4 bananas, ripe
1 cup sugar
1/2 cup applesauce
1 teaspoon vanilla extract
2 eggs
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
2 cups flour

Steps:

  • Preheat oven to 350.
  • Place bananas in a large bowl and mash with electric mixer.
  • Stir in sugar and let stand 15 minutes.
  • Add applesauce and eggs and beat well.
  • Add remaining ingredients and mix well.
  • Pour into greased 9x5 loaf pan.
  • Bake for 45 minutes, or until wooden toothpick inserted in center comes out clean.
  • Remove from oven and let stand 10 minutes before removing from pan, cool on wire rack.

I got this recipe out of a Gooseberry Patch cookbook and it is one of my stand-by recipes when I am watching my calories and fat. Since I am doing just that right now, thought I would put it on the zaar for easy access and hopefully someone else likes this recipe as good as I do. (I prefer to sub 3/4 of the white flour for whole wheat and use brown sugar instead of granulated sugar. I think fresh nutmeg is the key in this!)

1 3/4 cups flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 eggs or 2 egg substitute
1 cup banana, mashed
1/2 cup applesauce

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 12-cup muffin pan with non-stick cooking spray.
  • Combine the dry ingredients and mix well. In a separate bowl, mix all the wet ingredients. Add together and mix well.
  • Pour into muffin tin.
  • Bake for 15 - 20 minutes. (My oven baked right around 17 minutes.).
  • (Per muffin: 116 calories, no fat).

This is my favorite recipe for Applesauce Banana Muffins & Bread. We enjoy the muffins with yogurt or a glass of milk for a well-rounded breakfast. For an on-the-go breakfast option, grab a muffin and eat it with some string cheese for protein. The muffins are also fabulous as snacks at school or after school. Making mini-muffins is fun, too, if you want a smaller muffin for a quick pre-workout snack. These muffins are also so simple to make! I've made them with 3 and 4 year olds. *I've also substituted Pamela's Gluten-Free All-Purpose Flour for a gluten-free version

Steps:

  • Preheat the oven to 350° Bake.
  • Place the bananas and sugar in a large bowl and blend with an electric mixer. Let stand for 15 minutes.
  • While the bananas and sugar are standing, I prep the other ingredients by measuring them out.
  • Add the applesauce and eggs and beat well. Add the remaining ingredients and mix thoroughly.
  • Pour into a muffin tin coated with nonstick vegetable spray. Bake for 40-45 minutes, or until a wooden toothpick inserted in the center of the loaf comes out clean.
  • *If using a mini-muffin pan, bake for only 35 minutes.
  • Remove from the oven and let stand for 10 minutes before removing from the pan. Cool on a wire rack.

And they're delicious! Makes 2 dozen regular size muffins or 1 dozen regular and 1 dozen minis.

1 1/2 cups applesauce (unsweetened works great)
2 eggs
1/2 cup milk or 1/2 cup buttermilk

I read about this side dish on another site and was intrigued. I had never heard of this combination before, you see. When I googled for the recipe, I got two versions, the one below which is from vegweb.com, and a much simpler one, which, I confess, is the one I tried. For this version you peel a banana and mash it in a bowl with a fork or potato masher. (You can soften the banana in the microwave by heating it for 20 seconds, if needed.) Add a can of applesauce to the mashed banana. You can puree the mixture or simply mash it with the potato masher which will usually get the mixture smooth.
