Tangy Almond Chicken Kabobs image

This recipe is very, very tasty, and very simple to make. If anyone likes chicken, almonds, and needs a big twist to dinner, it's all right here! It's tangy and sweet and very good. It makes a great appetizer for 6 to 16 people.

1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon vegetable oil
1 tablespoon lemon juice
4 skinless, boneless chicken breast halves - cubed
¼ cup chopped toasted almonds
16 bamboo skewers, soaked in water for 20 minutes

Steps:

  • In a medium, nonreactive bowl, blend Dijon mustard, honey, vegetable oil, and lemon juice. Place chicken in the mixture, stirring to coat. Cover, and, turning occasionally, allow to marinate in the refrigerator at least 1 hour.
  • Preheat an outdoor grill for high heat, and lightly oil grate. Soak wooden skewers in water for about 20 minutes.
  • Thread chicken onto skewers and discard marinade. Arrange on the prepared grill, and cook 7 to 10 minutes, until no longer pink and juices run clear.
  • Remove skewers from heat, and quickly roll in the almonds to lightly coat chicken.

1/4 cup A.1. Bold & Spicy Sauce
1 Tbsp. GREY POUPON Dijon Mustard
1 Tbsp. lemon juice
1 Tbsp. oil
1 Tbsp. honey
1 clove garlic, minced
1 lb. boneless skinless chicken breasts, cut into 1-1/2-inch pieces
1/4 cup slivered almonds, toasted, finely chopped

Steps:

  • Heat grill to medium-high heat.
  • Mix first 6 ingredients until blended. Pour 1/4 cup over chicken in shallow dish; stir to evenly coat. Refrigerate 1 hour to marinate.
  • Drain chicken; discard marinade. Thread chicken onto skewers.
  • Grill 6 to 8 min. or until done, turning occasionally and brushing with remaining sauce for the last few minutes. Remove from grill; roll in nuts.

Love one dish meals! This has lots of veggies and chicken. If you have everything lined up and ready to go in the wok, this comes together quickly. If you don't have a wok, you can use a really hot Dutch oven. I don't usually serve it over rice to save carbs, but I'm sure you can.

1 1/2 teaspoons soy sauce (I use reduced sodium)
1 teaspoon fresh gingerroot, minced
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon dry sherry
2 1/3 cups chicken breasts, diced (about 1 1/2 lbs)
2 1/2 tablespoons cornstarch
2 tablespoons vegetable oil, divided
1 cup celery, chopped
1/2 lb fresh snow pea, ends snipped
1 (8 ounce) can bamboo shoots, drained and chopped
1 (8 ounce) can water chestnuts, drained and chopped
4 ounces mushrooms, sliced
1/2 cup slivered almonds, toasted
2 green onions, cut into 1 1/4 inch pieces

Steps:

  • Combine the first five ingredients in a large bowl; add the chicken and stir well. Let stand 10 minutes. Sprinkle the cornstarch over the chicken mixture, stirring well. Set aside. (Use this time to chop vegetables).
  • Pour 1 tbsp oil around the top of a preheated wok, coating the sides; heat at medium-high (325 degrees) for 1 minute.
  • Add the celery and mushrooms and stir fry for 1 to 2 minutes. Add the snow peas, and stir fry 1 to 2 minutes. Add the bamboo shoots and water chestnuts, and stir-fry for 1 to 2 minutes. Remove the vegetables from the wok; set aside, and keep warm.
  • Pour the remaining 1 tbsp oil around the top of the wok, coating the sides; heat at medium high for 1 minute. Add the reserved chicken mixture; stir fry for 3 to 4 minutes. Add the vegetable mixture, almonds, and green onions, and stir fry 1 to 2 minutes or until thoroughly heated.

My husband bought an air fryer oven about six months ago, after seeing it on television. We have used it at least twice a week and love how delicious the food has been. The chicken recipes that we have tried are especially good because of how moist it remains. We started a low-carb diet and did not want to use bread crumbs so we tried the chicken with almonds and it is a favorite now.

1/4 cup buttermilk
1 teaspoon garlic salt
1/2 teaspoon pepper
1 cup slivered almonds, finely chopped
2 boneless skinless chicken breast halves (6 ounces each)
Optional: Ranch salad dressing, barbecue sauce and honey mustard

Steps:

  • Preheat air fryer to 350°. In a shallow bowl, whisk egg, buttermilk, garlic salt and pepper. Place almonds in another shallow bowl. Dip chicken into egg mixture, then into almonds, patting to help coating adhere., Place chicken in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until a thermometer inserted in chicken reads at least 165°, 15-18 minutes. If desired, serve with ranch dressing, barbecue sauce or mustard.

3/4 cup soy sauce
1/4 cup sugar
1 tablespoon canola oil
1/4 teaspoon garlic powder
1/2 teaspoon ground ginger
2 boneless skinless chicken breasts, cut into 1-inch chunks
6 to 8 green onions, cut into 1-inch pieces
1/2 pound medium fresh mushrooms, stems removed

Steps:

  • In a large bowl, combine first five ingredients. Pour half into a large resealable plastic bag; add chicken. Seal bag and turn to coat. Pour remaining marinade into another large plastic bag; add onions. Seal bag and toss to coat. Marinate for 30 minutes. , Drain and discard marinade from chicken. Drain and reserve marinade from onions. On soaked wooden skewers, thread a piece of chicken, onion, mushroom and another chicken piece. , Place on a broiler rack. Broil 5 in. from the heat, turning and basting with reserved marinade after 3 minutes. Broil for 3 minutes longer or until chicken is no longer pink.
