then flip the steak. Cook for 2 minutes, rotate 90 degrees, cook another 2 minutes.
- Remove the steak from the grill pan and let it rest for 5 minutes. If you are nervous that your steak won't be cooked enough, insert a meat thermometer sideways into the center of the steak. You will want it to read 120 degrees, since the internal temperature of the steak will increase slightly as it rests.
- Immediately melt another tablespoon of butter in the same grill pan, add the sliced shallot and mushrooms, season with salt and pepper, and sauté for 5 minutes. Once that was ready, I quickly wilted some spinach in olive oil and seasoned it with salt - mostly because I wanted to put something green on the plate.
- Now that your vegetables are ready and your meat has rested, serve your steak. It should be nice and pink and juicy in the middle.
SKIRT STEAK ALA STOVE TOP GRILL PAN
I, too, saw Alton Brown put his skirt steak right on top of the dusted coals. I figured I could simply get my grill pan super hot and cook the steaks as if I were cooking outdoors. I use my own mix of Emeril Lagasse's BAM as a dry rub and I also use a bit of meat tenderizer. FYI This IS Fajita Meat where I live. :) Skirt Steak is usually packaged in one long strip so you can choose how much you want to eat by the inch!

- Sprinkle tenderizer on both sides of steaks.
- Sprinkle spices on both sides of steaks.
- Get actual spice mix recipe from Emeril's site.
- Put oil into a bowl.
- Lay the meat into the oil.
- Turn over and oil the other side of the steaks.
- Place steaks on dry hot surface of your grill pan.

GRILLED KOREAN-STYLE SKIRT STEAK
Original recipe from food network, but it left out some steps that didn't make sense, so I sort of revamped it. Prep time does not include marinating time, or the time to get an outdoor grill ready.

- Pierce the steak a few times with a fork.
- Toast the sesame seeds in a skillet over medium heat until golden, shaking the pan, for 2 to 3 minutes. Transfer to a plate to cool.
- Combine the sesame seeds, garlic, cola, soy sauce, brown sugar, sesame oil, 1 tsp salt and 1/2 tsp pepper in a large bowl, stirring to dissolve the sugar. Add the steak, onion wedges, and bacon, turning to coat. Cover and refrigerate for at least 4 hours and up to overnight.
- Remove the steak, bacon, and onion wedges from the marinade with a slotted spoon. Heat a grill pan over high heat. If using the outdoor grill, make sure your charcoal is medium high heat. Put your onions, peppers, and bacon pieces in a grilling skillet or basket. Grill the onion wedges, peppers, and bacon pieces, turning until charred and brown, 8 to 10 minutes.
- Grill the steak until charred, 4 to 5 minutes per side for medium rare.
